For the batter, beat 2 eggs well and add ⅛ tsp. salt. Add ¾ C. flour and mix together. Add milk gradually and beat to a smooth batter. This will make a very thin batter.
For the filling, combine remaining ingredients and chill.
Melt a little butter in the bottom of a skillet and pour 2 tbsp. of the batter into the pan. Immediately swirl the pan around so that the batter covers the bottom.
Allow to cook until golden brown and turn out on a piece of waxed paper.
Place a small amount of the filling in the center of the blintz and fold like an envelope.
Butter the pan and repeat process until all of the batter and filling has been used.
serve hot with the topping of your choice. Cinnamon Sugar is an excellent topping.
