Ingredients
  • 1 tsp. celery salt
  • 1 Tbsp. cumin
  • ½ C. Salt
  • 4 Tbsp. paprika
  • 2 Tbsp. garlic powder
  • 1 Tbsp. pepper
  • 1 Tbsp. dried basil
  • 1 Tbsp. dried parsley
  • 2 tsp. chili powder
Instructions
  1. Combine all ingredients and mix well.
  2. Store in a sealed jar or container.
  3. Goes great on burgers, chicken and fish too!

 

Turkey Brine

Ingredients
  • 1½ Gallons water
  • 3 C. sea salt, can also use Kosher salt
  • 3 C. sugar, can also use brown sugar
  • 2 tbsp. cracked peppercorns
  • 8 Cloves Garlic
  • 3-4 Bay Leaves, can use more for a stronger flavor.
Instructions
  1. Combine all ingredients in a large pot.
  2. Over high heat, bring to a boil and stir to make sure that all sugars are dissolved.
  3. Remove from heat and allow brine to cool in refrigerator until cold.
  4. Place the turkey in a large pot or bucket deep enough that it will allow the turkey to be completely submerged. Make sure there is room for the container in the refrigerator.
  5. Place the turkey breast down in the pot and cover with the brine solution.
  6. Cover and store in the refrigerator.
  7. Allow the turkey to soak in the brine for 45-60 minutes per pound. For example, a 24 pound turkey would soak for 24 hours.

Ingredients
  • ⅓ C. soy sauce
  • ½ C. olive oil
  • ⅓ C. lemon juice
  • ¼ C. Worcestershire sauce
  • 1½ tbsp. garlic powder
  • 3 tbsp. dried basil
  • 1½ tbsp. dried parsley flakes
  • 1 tsp. ground white pepper
  • ⅛ tsp. cayenne pepper
  • 1 tsp. minced fresh garlic
Instructions
  1. Combine all ingredients.
  2. Pour marinade over meat cover and refrigerate for at least 8 hours or longer.
  3. cook meat as directed.

 

Barbacoa Pork

Barbacoa Sweet Pork

Ingredients
  • 2 pounds pork (I use boneless pork rib meat)
  • 3 cans Coke (NOT diet)
  • ¼ c brown sugar
  • dash garlic salt
  • ¼ c water
  • 1 can diced green chilies
  • ¾ (10oz) can red enchilada sauce (I use Old El Paso brand, medium spiciness but any will work)
  • 1 c brown sugar
Instructions
  1. Put the pork in a heavy duty Ziploc bag to marinade.
  2. Add about a can and a half of coke and about ¼ c of brown sugar.
  3. Marinade for a few hours or overnight.
  4. Drain marinade and put pork, ½ can of coke, water, and garlic salt in crock pot on high for about 3-4 hours (or until it shreds easily, but don’t let it get TOO dry) or on low for 8 hours.
  5. Remove pork from crock pot and drain any liquid left in the pot. Shred pork.
  6. In a food processor or blender, blend ½ can Coke, chilies, enchilada sauce and remaining brown sugar (about a cup, you can add a little more or less to taste.). If it looks too thick, add more Coke little by little.
  7. Put shredded pork and sauce in crock pot and cook on low for 2 hours.

 

Barbecue Beef Brisket

Ingredients
  • 6 lb. Beef Brisket
  • 3 tbsp. liquid smoke
  • 2 tbsp. Garlic powder
  • 1 tbsp. Onion salt
  • 1 tsp. Celery salt
  • 3 tbsp. Worcestershire sauce
  • Salt and pepper to taste
  • Barbecue sauce
Instructions
  1. Combine all ingredients except the barbecue sauce and spread over the brisket.
  2. Seal the brisket in foil and let marinate in fridge overnight.
  3. Next day, place the sealed packet in the oven and cook for 5 hours at 275 degrees.
  4. Remove brisket from foil and place in a shallow dish.
  5. Cover brisket with BBQ sauce and cover with foil.
  6. Bake for an additional 1 hour.

 

Teriyaki Beef marinade

  • 1½ C. oil
  • ¾ C. soy sauce
  • ¼ C. Worcestershire sauce
  • 2 tbsp. dry mustard
  • 2 tbsp. ground pepper
  • ½ C. wine vinegar
  • 1½ tsp. parsley flakes
  • 2 garlic clove, crushed and minced
  • ⅓ C. fresh lemon or lime juice
Instructions
  1. Mix all ingredients well and store in fridge.
  2. Makes 3½ Cups.

Ingredients
  • ½ cup salt
  • 3 tbsp. sugar
  • 10 peppercorns
  • 2 bay leafs
  • 1 clove garlic , minced
  • 2 qt. water
  • 1 tbsp. pickling spices (optional)
Instructions
  1. Combine all ingredients in a large plastic bowl.
  2. Marinate beef (typically a brisket) for 2 days in the refrigerator. Longer time means more flavor in the meat.
  3. Drain off and discard the marinade after soaking.

  • 2 teaspoons black peppercorns
  • 1 teaspoon whole cloves
  • 1 teaspoon whole allspice

  • 1 teaspoon crumbled whole mace
  • 1 teaspoon dill seeds
  • 4 dried bay leaves, crumbled
  • 1 small piece dried ginger, broken coarsely

  • 1 5 lb. brisket
  • 6 tbsp. Liquid Smoke
  • 3 tbsp. Worcestershire sauce
  • 1 tbsp. garlic salt
  • 1 tbsp. celery salt
  • 1 tbsp. salt
Instructions
  1. Put in baking pan.
  2. Marinate in refrigerator for 24 hours.
  3. Cook for 4 hours at 300 degrees.

Honey Garlic Pork Chop Marinade

Ingredients
  • ¼ c. lemon juice
  • ¼ c. honey
  • 2 tbsp. soy sauce
  • 2 cloves minced garlic
  • 4-6 Center cut pork chops
Instructions
  1. Combine above ingredients and pour over chops in a plastic bag.
  2. Refrigerate 6 to 24 hours, the longer the better.
  3. Grill chops about 15 minutes, turning once, basting with marinade.

 

London Broil

Ingredients
  • 1 London Broil Steak
  • 12 oz. red wine
  • ¼ C. water
  • 3 tbsp. grated ginger
  • 4 tbsp. garlic, minced
  • 1 tsp dried parsley
  • ¼ tsp. dried oregano
Instructions
  1. Score the steak with diagonal lines to allow marinate to penetrate the steak.
  2. Mix all ingredients together and marinate the meat in the mixture overnight.
  3. When ready to cook begin by preheating the oven to 400°F.
  4. Place the steak as close to the heating element as possible.
  5. Broil until the top side is browned, flip, and cook other side until browned.

Ingredients
  • 7 oz. bottle ketchup
  • ¼ C. brown sugar
  • 2 tbsp. Liquid Smoke
  • ¼ tsp. cayenne pepper
  • ¼ tsp. celery seed
Instructions
  1. Blend all ingredients together.
  2. Best when chilled for at least two hours prior to use.

Soy Ginger Marinade

Ingredients
  • ½ cup soy sauce
  • ⅓ cup honey
  • ⅓ cup medium dry sherry
  • 3 cloves garlic, mashed to paste
  • 1 tsp. ginger root, peeled and grated
Instructions
  1. In a large pot, combine ingredients and bring to a boil.
  2. When pot comes to a boil, reduce heat and simmer for 5-6 minutes.
  3. Let cool in pan.
  4. Marinade pork or chicken pieces in a glass dish in the refrigerator for approximately 4-5 hours (the longer the better).
