Fudge Filled Cupcakes

⅔ cups semi-sweet chocolate chips 6 oz butter 1¼ tsp vanilla extract 4 eggs, large 1½ cups sugar 1 cup all purpose flour Filling: 8 oz Cream cheese , softened ¼ cup sugar 1 egg, beaten, large ½ cup semi-sweet chocolate chips
Preheat oven to 350. Line 30 cupcake tins with paper or foil cupcake liners. in double boiler, set over medium heat, melt ⅔ cup of chocolate chips, butter, and vanilla. Stir until smooth. Remove from heat. Beat the eggs until frothy, using a whisk or electric mixer. Gradually, beat in sugar until dissolved. Gradually, beat in flour. Fold in the chocolate mixture. Fill the cupcake tins ⅓ full with chocolate batter. Mash together the cream cheese, sugar, and egg until blended. Fold in ½ cup of chocolate chips. Drop a heaping teaspoon full of filling into each cupcake. Cover cream cheese mixture with another generous spoon full of batter. Bake 25-30 minutes. Let cupcakes cool completely on a rack before storing in a air tight container.

Cream butter & cream cheese together. S lowly add powdered sugar until desired spreading consistency.

Fat-Free Vanilla Muffins

3 bananas (Overripe works best) ½ C. skim milk ½ C. applesauce 2 C. unbleached flour 2 tsp. baking powder ½ C. brown sugar ½ C. nonfat plain yogurt 1 tsp. Vanilla 2 tsp. baking soda ⅛ tsp. salt
Preheat the oven to 400 Mix the wet ingredients together in one bowl and the dry in another. Combine all ingredients and mix well. Coat a 12 cup baking pan with cooking spray and divide the batter evenly into all 12 cups. Bake for 15 minutes and allow to rest for an additional 5 before removing from the tins.

1 C. Confectioners sugar (powdered sugar) 1 egg white 1 stick butter ½ C. Shortening Food Coloring is desired For chocolate butter-cream you can also add cocoa powder.
Whip all items together until completely blended. Chill before serving.

Vanilla Cupcakes

½ cup softened butter 1 cup sugar 2 eggs 2 tsp. vanilla extract 1½ cups all-purpose flour ½ tsp. baking powder ¼ tsp. salt ⅔ cup cold milk
Preheat oven to 350°F. Cream butter and sugar. Add eggs, milk and vanilla and mix until well blended. In a separate bowl, stir together all dry ingredients and add to the wet ingredients. Mix until completely combined. Pour mixture into muffin cups until ⅔ full and bake at 350 for 20-25 minutes.
