Ingredients
- 1 tbsp. yeast
- 1 tbsp. honey
- 2½ c. warm water
- 1½ tsp. salt
- 1 tbsp. oil
- 6 to 7 c. whole wheat flour
Instructions
- Dissolve yeast and honey in warm water.
- Once dissolved and bubbly, add salt, oil and 6 cups flour and mix well.
- Knead dough for 5 to 10 minutes, adding more flour if necessary.
- Let the dough rise until it has doubled in size (about 1 hour).
- Punch down the dough and divide into 12 equal size pieces.
- Roll each into a ball and roll out on a floured surface until they are about ¼ inch thick.
- Place circles on greased cookie sheets and let them rest 30 to 45 minutes.
- Heat the oven to 450 degrees.
- Just before baking, turn the pitas over and bake them for 8 to 10 minutes or until they are puffed in the middle and only slightly browned.
