Ingredients
  • 2⅓ c. heavy cream
  • ⅔ c. milk
  • ¼ c. granulated sugar
  • 3 whole eggs
  • 3 egg yolks
  • 1 tsp. vanilla extract
  • ¾ c. light brown sugar
Instructions
  1. Preheat oven to 300 degrees.
  2. Heat cream, milk, sugar in a heavy saucepan to almost boiling. In a separate bowl beat whole eggs and extra egg yolks together well.
  3. Gradually whisk the heated mixture into the eggs and return to the saucepan.
  4. Cook over moderate heat, stirring constantly until the custard coats the back of the spoon (3 to 4 minutes); remove from heat. Stir in vanilla.
  5. Pour custard into 6 individual custard dishes or into 1 shallow baking dish about 9 inches across. Set dish or dishes in a large pan and place on the middle rack of the oven. Pour hot water into the outer pan to come level with custard. Bake for 35 to 45 minutes until center is set.
  6. When done, remove custard from water bath and cool. Cover and chill. A few hours before serving, preheat broiler. Sift brown sugar over top of custard. Set custard under broiler as close to heat as possible. Broil until browned about 1½ minutes. Watch closely. Remove and chill.

Ingredients
  • 1 stick butter
  • 1 c. sugar
  • 2 eggs
  • ¾ c. mashed ripe bananas
  • 1¼ c. sifted self-rising flour
  • 1 c. nuts (optional)
Instructions
  1. Cream butter and sugar.
  2. Add eggs, one at a time, and beat.
  3. Add bananas and then the flour. Mix.
  4. Pour into greased loaf pan and bake at 325 degrees for 1 hour.
  5. When done, turn onto aluminum foil.
  6. Dot with butter and close foil allowing butter to melt.

 

Crispy Flounder

Ingredients
  • 2 tbsp. skim milk
  • 1 tbsp. low sodium soy sauce
  • ¼ tsp. garlic powder
  • 1 egg white, lightly beaten
  • 4 (4 oz.) skinned flounder fillets
  • ⅓ c. fine dry bread crumbs
  • ¼ c. grated Parmesan cheese
  • 1 tsp. vegetable oil, divided
  • Lemon wedges
Instructions
  1. Combine first 4 ingredients in a large shallow dish; stir well. Add fish, turning to coat. Marinate in refrigerator 15 minutes, turning fish once. Remove fish from marinade.
  2. Combine the bread crumbs and cheese in a large zip top plastic bag. Add fish fillets shake to coat.
  3. Heat ½ teaspoon oil in a large nonstick skillet over medium heat until hot. Add 2 pieces fish, and cook 2½ minutes on each side or until fish flakes easily with a fork.

Ingredients
  • 1 c. butter
  • 1 c. crushed butter mints
  • 2 c. flour
Instructions
  1. Cream butter with mixer at medium speed until light and fluffy.
  2. Add crushed mints, mixing well.
  3. Add flour and blend well at low speed. Chill one hour.
  4. Roll in balls and flatten with glass.
  5. Bake at 325 degrees for 15 to 18 minutes.

Ingredients
  • 10¾ ounces cream of mushroom soup, condensed
  • 1½ lbs. lean ground beef
  • ½ c. dry bread crumbs
  • ½ tsp. salt
  • ⅛ tsp. pepper
  • 1 onion, finely chopped
  • 1 egg, slightly beaten
  • ⅓ c. water
Instructions
  1. Heat oven to 350 F. In medium bowl, combine ¼ of the soup with remaining ingredients except water; mix well. Shape into 6 patties; arrange in single layer in 13 x 9-inch or 12 x8-inch baking dish.
  2. Bake uncovered at 350 F. for 30 minutes. Skim off fat.
  3. In small bowl, combine remaining soup and water; spoon over patties. Return to oven and bake for 10 minutes.

 

German Orange Cake

Ingredients
  • ¾ c. orange juice
  • 2 tsp orange peel
  • ½ c. sugar
  • 3 eggs, separated
  • 1¼ c. oat flour, sifted
  • 1¼ c. brown rice flour, sifted
  • 4 tsp. of baking powder
  • ¼ teaspoon salt
  • 1 tsp. almond extract
Instructions
  1. Cream butter and adding sugar and then Beat in egg yolks.
  2. Sift together flour, baking powder, salt. Add dry ingredients to creamed butter mixture alternately with ½ cup water. Beat well. Add extract.
  3. In a new bowl, beat egg whites until stiff and fold into batter.
  4. Turn mixture into 2 greased layer cake pans.
  5. Bake in preheated 350°F oven for 25 to 30 minutes or until toothpick comes out clean.
  6. When cake is cooled, frost with a coconut frosting.
  7. Sprinkle with freshly grated coconut.

  • 1½ lbs. ground beef
  • ¾ c. uncooked oatmeal
  • 1 c. milk
  • 3 tbsp. onions

  • 2 tbsp. sugar
  • 3 tbsp. vinegar
  • ½ c. water
  • 1 c. ketchup
  • 6 tbsp. chopped onions
  • Dash bottled smoke
Instructions
  1. Combine ground beef, oatmeal, milk, chopped onions, salt and pepper.
  2. Shape into hamburger patties.
  3. Combine remaining ingredients and simmer 20 minutes.
  4. Brown hamburgers.
  5. Place in casserole dish.
  6. Pour sauce over hamburgers.
  7. Cover and bake in 350 degree oven for 30 minutes.

  • 2 tbsp. smooth peanut butter
  • 2 tbsp. soy sauce
  • 2 cloves garlic, minced
  • ¼ c. water
  • 1 tbsp. brown sugar
  • juice from half a lemon

  1. In a non-stick pan, combine all ingredients, stirring constantly over medium heat until peanut butter has melted.
  2. Use as a sauce over noodles, vegetables, chicken, or beef.

  • 2 c. cooked brown rice
  • 1 c. chopped onion
  • 2 tbsp. minced garlic
  • 2 tbsp. oil
  • 1 tsp. dried basil
Instructions
  1. Sauté onions and garlic in the 2 tablespoons oil.
  2. Add basil and mix well.
  3. Add to rice; shape into patties and brown in 1 teaspoon oil. Serve in pita bread or on buns.

  • 2½ c. all purpose flour
  • 1½ c. sugar
  • 1½ c. oil
  • 1 c. buttermilk
  • 2 eggs

  7. Combine all ingredients. Add additional confectioner’s sugar until icing forms peaks.

Ingredients
  • 1½ lbs. hamburger
  • 1 med. onion, chopped
  • 1 med. green pepper, chopped
  • 1 can creamed corn
  • 1 box cornbread mix
  • 2 cans tomato paste
  • 2 tbsp. chili powder
  • 1 lg. can kidney beans
Instructions
  1. Brown hamburger with onion and green pepper in a skillet until browned and all pink color is gone.
  2. Drain off grease and return to burner.
  3. Add the tomato paste, chili powder, kidney beans and creamed corn.
  4. Cook until heated through.
  5. Drop cornbread (prepared according to directions) by teaspoons across the top.
  6. Bake in a 350 degree oven for around 30 minutes or until cornbread is done.

 

Stuffed Bell Peppers

Ingredients
  • 1 lb. lean ground beef
  • 1 medium sweet onion, diced
  • 2½ c. cooked white rice
  • 2 medium/large green bell peppers
  • 2-15 oz. cans tomato sauce
  • 8 tbsp. honey
Instructions
  1. Prepare rice cover and set aside.
  2. Add onion and ground beef to large frying pan and sauté until beef is browned. Drain fat, add 2½ cups of rice and mix.
  3. Cut green bell peppers in half, remove caps and seeds; rinse. Pour 1 15 oz. can of tomato sauce into measuring cup and add 4 heaping tbsp. of honey and blend. Pour tomato sauce mixture over beef and rice; mix.
  4. Add second 15 oz. can of tomato sauce to measuring cup and add 4 heaping tablespoons honey; blend.
  5. Add beef and rice mixture to green bell pepper halves. Arrange in glass casserole dish.
  6. Pour tomato sauce mixture over and around stuffed bell peppers.
  7. Bake at 350°F for 1 hour.

 

Guacamole Dip

  • 2 avocados, peeled
  • ⅓ cup onion, chopped
  • ½ jalapeno chili pepper, chopped fine
  • 1 medium tomato, peeled and quartered
  • 1 tbsp. lime juice
  • 1¼ tsp. sugar
  • ¼ c. sour cream
Instructions
  1. Prepare all ingredients.
  2. Place the avocados, onions, jalapeno, tomato, and lime juice in a food processor and process on pulse till blended.
  3. Add sugar and sour cream and mix well.

Ingredients
  • 1 lb. pork-cubed
  • 5 tomatillos
  • 3 chilies serranos
  • 1 med white onion
  • 4 cloves of garlic
Instructions
  1. Cook the pork and brown it. Drain fat if you prefer.
  2. Meanwhile, wrap the green tomatoes, chiles and garlic in tin foil and place them in a pot.
  3. Cover and heat on medium high until the tomatoes are soft. Stir occasionally to heat evenly.
  4. Once veggies are soft, blend (in food processor) with the onion and cilantro.
  5. Pour the sauce over the meat and simmer for about 10 to 15 minutes on medium low.

  • ¼ c. butter
  • ¼ c. flour

  1. Preheat oven to 350 degrees.
  2. Melt butter over low heat; blend in flour and seasonings.
  3. Cook over low heat until smooth and bubbly. Remove from heat; stir in broth and cream. Heat until boiling, stirring constantly.
  4. Boil and stir for 1 minute. Stir in wine, boiled noodles, chicken and mushrooms.
  5. Pour into ungreased 2 quart casserole.
  6. Sprinkle with cheese. Bake uncovered for 30 minutes.
