Ingredients
  • 2 lb. Italian link sausage
  • 6 to 8 green peppers, sliced in strips
  • 6 med. onions, sliced
  • 1 lb. mushrooms, sliced (optional)
  • 1½ tsp. oregano
  • ½ tsp. basil
  • ½ tsp. garlic powder
  • 1 c. white wine
  • 1 tbsp. oil
  • Salt and pepper to taste
Instructions
  1. Brown sausage links in a skillet and drain off all fat.
  2. Cut sausages into smaller pieces about 1½ inches long and add wine, garlic powder, basil, oil and oregano.
  3. Cover and simmer about 30 minutes.
  4. Top with green peppers, mushrooms and onions.
  5. Sprinkle with salt and pepper and mix well.
  6. Cover and simmer another 30 minutes or until sausage is done, stirring occasionally.

Ingredients
  • 4-6 boneless pork loin chops
  • 1 can cream of mushroom soup
  • 1 soup can water
  • 1 pkg. onion soup mix
Instructions
  1. Preheat oven to 350°F.
  2. Place chops in casserole dish. In bowl, combine soups with water and pour mixture over meat.
  3. Cover with foil and bake for 30-45 minutes.

Ingredients
  • 6 firm bananas
  • 1 c. orange juice
  • ½ c. brown sugar
  • ½ c. butter
  • ½ c. rum room temperature
Instructions
  1. Peel bananas and slice in half lengthwise.
  2. Arrange in layers in buttered baking dish. Sprinkle each layer with orange juice and brown sugar. Dot with butter.
  3. Bake in 400 degree oven until fruit is softened, not too soft, about 15 minutes.
  4. Place bananas in chafing dish, bring to table and add rum.
  5. Ignite and serve when flames die down.
  6. Serve over vanilla ice cream.
  7. WARNING: Fire is dangerous. Use precautions.

  • 1 5 lb. brisket
  • 6 tbsp. Liquid Smoke
  • 3 tbsp. Worcestershire sauce
  • 1 tbsp. garlic salt
  • 1 tbsp. celery salt
  • 1 tbsp. salt
Instructions
  1. Put in baking pan.
  2. Marinate in refrigerator for 24 hours.
  3. Cook for 4 hours at 300 degrees.

Ingredients
  • 6 large sweet potatoes
  • ½ c. Sugar
  • 1 qt. orange juice
  • 2 tbsp. cinnamon
  • 2 tbsp. nutmeg
  • ¼ tbsp. vanilla
  • 1 stick butter
Instructions
  1. Boil sweet potatoes, drain and cool. Peel off skins and slice lengthwise.
  2. Place in 2 layers in a casserole dish and sprinkle ¼ c. sugar on each layer.
  3. Place orange juice, butter, Cinnamon, Nutmeg and vanilla in a 2 qt. sauce pan and heat on medium. Stir until it reaches a soft boil and reduce heat to let simmer for about 5 minutes.
  4. Pour over sweet potatoes.
  5. Cover pan and bake for 50-60 minutes at 350 degrees. Uncover and bake for extra five minutes to brown top.

  • 1 14oz can sweetened condensed milk
  • 1 c. half & half
  • 1 c. Irish whiskey
  • 2 tsp. chocolate flavored syrup
  • ⅛ tsp. coconut extract

Ingredients
  • 1 lb. minced beef, low fat
  • 1 fresh chili
  • 1 medium onion
  • 1 clove garlic
  • 1 dash Tabasco sauce
  • ½ c. tomato sauce
  • 1 sm. can chopped tomatoes
  • 1 can kidney beans
Instructions
  1. Cook meat and onions with a splash of oil in large pan with tomato sauce, garlic, chili and Tabasco. Add more of the latter if you want more zing.
  2. When meat is browned and onions cooked through, add the last ingredients and simmer for 10-20 minutes.

  • ¼ c. lemon juice
  • ¼ c. water
  • 3 tbsp. ketchup
  • 1½ tsp. garlic powder
  • ½ tsp. garlic salt

Ingredients
  • 1 c. coarsely chopped onion
  • ¼ c. olive oil
  • 2 tsp. dried basil, crushed
  • 2 lb. peeled, deveined, lg. shrimp
  • 2 cloves garlic, minced
  • 2 (28 oz.) cans Italian tomatoes
  • 2 tsp. dried oregano
Instructions
  1. In a large saucepan, cook onion and garlic in hot oil, stirring occasionally, until onion is tender.
  2. Cut up tomatoes. Add tomatoes and juice, basil and oregano to onion mixture. Bring to a boil.
  3. Reduce heat and simmer, uncovered, 30-40 minutes, stirring occasionally, until most of liquid is evaporated. Stir in shrimp. Cook, stirring occasionally, 5 minutes or until shrimp are done.

Ingredients
  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • 2½ lbs. chicken parts, skinned
  • 1 tsp. salt
  • ½ c. bourbon, divided
  • ¼ c. chopped shallots
  • 3 tbsp. chopped fresh parsley
  • 1 tsp. thyme leaves
  • ½ c. half & half
Instructions
  1. In 12 inch nonstick skillet heat together oil and butter until butter is bubbly and mixture; add chicken pieces, sprinkle with salt and pepper and brown well on all sides. Add ¼ cup bourbon; using a long match, ignite mixture. When flame goes out, add remaining ¼ cup bourbon along with the shallots, parsley and thyme.
  2. Reduce heat to low, cover and let simmer until chicken is tender and, when pierced with a fork, juices run clear, 20 to 25 minutes. Using slotted spoon, remove chicken to serving platter.
  3. Add half and half to pan juices in skillet and let simmer, stirring frequently, until mixture thickens slightly; pour over chicken and serve immediately.

 

Scottish Oatmeal Raisin Cookies

Ingredients
  • 2 c. quick oats
  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1 tsp. ground allspice
  • ½ tsp. baking soda
  • 1 c. butter, melted
  • 2 eggs, slightly beaten
  • 1 c. firmly packed brown sugar
  • ½ c. corn syrup
  • 1½ c. raisins
Instructions
  1. Stir together first 6 ingredients. In a large bowl, stir together next 4 ingredients until smooth.
  2. Gradually add oat mixture, stirring until a smooth, thick batter forms. Stir in raisins. Cover; chill at least 1 hour.
  3. Drop by heaping teaspoonfuls 2" apart onto greased cookie sheet. With fork, press lightly to flatten.
  4. Bake at 350°F 10-12 minutes or until lightly browned.
  5. Remove from cookie sheet; cool on rack.
