  • ½ c. butter
  • ¼ c. powdered sugar
  • 1 c. flour
  • ¼ tsp. salt
  • ½ tsp. vanilla
  • 1 c. toasted almonds, ground
  • Confectioners sugar for rolling
Instructions
  1. Cream butter; add sugar, flour, salt, vanilla, and almonds, which have been ground in an electric blender or food processor. Form into a ball and refrigerate for several hours. Then roll into balls 1 inch or more in diameter.
  2. Bake in 400 degree preheated oven for about 15 minutes. Roll in the sugar while still hot; cool. Roll in the sugar again.

Ingredients
  • 3 boneless skinless chicken breast
  • sesame seeds
  • 1 green bell pepper (julienne)
  • 1 clove of garlic, chopped
  • 2½ tbsp. of coconut oil
  • 1 jar of La Choy sweet and sour sauce
Instructions
  1. Cube chicken into desired chunks; set aside. Heat oil until melted over low heat. Add sesame seeds and chopped garlic, stir to mix together, turn up heat to med-hi, and add chicken.
  2. Stir fry until chicken is thoroughly cooked, then add bell pepper and sweet and sour sauce. Stir and turn down heat to low.
  3. Cover and simmer for about 10 minutes until bell pepper is soft and tender.

Ingredients
  • ½ stick butter
  • 1 c. canned evaporated milk
  • 2 c. sugar
  • 16 large marshmallows
  • ¼ c. sugar, caramelized
  • 1 tsp. vanilla
  • 1½ c. chopped pecan
Instructions
  1. Melt butter around the sides and bottom of a heavy saucepan. Add milk and sugar. Stir with wooden spoon toward the center of the pan. Add marshmallows.
  2. Place ¼ cup sugar in small pan to caramelize.
  3. Transfer melted sugar into the larger pan, stirring constantly. Lower the heat, and cook until a candy thermometer reaches 238°F, stirring often; set aside to cool to 110°F.
  4. Stir in vanilla and pecans, continuing to stir until the candy will hold its shape. Drop by teaspoonfuls onto buttered wax paper.

  • 1 c. flour
  • ½ c. salt
  • 2 tsp. cream of tartar (do not leave out)
  • 1 c. water
  • 1 tbsp. cooking oil
Instructions
  1. Mix ingredients in a saucepan.
  2. Cover over medium heat until it forms into a ball, stirring constantly.
  3. Food coloring may be added.
  4. Knead slightly on waxed paper.
  5. Let cool.

  • 1 lb. hamburger
  • 2 cans mushroom soup
  • 1 med. onion
  • ¼ tsp. pepper
  • ½ c. chopped mushrooms
  • ¾ bag med. egg noodles, cooked
Instructions
  1. Sauté onion, mushrooms and hamburger. Drain off grease.
  2. Mix hamburger mixture with cooked noodles.
  3. Add mushroom soup, pepper and a dash of salt.

  • ¼ c. butter
  • ¼ c. flour
  • 1 dash pepper
  • 2 c. milk
  • 2½ oz. dried beef, sliced
Instructions
  1. In medium saucepan, melt butter.
  2. Blend in flour and pepper. Stir in milk.
  3. Cook over medium heat until mixture boils and thickens, stirring constantly.
  4. Reduce heat. Tear beef into shreds; add to cream sauce and heat through.
  5. Great served over mashed potatoes.

Ingredients
  • ¼ c. butter
  • ¼ c. flour
  • 1⅔ c. evaporated milk
  • 1 c. chicken broth
  • ½ c. water
  • 3 c. cooked long-grain rice
  • 2½ c. cooked chicken, diced
  • 1 (3 oz.) mushrooms, drained
  • ⅓ c. chopped green pepper
  • ¼ c. pimiento
  • 1½ tsp. salt
Instructions
  1. In saucepan, melt butter and blend in flour.
  2. Add milk, broth and water. Cook quickly, stirring constantly, until mixture thickens and bubbles.
  3. Add rice, chicken, mushrooms, green pepper, pimiento and salt.
  4. Pour into greased 2 quart dish.
  5. Bake uncovered, at 350 degrees for 40 minutes, or until heated through.

Ingredients
  • ½ c. butter
  • 1½ c. flour
  • ½ c. sugar
  • 2 eggs, separate yolks and whites
  • 1 tsp. vanilla
  • 1 c. pecans, chopped
Instructions
  1. In large bowl, beat butter with electric mixer on medium about 30 seconds.
  2. Add about half of flour to butter.
  3. Add sugar, egg yolks and vanilla. Beat until thoroughly combined.
  4. Stir in remaining flour.
  5. Cover and chill about 1 hour.
  6. Generously grease cookie sheet. Shape dough into 1-inch balls.
  7. Roll balls in slightly beaten egg whites, then in pecans.
  8. Place 1 inch apart on cookie sheet.
  9. Bake at 375 degrees for 10 to 12 minutes.
  10. To serve fill centers with strawberry preserves.

  • 1 lb. fresh mushrooms
  • 2 c. onions
  • 1½ tsp. sugar
  • 3 tbsp. flour
  • 1 c. cold water
  • 1 can chicken soup
  • 1 c. all purpose cream
  • Salt & pepper to taste
  • 2 tbsp. butter
Instructions
  1. Chop mushrooms and onions into fine pieces.
  2. Melt butter and sauté onions and sugar until brown.
  3. Add mushrooms and sauté for 3 minutes.
  4. Stir in flour until smooth.
  5. Add cold water and stir until blended.
  6. Add can of soup and simmer for 15 minutes.
  7. Just before serving, stir in cream.

Ingredients
  • 6 chicken breasts, cooked, cut into 1" pieces
  • 1 onion
  • 2 tbsp. butter
  • 2 16 oz. cans Old El Paso Enchilada sauce
  • 1 4 oz. can tomato sauce
  • 16 white corn tortillas
  • 2 c. cheddar cheese, combined with
  • 2 c. Monterrey Jack cheese
  • 1 chicken bouillon cube (in ¼ cup liquid)
  • 1 c. stewed tomatoes
  • 1 tsp. garlic powder
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • ½ tsp. chili powder
Instructions
  1. Slice the onion and saute in garlic and butter. Add the dissolved bouillon cube, tomatoes, Enchilada sauce, herbs and seasonings. Simmer over low heat.
  2. Fry the tortillas in 375 degree oil for a short period (about 1 minute).
  3. Remove tortillas and drain on paper towels. Dip in sauce when cooled.
  4. Fill each with chicken and cheese and roll up, placing seam side down in 9 x 13 x 2 inch pan.
  5. Pour remaining sauce on top and sprinkle with cheese.
  6. Bake at 350 degrees for 30 to 40 minutes.

 

Fettuccine Carbonara

  • 10-12 oz. spinach noodles
  • ½ c. melted butter
  • 2 c. whipping cream
  • 2 c. Parmesan cheese
  • 1½ tsp. pepper
  • 1½ tsp. garlic powder
  • 1 tsp. parsley
  • ½ tsp. chicken base
  • 2 c. sliced fresh mushrooms, sauteed
Instructions
  1. Boil noodles. Rinse and set aside.
  2. Melt butter in skillet.
  3. Add cream.
  4. Mix and heat slightly.
  5. Add cheese, pepper, garlic, parsley and chicken base.
  6. Stir with whisk, while heating until creamy.
  7. Add mushrooms.
  8. As cheese melts, add noodles.

 

Twice Baked Potatoes

Ingredients
  • 1 small yellow onion diced
  • olive oil
  • 5 baking potatoes
  • ¾ c. milk
  • 2 tbsp. butter
  • 1 tsp. pepper
  • 4 oz. shredded cheddar cheese
Instructions
  1. Pre-heat oven to 350 place baking potatoes directly on oven rack and bake for 1hour 20minutes.
  2. Meanwhile, cover the bottom of a skillet or frying pan with olive oil add onions to oil and saute until tender (About 5 minutes) Remove onions from heat; drain excess oil. Add onions to medium mixing bowl.
  3. When potatoes are done, take out of the oven and cut the top ¼ off of each potato (the long way) Scoop potato out of the shell and into mixing bowl with the onions. Add milk, butter, and pepper to mixture. With mixer, combine ingredients until well blended. Add cheese and mix with spoon.
  4. Place potato mixture into a medium sized plastic bag. Twist bag, with scissors, clip the corner off the end of the bag. Squeeze the potato into each shell. Place filled shells on cookie sheet and bake another 20 minutes, or until cheese is melted and light brown crust forms on top of potatoes.

Ingredients
  • 4-6 chicken breasts
  • Italian dressing for marinating chicken
  • 2 c. bread crumbs
  • ½ c. Parmesan cheese
  • garlic powder
  • salt and pepper
  • mozzarella cheese
  • spaghetti sauce
  • oil with 3 tbls. butter
Instructions
  1. Marinate chicken breasts for ½ hour in Italian dressing add Parmesan to bread crumbs and garlic powder, salt and pepper to taste. Dip marinated chicken into bread crumb mixture and add enough oil with butter in pan for frying until brown on both sides.
  2. Preheat oven to 375F degree.
  3. After browning, place chicken in shallow baking pan and pour any kind of spaghetti sauce of your liking over chicken. Add enough mozzarella cheese to cover and bake at 350 for 45 minutes.

  • ¼ c. sugar
  • ½ tsp. cinnamon
  • 2 tbsp. butter
  • BREAD: 1¾ c. flour
  • 2½ tsp. baking powder
  • ½ c. sugar
  • ½ tsp. salt
  • ¼ c. shortening
  • 1 egg
  • ¾ c. milk
Instructions
  1. Mix topping ingredients and set aside. S
  2. et oven at 400 degrees, grease 9 x 9 inch pan.
  3. Mix shortening into dry ingredients.
  4. Mix milk and egg to dry ingredients until well moistened.
  5. Spread in pan.
  6. Sprinkle on topping.
  7. Bake 20-25 minutes.

 

Coconut Pudding Cake

Ingredients
  • 1 box cake, any flavor
  • ½ C. milk
  • ¼ C. sugar
  • 1 C. coconut, divided
  • 1 pkg. cool whip (8 oz.)
Instructions
  1. Bake the cake as per the package directions and cool completely.
  2. Boil milk, sugar, ½ of the coconut and cool.
  3. Poke holes in the cake with a straw or large fork.
  4. Pour the milk mixture over the cake and into the holes.
  5. Mix cool Whip with the remaining coconut and spread over the cake.
  6. Sprinkle the top with more coconut if desired.
