Ingredients
  • 2 C. Flour
  • 2 eggs, slightly beaten
  • 2 C. sugar
  • 2 tsp. baking soda
  • 1 C. chopped nuts
  • 1 - 20 oz. can crushed pineapple
Instructions
  1. Mix all ingredients together and bake in a 9x13 pan at 350 for 35 minutes.
  2. Top with: 1 stick margarine melted and then cooled 8 oz. cream cheese and 1½ C. powdered sugar.

Ingredients
  • ⅔ C. margarine
  • 1⅔ C. sugar
  • 3 eggs
  • ½ tsp vanilla
  • 2 C. flour
  • ⅔ C. cocoa
  • 1¼ tsp baking soda
  • 1 tsp. salt
  • ¼ tsp baking powder
  • 1⅓ C. water
Instructions
  1. Beat together the margarine, sugar, eggs and vanilla.
  2. Add remaining ingredients and mix well.
  3. Bake in a 9x13 greased pan at 350 for 30-35 minutes.

  • 1 C. chopped walnuts
  • 1 C. eagle brand milk
Instructions
  1. Bake in a greased pan for 45 minutes at 325
  2. Cut in squares and dab with cream.

Ingredients
  • ¼ c. butter
  • 8 c. Cheerios
  • 1 10 oz bag of marshmallows
Instructions
  1. In large saucepan, melt butter. Add marshmallows and stir until melted and blended with the butter.
  2. Remove from heat and add Cheerios. Mix until evenly coated.
  3. Scoop into 13x9x2 greased pan. Cool for an hour or two, cut into small squares and enjoy!

Ingredients
  • 1 teaspoon instant yeast
  • 1 teaspoon sugar
  • ½ pound unsalted butter
  • ⅓ cup sugar
  • Pinch of salt
  • 1 rounded tablespoon ground cinnamon (Generous)
  • 3 cups flour
  • 1 large egg
  • syrup:
  • 1 tablespoon ground cinnamon
  • 1 cup Karo light syrup
  • ⅞ cup light brown sugar
  • ¼ cup butter
Instructions
  1. Proof yeast in 3 tablespoons water with 1 teaspoon sugar until bubbly.
  2. Beat butter until light, adding sugar, salt and cinnamon.
  3. Mix in the yeast mixture, flour and egg(s) and knead or beat well.
  4. Set in a warm place for about an hour. It will not look like it's raising much; don't worry.
  5. Meanwhile, make the syrup (stroop).
  6. Syrup: Heat cinnamon, syrup and sugar on stove and cook slowly until thickened a bit (about 10 minutes).
  7. Remove from heat and beat in butter.
  8. Should thicken as it cools, but still be slightly warm and thin enough to spread easily.
  9. If it cools too much, reheat gently; if it thickens too much, add a bit of liquid.
  10. To make waffles: Heat waffle iron and oil lightly only once.
  11. Using scoop to measure, place dough in center of heated wafel iron and bake for one minute (no longer, or you'll risk burning them).
  12. When done, remove from iron, place flat on counter and immediately slice waffle horizontally into two thin wafers, using the sharp fillet knife.
  13. Spread syrup on one cut surface, reassemble pressing gently but firmly, and trim to a uniform shape with the 3" cookie cutter.
  14. Cool, at least slightly, flat on a rack before eating.

Ingredients
  • 6 apples
  • ½ c. flour
  • ¾ c. brown sugar
  • ½ c. oatmeal
  • ¾ tsp. cinnamon
  • ¾ tsp. nutmeg
  • ⅓ c. butter
Instructions
  1. Place peeled/sliced apples in greased 8 inch square baking dish.
  2. Blend remaining ingredients until crumbly, spread over apples.
  3. Bake in 350 degree oven for 30 to 35 minutes.

Ingredients
  • 1½ c. chocolate chips
  • 1 can sweetened condensed milk
  • Dash salt
  • ½ c. chopped nuts
  • 1½ tsp. vanilla
Instructions
  1. In saucepan over low heat melt chips with sweetened condensed milk and salt.
  2. Remove from heat. Stir in nuts and vanilla.
  3. Spread evenly into wax paper lined 8" square pan.
  4. Chill 2 hours or until firm.
  5. Turn onto cutting board.
  6. Peel off wax paper.
  7. Cut into squares.

 

Amaretto Cake

Ingredients
  • 1 box white cake mix
  • 2 eggs
  • ½ c. Amaretto
  • 1 lg. pkg. instant vanilla pudding mix
  • ½ c. water
  • ½ c. oil
Instructions
  1. Mix ingredients well. Bake in greased and floured Bundt pan at 325 degrees for 40 minutes or until done. Poke holes in cake with fork and baste with glaze while still warm.
  2. Glaze:
  3. cube butter
  4. tbsp. sugar
  5. tbsp. water
  6. /4 c. amaretto
  7. Heat first 4 ingredients over low heat. Remove from heat and add amaretto.

 

Carrot Cake

Ingredients
  • 1 c. flour
  • 1½ tsp. baking powder
  • ½ tsp. cinnamon
  • ½ tsp. salt
  • 1½ c. grated carrots
  • ½ c. chopped pecans
  • 2 eggs
  • 1 c. sugar
  • ¾ c. vegetable oil
  • 2 tsp. vanilla
Instructions
  1. Combine flour, baking powder, salt and cinnamon. In a separate bowl, beat eggs, sugar and oil.
  2. With mixer running on low speed, slowly add the flour mixture.
  3. Blend in vanilla, carrot, and pecans.
  4. Pour batter into a well greased 8 x 12 inch pan.
  5. Bake in 325°F oven for 35 minutes or until a toothpick inserted in center comes out clean.
  6. When cake is cool, spread with cream cheese icing, below.
  7. ICING:
  8. oz package cream cheese, softened
  9. tbsp. butter, softened
  10. tsp. vanilla
  11. In a small mixing bowl, combine cream cheese, butter and vanilla. Beat at low speed on electric mixer until light. Gradually add sugar, beating until fluffy.

 

Creme Brulee

Ingredients
  • 2⅓ c. heavy cream
  • ⅔ c. milk
  • ¼ c. granulated sugar
  • 3 whole eggs
  • 3 egg yolks
  • 1 tsp. vanilla extract
  • ¾ c. light brown sugar
Instructions
  1. Preheat oven to 300 degrees.
  2. Heat cream, milk, sugar in a heavy saucepan to almost boiling. In a separate bowl beat whole eggs and extra egg yolks together well.
  3. Gradually whisk the heated mixture into the eggs and return to the saucepan.
  4. Cook over moderate heat, stirring constantly until the custard coats the back of the spoon (3 to 4 minutes); remove from heat. Stir in vanilla.
  5. Pour custard into 6 individual custard dishes or into 1 shallow baking dish about 9 inches across. Set dish or dishes in a large pan and place on the middle rack of the oven. Pour hot water into the outer pan to come level with custard. Bake for 35 to 45 minutes until center is set.
  6. When done, remove custard from water bath and cool. Cover and chill. A few hours before serving, preheat broiler. Sift brown sugar over top of custard. Set custard under broiler as close to heat as possible. Broil until browned about 1½ minutes. Watch closely. Remove and chill.

 

German Orange Cake

Ingredients
  • ¾ c. orange juice
  • 2 tsp orange peel
  • ½ c. sugar
  • 3 eggs, separated
  • 1¼ c. oat flour, sifted
  • 1¼ c. brown rice flour, sifted
  • 4 tsp. of baking powder
  • ¼ teaspoon salt
  • 1 tsp. almond extract
Instructions
  1. Cream butter and adding sugar and then Beat in egg yolks.
  2. Sift together flour, baking powder, salt. Add dry ingredients to creamed butter mixture alternately with ½ cup water. Beat well. Add extract.
  3. In a new bowl, beat egg whites until stiff and fold into batter.
  4. Turn mixture into 2 greased layer cake pans.
  5. Bake in preheated 350°F oven for 25 to 30 minutes or until toothpick comes out clean.
  6. When cake is cooled, frost with a coconut frosting.
  7. Sprinkle with freshly grated coconut.

Ingredients
  • 2½ c. all purpose flour
  • 1½ c. sugar
  • 1½ c. oil
  • 1 c. buttermilk
  • 2 eggs
  • 1 tsp. vanilla
  • 2 tsp. cocoa
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. vinegar
  • red food coloring
Instructions
  1. Mix all ingredients together and bake at 350F for about 30 to 35 minute.
  2. Icing:
  3. oz. confectioner's sugar
  4. stick butter, softened
  5. oz. package cream cheese
  6. tsp. vanilla
  7. Combine all ingredients. Add additional confectioner’s sugar until icing forms peaks.

 

Banana Flambe

Ingredients
  • 6 firm bananas
  • 1 c. orange juice
  • ½ c. brown sugar
  • ½ c. butter
  • ½ c. rum room temperature
Instructions
  1. Peel bananas and slice in half lengthwise.
  2. Arrange in layers in buttered baking dish. Sprinkle each layer with orange juice and brown sugar. Dot with butter.
  3. Bake in 400 degree oven until fruit is softened, not too soft, about 15 minutes.
  4. Place bananas in chafing dish, bring to table and add rum.
  5. Ignite and serve when flames die down.
  6. Serve over vanilla ice cream.
  7. WARNING: Fire is dangerous. Use precautions.

 

Scottish Oatmeal Raisin Cookies

Ingredients
  • 2 c. quick oats
  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1 tsp. ground allspice
  • ½ tsp. baking soda
  • 1 c. butter, melted
  • 2 eggs, slightly beaten
  • 1 c. firmly packed brown sugar
  • ½ c. corn syrup
  • 1½ c. raisins
Instructions
  1. Stir together first 6 ingredients. In a large bowl, stir together next 4 ingredients until smooth.
  2. Gradually add oat mixture, stirring until a smooth, thick batter forms. Stir in raisins. Cover; chill at least 1 hour.
  3. Drop by heaping teaspoonfuls 2" apart onto greased cookie sheet. With fork, press lightly to flatten.
  4. Bake at 350°F 10-12 minutes or until lightly browned.
  5. Remove from cookie sheet; cool on rack.

Ingredients
  • ½ c. butter
  • ¼ c. powdered sugar
  • 1 c. flour
  • ¼ tsp. salt
  • ½ tsp. vanilla
  • 1 c. toasted almonds, ground
  • Confectioners sugar for rolling
Instructions
  1. Cream butter; add sugar, flour, salt, vanilla, and almonds, which have been ground in an electric blender or food processor. Form into a ball and refrigerate for several hours. Then roll into balls 1 inch or more in diameter.
  2. Bake in 400 degree preheated oven for about 15 minutes. Roll in the sugar while still hot; cool. Roll in the sugar again.
