Caramel Candy

Ingredients
  • ½ stick butter
  • 1 c. canned evaporated milk
  • 2 c. sugar
  • 16 large marshmallows
  • ¼ c. sugar, caramelized
  • 1 tsp. vanilla
  • 1½ c. chopped pecan
Instructions
  1. Melt butter around the sides and bottom of a heavy saucepan. Add milk and sugar. Stir with wooden spoon toward the center of the pan. Add marshmallows.
  2. Place ¼ cup sugar in small pan to caramelize.
  3. Transfer melted sugar into the larger pan, stirring constantly. Lower the heat, and cook until a candy thermometer reaches 238°F, stirring often; set aside to cool to 110°F.
  4. Stir in vanilla and pecans, continuing to stir until the candy will hold its shape. Drop by teaspoonfuls onto buttered wax paper.

Ingredients
  • ½ c. butter
  • 1½ c. flour
  • ½ c. sugar
  • 2 eggs, separate yolks and whites
  • 1 tsp. vanilla
  • 1 c. pecans, chopped
Instructions
  1. In large bowl, beat butter with electric mixer on medium about 30 seconds.
  2. Add about half of flour to butter.
  3. Add sugar, egg yolks and vanilla. Beat until thoroughly combined.
  4. Stir in remaining flour.
  5. Cover and chill about 1 hour.
  6. Generously grease cookie sheet. Shape dough into 1-inch balls.
  7. Roll balls in slightly beaten egg whites, then in pecans.
  8. Place 1 inch apart on cookie sheet.
  9. Bake at 375 degrees for 10 to 12 minutes.
  10. To serve fill centers with strawberry preserves.

Ingredients
  • ¼ c. sugar
  • ½ tsp. cinnamon
  • 2 tbsp. butter
  • BREAD: 1¾ c. flour
  • 2½ tsp. baking powder
  • ½ c. sugar
  • ½ tsp. salt
  • ¼ c. shortening
  • 1 egg
  • ¾ c. milk
Instructions
  1. Mix topping ingredients and set aside. S
  2. et oven at 400 degrees, grease 9 x 9 inch pan.
  3. Mix shortening into dry ingredients.
  4. Mix milk and egg to dry ingredients until well moistened.
  5. Spread in pan.
  6. Sprinkle on topping.
  7. Bake 20-25 minutes.

 

Coconut Pudding Cake

Ingredients
  • 1 box cake, any flavor
  • ½ C. milk
  • ¼ C. sugar
  • 1 C. coconut, divided
  • 1 pkg. cool whip (8 oz.)
Instructions
  1. Bake the cake as per the package directions and cool completely.
  2. Boil milk, sugar, ½ of the coconut and cool.
  3. Poke holes in the cake with a straw or large fork.
  4. Pour the milk mixture over the cake and into the holes.
  5. Mix cool Whip with the remaining coconut and spread over the cake.
  6. Sprinkle the top with more coconut if desired.

Ingredients
  • 1 C. sugar
  • ½ C. shortening
  • 3 eggs
  • 1 C. buttermilk
  • 1 C. jam (any flavor)
  • 2 C. flour
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • ½ tsp. cinnamon
  • ½ tsp. cloves
  • ½ tsp. nutmeg
  • ½ C. nuts
  • ½ C. raisins
Instructions
  1. Cream the sugars and shortening together.
  2. Add the eggs one at a time.
  3. Add jam and remaining ingredients.
  4. Pour in a greased and floured pan and bake at 350 for 40 minutes.

 

Raisin Cake

Ingredients
  • 1 pkg. seedless dark raisins
  • 4 C. water
  • 1 tsp. salt
  • 1 C. sugar
  • 1 C. brown sugar
  • 2 tbsp. shortening
  • 2 C. flour
  • 1 tsp. allspice
  • 1 tsp. cloves
  • 4 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. baking powder, heaping
  • 2 tsp. vanilla
  • ½ tsp. lemon juice
  • 1 C. chopped Walnuts
Instructions
  1. In a large sauce pan, bring the water to a boil and add the raisins.
  2. Boil for 20 minutes and remove from heat.
  3. Add Salt, sugar, brown sugar and shortening and allow to cool.
  4. When cool, add remaining ingredients and mix well.
  5. Bake for 1 hour at 350 degrees.

Ingredients
  • 2 C. all purpose flour, sifted
  • 1 C. packed brown sugar
  • 1 tbsp. ground ginger
  • 1 tsp. Baking soda
  • ¼ tsp. salt
  • 1 C. butter
Instructions
  1. Mix dry ingredients well and using fingers combine with butter until crumbly.
  2. Press dough into a 9 inch cake pan.
  3. Bake at 325 for 45-60 minutes.
  4. Cut into wedges while still warm.

Ingredients
  • 3 cans buttermilk biscuits
  • 1 C. sugar
  • ½ tbsp cinnamon
  • 1 cube butter, Melted
  • ¼ C. brown sugar
  • ¼ C. milk
Instructions
  1. Preheat oven to 350
  2. Mix cinnamon and sugar in a bowl.
  3. Dip biscuits in butter and roll in sugar and cinnamon.
  4. Lay biscuits sideways in a Bundt pan.
  5. Continue until all 30 biscuits are in the pan.
  6. Put butter, milk, cinnamon sugar mixture and brown sugar in a microwave safe bowl.
  7. Microwave until butter is melted.
  8. Pour melted mixture over the top of the biscuits.
  9. Bake at 350 for 40-45 minutes or until done.
  10. You can also add nuts or raisins to the mixture.

Ingredients
  • 2-3 c. of bread
  • milk
  • 2 eggs
  • ¾ c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
Instructions
  1. Break up bread into crumbs and put in a large bowl.
  2. Add eggs, sugar, cinnamon and vanilla.
  3. Begin to mix in milk until you have a very thick cake-like batter.
  4. Spoon mixture into a well buttered 8 by 8 square pan and bake for about 30 minutes at 350°F degrees.
  5. When cool, cut into squares and serve.

 

Peanut Butter Balls

  • 1 ¼ C. powdered sugar
  • ½ c. peanut butter
  • 1 tbsp. cocoa
  • 1 tbsp. milk
  • 1 tbsp. vanilla
Instructions
  1. In a large bowl, combine 1 cup of the powdered sugar and cocoa.
  2. Stir in the peanut butter, milk, and vanilla.
  3. Form the mixture into balls.
  4. Roll each ball in ¼ cup powdered sugar.
  5. Place candy on plate and serve

  • ½ c. cashews
  • 1 can shoe string potatoes
  • 6 oz. chocolate chips
  • 6 oz. peanut butterscotch chips
  • 2 tbsp. peanut butter
Instructions
  1. Melt chips and peanut butter in microwave.
  2. Add potatoes and cashews.
  3. Drop by tbsp. onto greased cookie sheet.
  4. Store in refrigerator and serve cold.

  • ½ c. cocoa
  • 1 c. sugar
  • ½ c. powdered milk
  • ½ tsp. salt
  • 4 c. water
  • 4 tbsp. cornstarch
  • ½ tsp. vanilla
  • 3 tbsp. butter
Instructions
  1. Mix all ingredients except butter and vanilla together.
  2. Cook in microwave stirring every once in a while until thick.
  3. When done, add vanilla and butter.

 

German Chocolate Cake Icing

  • 1 sm. can of condensed milk
  • 1 c. sugar
  • 3 egg yolks
  • ¼ lb. butter
  • 1 tsp. vanilla
  • 1 c. coconut flakes
  • 1 c. chopped pecans
Instructions
  1. Combine above ingredients except nuts and coconut.
  2. Cook and stir over medium heat until mixture thickens.
  3. Add coconut and pecans.
  4. Let cool and spread.
