Ingredients
  • 1½ cups flour
  • 2 eggs
  • 1 cup milk
  • 3 tablespoons sugar
  • ¼ teaspoon mace
  • ½ teaspoon cinnamon
  • 1½ teaspoons baking soda
  • 1½ teaspoons baking powder
  • 1¼ teaspoons salt
Instructions
  1. Combine all ingredients.
  2. Drop mixture through a large funnel into hot vegetable oil (365°F-375°F) and fry until golden.
  3. Remove to paper towels using a slotted spoon.
  4. When cool, sprinkle with confectioners' sugar.
  5. A GUARANTEED hit for all ages.

Ingredients
  • 1 c. sugar
  • 2 tsp. lemon juice
  • ¼ c. water
  • ½ tsp. cinnamon
  • 6 or 7 peeled and sliced apples (Red Delicious work the best)
  • ¾ c. flour
  • ¼ tsp. salt
  • 6 t. butter
Instructions
  1. Combine ½ c. sugar, lemon juice, water and cinnamon in bottom of small casserole dish.
  2. Place in sliced apples to cover the bottom. in a separate bowl, blend remaining ½ c. sugar, flour, salt and butter until crumbly.
  3. Spread over apples and smooth out with a spatula.
  4. Bake at 375 degrees for 45-50 minutes, until apples are tender and crust is browned.

Ingredients
  • 1 stick butter
  • ¼ c. cocoa
  • ½ c. milk
  • 2 c. sugar
  • 1 tbsp. vanilla
  • ½ c. peanut butter
  • 3 c. oats
Instructions
  1. Boil butter, cocoa, milk, sugar, vanilla and peanut butter for 1 minute.
  2. Add oats and mix well.
  3. Spoon out onto wax paper.

 

Cannelloni Crepes

Ingredients
  • 3 eggs
  • 1 cup water
  • 1 cup flour
  • pinch salt
  • olive oil
Instructions
  1. In a blender add eggs, water, flour, and salt and process until smooth.
  2. Lightly oil a skillet using a paper towel. Pour ¼ cup of the batter into the pan and quickly swirl the pan around, coating the bottom with the batter.
  3. Do not turn crepe over until it is dry on the top, about one minute. Flip crepe over briefly and cook 20-30 seconds longer.
  4. Lightly oil pan before cooking each crepe.

Ingredients
  • 1 c. water
  • ½ c. butter
  • pinch of Salt
  • 1 c. flour
  • 4 eggs
  • 2 small packages of vanilla pudding
  • 3 c. of milk
  • 8 oz. whipped cream.
Instructions
  1. Bring water, butter and salt to a boil. Beat in one cup flour and remove from heat. Should have the consistency of mashed potatoes. Beat in eggs.
  2. Drop by teaspoon on greased cookie sheet approximately 1 inch apart.
  3. Bake at 400 degrees for 15 minutes. Turn down oven to 350 degrees and bake an additional 15 minutes.
  4. Filling: In a separate bowl, mix pudding and milk. Fold in 8 ounces of whipped cream. Fill shells and frost with chocolate icing.

 

Pumpkin Chocolate Chip Cookies

Ingredients
  • ½ c. shortening
  • 1 c. sugar
  • 2 eggs, beaten
  • 1 c. pumpkin pie filling
  • 2 c. sifted all-purpose flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 2½ tsp. ground cinnamon
  • ½ tsp. ground nutmeg
  • ¼ tsp. ground ginger
  • 2 c. Semi sweet chocolate chips
Instructions
  1. Cream shortening adding sugar gradually until light and fluffy. Add pumpkin and mix well.
  2. Sift flour, baking powder, salt and spices together.
  3. Stir in dry ingredients and mix until blended. Add chocolate chips. Drop by teaspoonfuls on greased cookie sheets. Bake in 350 degree oven for approximately 15 minutes.

 

Monkey Bread

Ingredients
  • 3 packages of buttermilk biscuit tubes
  • 1 cup sugar (divided)
  • 2 teaspoons cinnamon
  • 1 cup butter
  • ½ cup brown sugar
Instructions
  1. Take 3 packages of buttermilk biscuit tubes (10 per roll) and cut each roll into 4 pieces. Drop roll pieces into 1 cup sugar and 2 teaspoons cinnamon. Gently place sugar-coated pieces into a well buttered Bundt pan being careful not to press them together.
  2. Put ½ cup of the left-over sugar/cinnamon mix and ½ cup packed brown sugar and 1 cup of butter (2 sticks) into a small saucepan.
  3. Bring this mixture just to a boil and remove from heat. Drizzle the Sauce over the roll pieces.
  4. Bake at 350°F for 30 minutes.
  5. Goes GREAT with Coffee.

 

Biscotti

Ingredients
  • ½ c. butter, room temperature
  • 1 c. sugar
  • 2 eggs
  • 1½ tsp. vanilla
  • 2 c. flour
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • 1½ c. chopped nuts (optional)
Instructions
  1. Combine butter, sugar and eggs, mixing well. Beat in vanilla. combine dry ingredients and chopped nuts. Add to egg mixture. Batter will be very stiff and sticky. Cover dough with plastic wrap and refrigerate for 1 hour or more.
  2. Divide the dough in 2 loaves about 12 inches long and flatten slightly. Place loaves on 10 x 14 inch sheet, leaving at least 3 inches between. Bake in preheated 400 degree oven for 20 minutes. Remove from the oven. Cool slightly; lower oven to 375 degrees. continue to bake at 375 degrees for 15 minutes, or until firm. While still warm, slice loaves in diagonal slices, about ⅓ inch thick.
  3. Variations: Add 1 cup cocoa and 1½ c. chocolate chips to flour-nut mixture. Dip one end of the biscotti in melted chocolate
  4. Goes Great with Coffee!!!

 

Gingerbread Cookies

Ingredients
  • ¼ c. hot water
  • 4½ c. flour
  • 2 tsp. ginger
  • 2 tsp. cinnamon
  • ½ tsp. salt
  • 1 c. vegetable oil
  • 1 c. brown sugar
  • 1 egg
  • 1 c. molasses
  • ¾ c. cold black coffee
Instructions
  1. Mix all dry ingredients.
  2. Mix vegetable oil, egg, molasses, coffee and water and stir into dry ingredients.
  3. Mix thoroughly.
  4. Roll out dough and cool in refrigerator for at least one hour.
  5. Cut to desired shape and place on cookie sheet.
  6. Bake at 425 degrees until the cookies pass the toothpick test (toothpick comes out clean) time will vary depending on the thickness you decide.

 

Pennysylvania Dutch Sticky Buns

Ingredients
  • 2 c. scalded milk
  • ½ c. butter
  • 1½ tsp. salt
  • ½ c. sugar
  • 1 pk. active dry yeast
  • ¼ c. warm water
  • 9 c. flour
  • 4 tbsp. melted butter
  • ¾ c. sugar
  • 1½ tsp. cinnamon
  • 12 tbsp. butter
  • 1⅓ c. brown sugar
Instructions
  1. Scald the milk by bringing nearly to a boil and removing immediately from heat.
  2. To the scalded milk add ½ cup butter, 1½ teaspoons salt and ½ cup granulated white sugar; stir until the butter has melted.
  3. Dissolve the yeast in ¼ cup warm water; set aside. When milk mixture has cooled to lukewarm, pour in the dissolved yeast and water mixture. Add enough flour (about 9 cups) to make soft dough.
  4. Knead dough on a lightly floured work surface until dough is no longer sticky.
  5. Transfer to a greased bowl, turning upside down once to grease the top. Cover with a damp cloth or plastic wrap and let rise in a warm place (80°F) several hours until it triples in bulk.
  6. Roll into a rectangle 12x24 inches. Brush with 4 tablespoons of melted butter. Mix Sugar and cinnamon and sprinkle on dough.
  7. Roll up like a jelly roll. Divide the roll into 4 equal portions and each portion should then be cut into 10 slices.
  8. Brush four 8-inch baking pans with oil or spray with non-stick spray. Into each of the pans, dot 3 tablespoons butter over the bottom and cover with ⅓ cup brown sugar.
  9. Place 10 rolls, cut side up into each pan. Cover pans again and allow to rise in a warm, draft-free place until almost doubled in size. The second rising usually takes longer than the first.
  10. Bake for 20 to 25 minutes in a preheated 375°F oven. Remove buns from pans and turn upside down to cool.

 

Bunuelos

Ingredients
  • 3⅓ c. flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1½ tbsp. sugar
  • ¼ c. butter
  • 2 eggs
  • ½ c. milk
  • Salad oil for deep frying
Instructions
  1. Sift flour, with salt, baking powder, and sugar into a bowl. Add butter and rub into flour with your fingertips until mixture is like coarse meal. Beat eggs lightly with milk, then pour into flour mixture and stir until dough forms a solid mass. Turn dough out onto board, and knead lightly for 2 minutes or until smooth. Cut dough into balls the size of marbles and let stand 15 minutes.
  2. Roll each ball on a lightly floured board into a very thin pancake 4 inches in diameter. Cut a hole in center with a thimble. After rolling out the circles of dough, place them in a single layer on waxed paper until ready to cook.
  3. Fry in hot deep fat (375 degrees) until puffed and golden brown, about 30 seconds on each side.
  4. Mix 1 cup granulated sugar and 1 teaspoon cinnamon in a bowl. As bunuelos are still warm, shake in sugar mixture.

 

Scones

Ingredients
  • 3 c. self-rising flour, sifted
  • ½ c. butter, melted
  • ⅓ c. sugar
  • milk
  • 2 eggs
  • 1 tsp. baking powder
Instructions
  1. Preheat oven to 400°F degrees.
  2. Cut butter into the flour using your fingers until mixture resembles coarse crumbs. Stir in sugar, baking powder, and beaten eggs
  3. Add enough milk to form a sticky dough, turn out onto a lightly floured board and knead approximately 10 turns. Do not over-knead, as this will make the scones tough.
  4. Flatten to a circular shape, about 1½" in thickness and cut wedge shaped pieces. Arrange pieces 1 inch apart in a circle on a lightly greased pan. Brush tops with cream or beaten egg white and bake about 15 minutes or until golden.

  • ½ c. rice
  • 2 qt. milk
  • 1 c. sugar
  • ½ tsp. salt
  • ½ tsp. cinnamon
  • 1 c. raisins
Instructions
  1. Mix all into oven proof baking bowl. Bake 325 degrees about 2 hours. Stir occasionally.

 

Lemon Crisps

Ingredients
  • 1½ c. flour
  • ½ tsp. salt
  • ½ tsp. baking soda
  • ½ c. butter
  • ¾ c. granulated sugar
  • 1 egg, beaten
  • 2 tsp. grated lemon rind
  • 1 tbsp. lemon juice
Instructions
  1. Sift flour with salt and baking soda. In small bowl with mixer at medium speed, Cream butter, sugar, egg and lemon rind. Beat well.
  2. At low speed, beat in flour slowly, and then add lemon juice.
  3. Refrigerate for ½ hour.
  4. Heat oven to 375°F. Grease two cookie sheets and shape cookie dough by tablespoonfuls into balls. Roll in granulated sugar until coated. Place two inches apart on cookie sheets. Using a fork, press down each ball until it is flat and round.
  5. Bake 10-12 minutes or until light golden brown.

 

Lemon Squares

Ingredients
  • 1 c. all purpose flour
  • ½ c. unsalted butter
  • ¼ c. confectioners’ sugar
  • 2 eggs
  • 1 c. sugar
  • 1 tsp. baking powder
  • 3 tbsp. fresh lemon juice
Instructions
  1. Preheat oven to 350°F. Combine flour, butter and confectioners’ sugar until they have the consistency of cornmeal. Press the mixture evenly into the bottom of an ungreased 8 inch square baking pan.
  2. Bake at 350°F for 20 minutes, or until lightly golden.
  3. While the crust is baking, beat eggs, gradually adding sugar until lemony colored. Add lemon juice and baking powder.
  4. When crust is done, pour lemon mixture over it and return it to the oven. Continue to bake for another 25 minutes or longer
  5. The lemon squares must set. Allow to cool completely before cutting. While still in the pan, cut into 16 squares.
  6. Refrigerate before serving.
