Ingredients
  • 4 chicken breasts
  • 1 large can pineapple chunks, drained
  • 1 C. sugar
  • 2 tbsp. corn starch
  • ¾ C. vinegar
  • 1 tbsp. soy sauce
  • ¼ tsp. ginger
  • ¼ C. water
Instructions
  1. Lay the chicken on the bottom of a 9x13 casserole dish
  2. Combine the sugar, corn starch, vinegar, soy sauce, ginger and water in a sauce pan and bring to a boil.
  3. Boil sauce for 2 minutes and pour over the chicken.
  4. Bake at 350 for 30 minutes.
  5. Add pineapple chunks to the top and bake for an additional 30 minutes.
  6. Serve with Rice.

Ingredients
  • 8 oz. stuffing mix
  • ½ C. margarine, melted
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • ½ C. chicken broth
  • 3 C. chicken, cooked
  • 1½ C. frozen mixed vegetables, thawed
  • 2 tbsp. chopped celery and onion
  • Chopped mushrooms to taste
  • 5 oz. evaporated milk
Instructions
  1. Mix stuffing mix and margarine together.
  2. Using half of the stuffing mix, cover the bottom if a casserole dish.
  3. Combine remaining ingredients and pour over stuffing.
  4. Top with remaining stuffing mix.
  5. Bake uncovered at 350 for 30 minutes.
  6. Let stand for 5-10 minutes before serving.

  • 1 lb. stew meat
  • 1 onion, chopped
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 2 tsp. Worcestershire sauce
  • 1 tsp. ketchup
  • 1 can sliced mushrooms
Instructions
  1. Combine all ingredients and cook in crock pot for 8-10 hours or until meat is done.

Ingredients
  • 12 large cabbage leaves
  • 1 lb. ground beef
  • ¾ C. cooked rice
  • 1 egg
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 1 tsp. Worcestershire sauce
  • ¼ C. minced onion
  • ⅔ C. milk
  • 16 oz. can tomato sauce
  • 1 tbsp. brown sugar
  • 1 tbsp. lemon juice
Instructions
  1. Boil the cabbage leaves for about 3 minutes in water to soften them.
  2. Combine the meat, rice, egg, salt, pepper, Worcestershire, onion and milk.
  3. Place approximately ½ C. of the meat mixture on each cabbage leaf and fold into a package.
  4. Place each package into the bottom of a casserole dish.
  5. Combine the tomatoes, brown sugar and lemon juice and pour over the top of the cabbage leaves.
  6. Cover and bake at 350 for 45-60 minutes.

Ingredients
  • 2 pork tenderloin fillets
  • 2 tsp. ground pepper
  • ¼ C. soy sauce
  • 1 tsp. Dijon mustard
  • 1 clove garlic, minced
  • 2 tsp. ginger, chopped
Instructions
  1. Mix the soy sauce, mustard, garlic and ginger.
  2. Coat the fillets with the mixture and refrigerate in the marinade overnight.
  3. Pat dry each fillet and cover with coarse ground pepper.
  4. Cook in hot grill for about 15 minutes per side or until done.

Ingredients
  • 1½ tbsp. salt
  • ¼ C. soy sauce
  • 1 tsp. Worcestershire sauce
  • 2 cloves garlic, sliced thin
  • ½ inch ginger, sliced thin
  • 1½ tbsp. liquid smoke (Hickory works best)
  • 5 lbs. pork loin
  • banana leaves (optional)
Instructions
  1. Mix together the salt, soy sauce, Worcestershire sauce, garlic, ginger and liquid smoke.
  2. Rub pork with the seasoning mixture and let stand for 1 hour.
  3. Wrap the pork with banana leaves or foil.
  4. Place in a baking pan and bake at 325 for 4-5 hours.
  5. Unwrap, cool and shred meat.

  • 1 flank steak
  • 1 bottle red wine vinegar
  • 15 oz. bottle steak sauce
  • 1 pkg. Italian salad dressing mix
  • 1 bottle salad oil
  • Bamboo skewers
Instructions
  1. Cut the flank steak against the grain into thin strips.
  2. Weave the meat onto the skewers and place in a Tupperware dish.
  3. Combine remaining ingredients and pour over meat.
  4. Allow to marinate overnight turning meat periodically.
  5. Cook meat in broiler or over the barbecue.

  • 2½ lbs. round steak
  • 1 pkg. onion soup mix
  • ¼ C. water
  • 1 can cream of mushroom soup

  1. Cut steak into serving sized pieces and place in a slow cooker.
  2. Add remaining ingredients.

  • 3-4 lbs. rump or chuck roast
  • 1 tsp. salt
  • ½ tsp. pepper
  • ¼ tsp. paprika
  • 1 tbsp dry onions
  • 1 C. beef bullion
Instructions
  1. Rub the meat with the spices and place in a crock pot.
  2. Cover with 1 C. bullion and the onions.
  3. Cook on low for 8-10 hours or until meat is tender.

  • 2 lbs. round steak
  • Salt and pepper to taste
  • 1 lrg. onion, sliced
  • 1 can tomatoes
Instructions
  1. Cut round steak into serving sized pieces.
  2. Season steaks with salt and pepper and place in a crock pot.
  3. Place sliced onions on top and cover with tomatoes.
  4. Cover and set to high for 1 hour.
  5. Lower heat to low and cook for 8-10 hours.

  • ½ C. pistachios, chopped
  • ¼ C. brown sugar
  • 1½ tbsp. lemon juice
  • ½ tsp. dill weed
  • ½ tsp. pepper
  • 1 long salmon fillet
Instructions
  1. In a small bowl, combine nuts, sugar, lemon, dill weed and pepper and set aside.
  2. Place the salmon in a greased, foil lined pan.
  3. Press mixture into salmon to create a crust.
  4. Bake at 425 until flaky.
  5. Serve with ¼ C. basil pesto (optional)

Ingredients
  • 1 doz. corn tortillas
  • 1 can tuna, drained
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • ½ can green chili salsa
  • 1 med. onion, minced
  • 1 C. cheese, grated
Instructions
  1. Break tortillas into fourths.
  2. Combine tortillas with remaining ingredients except the cheese.
  3. Place mixture in a 9X5 loaf pan and top with cheese.
  4. Bake at 350 for 45 minutes.

Ingredients
  • ⅓ C. flour
  • 1 tsp. salt
  • ½ tsp. pepper
  • 2 lbs pork, cubed
  • ¼ C. vegetable oil
  • 6 cans chopped green chilies
  • ½ C. salsa
  • 12 flour tortillas
  • Cheddar cheese, shredded
Instructions
  1. In a large bag, combine the flour, salt and pepper.
  2. Add the cubed pork and shake the bag to coat all of the pieces.
  3. In a large skillet, cook all of the pork in oil until no longer pink.
  4. Add the chilies and salsa to the skillet and bring to a boil.
  5. Reduce heat and allow to simmer for 30 minutes or until meat is tender.
  6. Spoon meat and chilies mixture onto tortillas and top with cheese.
  7. Roll up tortillas and serve.

Ingredients
  • 1 can tomato soup
  • 1½ lbs. hamburger
  • ½ C. dry bread crumbs
  • ¼ C. onion, minced
  • 2 tbsp. parsley
  • 1 egg
  • 1 tsp. salt
  • Pepper to taste
  • 1 can fresh string beans
Instructions
  1. Combine ½ of the sop with all ingredients except the beans.
  2. Mix well.
  3. On waxed paper, pat mixture into a 12/9 inch piece.
  4. Spread beans within all edges of the meat.
  5. Roll up like a jelly roll and seal the edges.
  6. Bake at 350 for 40 minutes.
  7. Spoon off fat.
  8. Pour remaining soup over loaf and bake for an addition 10 minutes.

 

Coconut Chicken

Ingredients
  • 4 boneless, skinless chicken breast, cut in half
  • ⅔ c. Bisquick
  • ⅔ c. flaked coconut
  • ½ tsp. paprika
  • ½ tsp. salt
  • 2 tbsp. dry ground mustard
  • Pepper to taste
  • ½ c. sweetened condensed milk
  • ¼ c. butter, melted
Instructions
  1. In one bowl, combine the Bisquick, coconut, paprika, salt, pepper and mustard.
  2. In a second bowl, combine the milk and butter.
  3. Dredge each piece of chicken in the milk mixture and then the coconut mixture and place in an oven safe dish.
  4. Bake at 375 for 35-40 minutes.
