Snow Pudding

Ingredients
  • 2 c. scalded milk
  • Add 3 egg yolks, beaten
  • ¼ c. sugar
  • 1 package plain gelatin
  • ¼ cup cold water
  • 1 cup boiling water
  • ¾ cup sugar
  • ¼ cup lemon juice
  • 3 egg whites
  • Little salt
Instructions
  1. Dissolve 1 package plain gelatin in ¼ cup cold water. Add 1 cup boiling water, ¾ cup sugar, ¼ cup lemon juice. Fold in 3 egg whites which have been beaten stiff. Refrigerate.
  2. CUSTARD SAUCE FOR SNOW PUDDING:
  3. c. scalded milk
  4. Add 3 egg yolks, beaten
  5. /4 c. sugar
  6. Little salt
  7. Put on low heat and when it thickens, add 1 teaspoon vanilla. Chill and pour over Snow Pudding when serving.

Ingredients
  • 1½ pounds sausage
  • 6 slices bread, cubed
  • 1½ cups shredded cheddar cheese
  • 6 eggs
  • 1 teaspoon salt
  • 2 cups milk
  • 1 teaspoon dry mustard
  • 4 ounces mushroom pieces, drained
  • ¼ cup green bell pepper, diced
  • ¼ cup green onion, diced
Instructions
  1. Brown sausage and drain grease.
  2. Layer bread in bottom of 9 x 13-inch well-greased baking pan.
  3. Sprinkle sausage over bread.
  4. Add cheese.
  5. In a separate bowl, combine eggs and remaining ingredients.
  6. Pour slowly over cheese.
  7. Bake at 325 F. for 45 minutes.
  8. Recipe can be made the might before and refrigerated before cooking if desired.

 

Dinner Rolls

Ingredients
  • 1 square of margarine
  • 6 tbsp. Sugar
  • 2 C. scalded milk
  • 1 tbsp. salt
  • 2 eggs beater
  • 2 pk. Yeast in ½ cup warm water
  • 6-7 cups flour
Instructions
  1. Mix everything together and allow to rise for at least 1 hour.
  2. Roll out dough and cut with a biscuit cutter.
  3. Allow to raise for an additional 10-15 minutes.
  4. Brush tops of rolls with melted butter.
  5. Bake at 425 for 10-15 minutes

Ingredients
  • 2 C. sugar
  • 2 egg whites
  • C. white corn syrup
  • C. water
Instructions
  1. Mix sugar, syrup, and water in a medium sized sauce pan.
  2. Cook on high heat, stirring frequently until candy thermometer reaches 250 degrees F.
  3. While syrup mixture cooks, beat egg whites until stiff peaks form.
  4. When syrup reaches 250F, pour slowly over egg whites beating constantly.
  5. Continue to beat the mixture until it holds its shape.
  6. Using a spoon, drop spoonfuls of the mixture onto waxed paper and allow to cool completely. You will need to work fast as this will begin to set up rather quickly.

 

Rock Candy

Ingredients
  • 4 C. sugar
  • 1 C. white corn syrup
  • 1 C. cold water
  • Oil Based Flavoring of your choice
Instructions
  1. Mix well and bring to a boil everything except the flavoring.
  2. Reduce heat to keep it boiling.
  3. Set candy thermometer in mixture and bring it to 300 degrees.
  4. Add two teaspoons flavoring and 2 drops of color.
  5. Mix well and pour onto cookie sheet that has been lined with foil and powdered lightly with powdered sugar.

  • 2 C. sugar
  • 1 C. butter
  • 3 eggs
  • 1 C. milk
  • 3 tsp. vanilla

  • 5 C. flour

Instructions
  1. Cream butter and sugar, add eggs and beat well.
  2. Mix in lemon and vanilla.
  3. Add remaining ingredients.
  4. Roll ¼ thick, cut and bake at 375 degrees for 8-10 min.
  5. Makes about 5 dozen.

Ingredients
  • 1 C. firmly packed brown sugar
  • C. butter
  • 1 egg
  • 1 tsp. vanilla
  • C. raisins
  • C. crushed pineapple, with juice
  • 2 C. flour
  • 1 tsp. baking powder
  • tsp. salt
  • tsp. soda
Instructions
  1. Beat together sugar, butter, egg and vanilla until fluffy.
  2. Add raisins and pineapple and sift in flour with baking powder soda and salt.
  3. Drop by spoonfuls on greased cookie sheets.
  4. Bake at 375 degrees for 12-15 minutes.

  • C. butter (melted)
  • C. graham cracker crumbs
  • 1 can sweetened condensed milk
  • 1 C. semi-sweet chocolate chips
  • 1⅓ C. flaked coconut
Instructions
  1. Pour sweetened milk evenly over crumbs.
  2. Top with remaining ingredients.
  3. Bake at 350 for 25-30 minutes.
  4. Cool completely before eating.

  • 7 oz. powdered sugar
  • 1 ½ tsp. vanilla
  • 14 oz. butter
  • 7 oz. grated almonds
  • 4 oz. granulated sugar
  • 3 ½ C. Flour
Instructions
  1. Cream butter and granulated sugar together.
  2. Mix ½ flour with almonds, add to butter.
  3. Continue to add flour until the consistency of putty about 3 ½ cups.
  4. Shape into balls and flatten with fork.
  5. Bake 15 in 350 degrees.
  6. When cool dip in powdered sugar.

  • 1 lb. margarine
  • 4 C. Flour
  • Nuts (optional)
Instructions
  1. Cream butter and sugar together and slowly mix in flour.
  2. Roll into balls and flatten with a fork on a cookie sheet.
  3. Bake at 350 for 10-12 minutes.

Ingredients
  • 2 pkg. biscuits
  • 2/4 C. Sugar
  • C. butter, melted
  • 1 orange rind, grated fine
  • Juice from 1 orange
Instructions
  1. Combine melted butter, sugar, orange rind and orange juice together.
  2. Place biscuits in a Bundt pan and pour orange mixture over the dough.
  3. Bake at 375 for 20 minutes or until golden brown.
  4. Immediately turn out biscuits onto a plate after they have been removed from the oven.

 

English Toffee

Ingredients
  • 2 ½ C. sugar
  • 1 C. water
  • 4 sticks of butter
  • C. light corn syrup
  • 2-3 C. of nuts (Any type you prefer)
Instructions
  1. Put half of the nuts on an unbuttered cookie sheet.
  2. Cook the first four ingredients over medium heat until golden brown in a large pan.
  3. Pour mixture over nuts on cookie sheet and sprinkle with remaining nuts.
  4. Let cool and break into pieces.

 

Candied Sweet Potatoes

Ingredients
  • 8 med. sweet potatoes
  • 2 tbsp. butter
  • ½ c. hot milk
  • ½ tsp. salt
  • ¼ tsp. paprika
  • ½ tsp. cinnamon
  • 1 c. chopped walnuts
  • ½ lb. marshmallows
Instructions
  1. Boil potatoes until tender and remove skins and mash. Beat in butter, milk, salt, spices. Beat well. Fold in walnuts and turn into buttered baking dish.
  2. Top with marshmallows and bake at 350°F until marshmallows brown.

 

Funnel Cake

Ingredients
  • 3-4 cups all purpose flour
  • 3 eggs
  • 2 cups milk
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • powdered sugar
  • vegetable oil (for deep frying - heat to 375°F)
Instructions
  1. Beat the eggs first and then add the sugar and milk. Sift 2 cups of flour, the salt, and the baking powder and add to the milk, sugar, and egg mixture. Add more flour until batter is smooth and not too thick.
  2. Pour the batter into a funnel or piping bag and use to pour the batter into the oil making a circle about 6 inches round. Be careful not to splash, the oil will be hot.
  3. Turn the cake when the bottom becomes golden brown.
  4. When both sides are done, remove and top with powdered sugar or cinnamon sugar.
