Milk Chocolate Truffles

Ingredients
  • 9 oz. chocolate chips
  • 2 tbsp. unsalted butter
  • ⅓ c. heavy cream
  • 1 c. unsweetened cocoa
Instructions
  1. Melt chocolate chips and butter and mix together.
  2. Add cream and stir until smooth.
  3. Cover and refrigerate for about 5 hours.
  4. When mixture has set, scoop a teaspoon of mixture and roll into a ball and then roll in cocoa.

 

Flatbread

Ingredients
  • ¾ c. buttermilk
  • ¼ c. cream
  • ¼ c. shortening
  • ½ tsp. salt
  • ⅓ tsp. soda
  • 2 tbsp. sugar
  • 1½ c. flour
Instructions
  1. Melt shortening and mix mix in sugar, flour, salt and baking soda.
  2. Add liquid ingredients to flour mixture gradually.
  3. Add additional flour to thicken if needed. form dough into about 20 balls, and let rest for 30 minutes.
  4. Roll thin on a cookie sheet. Bake at 350 until done.

 

Potato Candy

Ingredients
  • ½ c. mashed potatoes
  • powered sugar
  • peanut butter
Instructions
  1. Place mashed potatoes in a bowl and add powdered sugar until mixture is thick enough to roll out on a flat surface.
  2. Roll out dough and cover with a thin layer of peanut butter.
  3. Roll like a jelly roll and cut into small pieces.

 

Eggnog Bread

Ingredients
  • 3 c. flour
  • ½ c. sugar
  • 4 tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. ground nutmeg
  • 1 egg, beaten
  • 1¾ c. dairy eggnog
  • ½ c. vegetable oil
  • ½ c. chopped pecans
  • ½ c. raisins
  • ½ c. powdered sugar
  • 2 to 3 tsp. eggnog
Instructions
  1. In a large mixing bowl, stir together all of the dry ingredients.
  2. In a second bowl, mix the egg, eggnog and oil and slowly mix in the dry ingredients.
  3. Mix in the nuts and raisins last.
  4. Pour mixture into a large greased loaf pan.
  5. Bake in a 350°F oven for 60 to 65 minutes.
  6. Allow bread to cool in pan for 10 minutes after removing from the oven.
  7. Remove bread from pan and allow to cool on a wire rack.
  8. To glaze, stir together powdered sugar and enough eggnog to make glaze and pour over the bread.

Ingredients
  • 1 c. sugar
  • ½ tsp. salt
  • 1 c. butter
  • 3 oz. cream cheese
  • ½ tsp. almond extract
  • ½ tsp. vanilla extract
  • 1 egg yolk
  • 2¼ c. flour
Instructions
  1. Combine and blend all ingredients except flour and then slowly mix in the flour.
  2. Chill for a couple of hours. Roll out dough to desired thickness and cut into shapes.
  3. Place on un-greased cookie sheet.
  4. Bake at 375 degrees for 7 to 10 minutes or until the edges begin to brown.

 

Apple Cranberry Relish

Ingredients
  • 8 red firm apples,
  • juice of 1 lemon
  • 1 can whole cranberry sauce
  • ½ cup chopped candied ginger
  • 1 tablespoon grated fresh ginger root
  • ½ c. fresh cranberries
  • ¾ cup coarsely chopped walnuts
  • ½ c. orange juice
Instructions
  1. Grate the unpeeled apples and toss with the lemon juice.
  2. Mash up the cranberry sauce slightly and combine that with the grated apples and the remaining ingredients.
  3. Refrigerate and allow cool for several hours before serving.

 

Pumpkin Soup

Ingredients
  • 2 tbsp. butter
  • 1 lg. onion, chopped
  • 1 lg. potato, diced
  • 3 c. chicken broth
  • 16 oz. canned pumpkin
  • ½ tsp. salt
  • ¼ tsp. nutmeg
  • ⅛ tsp. pepper
  • ½ pt. heavy cream
Instructions
  1. In a large quart pan cook onion and potato in butter until onions are clear.
  2. Add chicken broth and heat to a boil.
  3. Cover and cook over low heat until vegetables are tender.
  4. Remove vegetables from the broth and blend in a blender until smooth.
  5. Return to broth vegetable puree to the broth and add the pumpkin and remaining ingredients except for the cream.
  6. Heat to a boil. Once soup reaches a boil, reduce heat to low, cover and allow to simmer for 10-15 minutes. Add the cream and heat through.

Pumpkin Pie

Ingredients
  • ⅛ tsp. salt
  • ⅔ c. sugar
  • 2 tsp. pumpkin pie spice (or ½ tsp. cinnamon and ½ tsp nutmeg)
  • 2 eggs, beaten
  • 1⅔ c. milk
  • 1½ c. pumpkin, cooked and mashed
Instructions
  1. Sift dry ingredients together first and slowly mix in all wet ingredients. After preparing the pie crust, pour in the pumpkin mixture. Bake at 450 degrees for 10 minutes then reduce the temperature to 325 degrees and bake for an additional 35 minutes or until when a knife inserted in the center of the pie comes out clean. Cool and serve.
  2. PASTRY CRUST:
  3. ½ c. flour
  4. ¼ c. shortening
  5. ½ tsp. salt
  6. ½ tbsp. water
  7. Cut shortening and salt into flour. Add cold water and mix. Roll out crust on a floured board and place it into a 9 inch pie pan.

Ingredients
  • 1 c. butter, softened
  • 3 C. sugar
  • 3 eggs
  • 3 c. flour
  • 1 tbsp. baking powder
  • 1½ tsp. baking soda
  • 1½ tsp. ground cinnamon
  • 1½ tsp. ground cloves
  • ½ tsp. ground ginger
  • 16 oz. fresh pumpkin, cooked and mashed
Instructions
  1. In a large bowl, combine all ingredients, wet first then dry adding the pumpkin last.
  2. Pour into two greased loaf pan and bake at 350 for 1 hour.

 

Corn Pudding

Ingredients
  • 1 can corn, drained
  • 1 C. Milk
  • 2 eggs
  • 2 tbsp sugar
  • 2 tbsp flour
  • ¼ tsp. salt
  • 2 tbsp butter
  • Pepper to taste
Instructions
  1. Whisk eggs in bowl and add the milk, sugar, flour salt and pepper. pour mixture in an 8 inch baking disk. Top with corn and dot the top with butter.
  2. Bake uncovered at 350 for 60 minutes or until when a knife inserted in the middle comes out clean. let stand for several minutes before serving.

 

Cornbread Stuffing

Ingredients
  • 4 C. crumbled cornbread
  • 1 tsp. salt
  • pepper to taste
  • ¼ tsp sage
  • ½ C. butter, melted
  • 3 tbsp. chopped onions, cooked
  • chicken broth, enough to moisten
  • sausage, browned (optional)
Instructions
  1. Crumble cornbread in a greased casserole dish and mix in seasonings.
  2. Pour melted butter, onions and chicken broth over the top and mix.
  3. Bake at 350 for 30-35 minutes

 

Cranberry Sauce

Ingredients
  • 2 C. fresh cranberries
  • 1 C. orange juice
  • 2 tsp. cornstarch
  • 1 tbsp. grated orange or lemon peel
  • 2 tsp. cold water
  • 3 tbsp. orange liquor
  • ¾ C. sugar
Instructions
  1. In a saucepan, combine the orange juice, cranberries and sugar and bring to a boil. Stir frequently to prevent burning.
  2. Once boiling, reduce heat and allow to simmer for 10-12 minutes until the cranberries are soft and remove from heat.
  3. Using a fork. mash up the cranberries and mix in the remaining ingredients adding the liquor last.
  4. Refrigerate before serving.

 

 

Cinnamon Bread

Ingredients
  • ¼ C. butter
  • 1/C. sugar
  • 2 eggs
  • 2 C. flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 C. sour milk
  • 2 tsp. vanilla extract
Instructions
  1. Preheat the oven to 350
  2. To sour the milk, add 1 tbsp. of vinegar to the milk and allow to stand for several minutes.
  3. Cream the butter and sugar together and add the eggs and vanilla next. Mix in the dry ingredients and add the sour milk last. Mix all ingredients well.
  4. In a separate bowl, mix 3 tbsp. of brown sugar and 1½ tbsp of cinnamon together.
  5. Pour ⅓ of the mixture into a loaf pan and sprinkle the cinnamon mixture on top, complete this process until all of the batter and cinnamon mixture has been used. Run a knife through the batter several times to mix the cinnamon and sugar into the batter and create swirls.
  6. Bake at 350 for one hour.
  7. You can also add raisins to the batter if desired.
