Gingerbread Cookies

Ingredients
  • ¼ c. hot water
  • 4½ c. flour
  • 2 tsp. ginger
  • 2 tsp. cinnamon
  • ½ tsp. salt
  • 1 c. vegetable oil
  • 1 c. brown sugar
  • 1 egg
  • 1 c. molasses
  • ¾ c. cold black coffee
Instructions
  1. Mix all dry ingredients.
  2. Mix vegetable oil, egg, molasses, coffee and water and stir into dry ingredients.
  3. Mix thoroughly.
  4. Roll out dough and cool in refrigerator for at least one hour.
  5. Cut to desired shape and place on cookie sheet.
  6. Bake at 425 degrees until the cookies pass the toothpick test (toothpick comes out clean) time will vary depending on the thickness you decide.

Ingredients
  • 4 c. mashed potatoes
  • 1 lg. pkg. cream cheese
  • Salt & pepper to taste
  • 2 eggs
  • 1 onion, chopped
  • Paprika
Instructions
  1. Mix all ingredients except paprika. Put in buttered casserole and sprinkle with paprika.
  2. Bake at 400 degrees for 30 minutes.

 

Triple Chocolate Fudge

Ingredients
  • ½ c. butter
  • 4½ c. sugar
  • 1 can evaporated milk
  • 4½ c. mini marshmallows
  • 2 c. chocolate chips (semi-sweet)
  • 1 12 oz. bar sweet baking chocolate, chopped
  • 2 1 oz. squares unsweetened chocolate, chopped
  • 2 tsp. vanilla extract
  • 1 c. nuts, chopped (Optional)
Instructions
  1. Line a brownie-sized baking pan with wax paper or foil, covering sides of pan. Spray with non-stick spray or grease foil with butter.
  2. Combine butter, sugar, and evaporated milk (do not use sweetened condensed milk) in a saucepan stirring over medium heat until butter is melted and sugar is dissolved.
  3. While constantly stirring, turn to high heat and allow to reach a rolling boil. Once mixture is boiling, stop stirring and allow to boil for an additional 5 minutes, then remove pan from heat.
  4. Stir in marshmallows; when melted, add chocolate and continue to stir until all is melted and well combined. Stir in chopped nuts.
  5. Immediately spread mixture in the lined baking pan. Allow to cool before cutting.

 

Applesauce Stuffing

  • 6 c. dry herb stuffing cubes
  • 1 onion, chopped
  • 1 stalk celery, diced
  • 2 c. applesauce
  • 1 (14 oz.) can chicken broth, heated
  • ¼ cup butter, melted
  • Non-stick cooking spray
Instructions
  1. Preheat oven to 375°F. Spray a 9 x 13-inch sheet pan with cooking spray.
  2. In a large bowl, mix stuffing, onion, celery, applesauce, broth and butter. Roll into golf ball-sized balls. Place on the baking sheet.
  3. Bake 30 minutes or until golden brown.

Ingredients
  • 3 eggs
  • 1½ C. sugar
  • ⅔ C. pumpkin
  • 2 tsp. lemon juice
  • ⅔ C. flour
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • ½ tsp. nutmeg
  • ½ tsp. salt
Instructions
  1. Mix all ingredients together.
  2. Line a cookie sheet with waxed paper and dump out mixture on top of paper.
  3. Bake at 375 for 10-15 minutes.
  4. Top with 1½ C. powdered sugar, 3 oz. cream cheese, ¼ lb. margarine, ½ tsp. vanilla.
  5. Spread topping evenly over the top and roll up.

 

Eggnog

Ingredients
  • 2 large eggs
  • 1½ cups sugar
  • ½ teaspoon salt
  • 2 quarts milk
  • 2 tablespoons vanilla extract
  • 2 cups heavy whipping cream
  • ground nutmeg
Instructions
  1. In heavy 4-quart saucepan, with wire whisk, beat eggs, sugar, and salt until blended.
  2. Gradually stir in 1 quart milk and cook over low heat, stirring constantly, until mixture thickens and coats the back of a spoon well, about 25 minutes (mixture should be about 170 F to 175 F. but do not boil or it will curdle).
  3. Pour custard into large bowl; stir in vanilla extract, 1 teaspoon ground nutmeg, and remaining milk.
  4. Cover and refrigerate until well chilled, about 3 hours.
  5. To serve, in small bowl, with mixer at medium speed, beat heavy or whipping cream until soft peaks form. with wire whisk, gently fold whipped cream into custard mixture.

 

Easy Fudge

Ingredients
  • 1½ c. chocolate chips
  • 1 can sweetened condensed milk
  • Dash salt
  • ½ c. chopped nuts
  • 1½ tsp. vanilla
Instructions
  1. In saucepan over low heat melt chips with sweetened condensed milk and salt.
  2. Remove from heat. Stir in nuts and vanilla.
  3. Spread evenly into wax paper lined 8" square pan.
  4. Chill 2 hours or until firm.
  5. Turn onto cutting board.
  6. Peel off wax paper.
  7. Cut into squares.

 

Baked Sweet Potatoes

Ingredients
  • 6 large sweet potatoes
  • ½ c. Sugar
  • 1 qt. orange juice
  • 2 tbsp. cinnamon
  • 2 tbsp. nutmeg
  • ¼ tbsp. vanilla
  • 1 stick butter
Instructions
  1. Boil sweet potatoes, drain and cool. Peel off skins and slice lengthwise.
  2. Place in 2 layers in a casserole dish and sprinkle ¼ c. sugar on each layer.
  3. Place orange juice, butter, Cinnamon, Nutmeg and vanilla in a 2 qt. sauce pan and heat on medium. Stir until it reaches a soft boil and reduce heat to let simmer for about 5 minutes.
  4. Pour over sweet potatoes.
  5. Cover pan and bake for 50-60 minutes at 350 degrees. Uncover and bake for extra five minutes to brown top.

 

Caramel Candy

Ingredients
  • ½ stick butter
  • 1 c. canned evaporated milk
  • 2 c. sugar
  • 16 large marshmallows
  • ¼ c. sugar, caramelized
  • 1 tsp. vanilla
  • 1½ c. chopped pecan
Instructions
  1. Melt butter around the sides and bottom of a heavy saucepan. Add milk and sugar. Stir with wooden spoon toward the center of the pan. Add marshmallows.
  2. Place ¼ cup sugar in small pan to caramelize.
  3. Transfer melted sugar into the larger pan, stirring constantly. Lower the heat, and cook until a candy thermometer reaches 238°F, stirring often; set aside to cool to 110°F.
  4. Stir in vanilla and pecans, continuing to stir until the candy will hold its shape. Drop by teaspoonfuls onto buttered wax paper.

Ingredients
  • ⅔ C. shortening
  • 2⅔ C. sugar
  • 4 eggs
  • 2 C. pumpkin
  • 3½ C. flour
  • ⅔ C. water
  • ½ tsp. baking powder
  • 2 tsp. baking soda
  • 1½ tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. cloves
Instructions
  1. Mix all ingredients together and pour into 2 greased and floured loaf pans.
  2. Bake at 350 for 1 hour.

Ingredients
  • 3 C. sugar
  • 1 C. vegetable oil
  • 4 eggs, beaten
  • 16 oz. can solid pack pumpkin
  • 3½ C. flour
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • ½ tsp. ground cloves
  • ½ tsp. ground allspice
  • ½ C. water
Instructions
  1. In a large bowl, combine the sugar, oil and eggs. Add the pumpkin and mix well.
  2. In a separate bowl, mix all of the dry ingredients together and mix well.
  3. Combine the dry and wet ingredients together and add in the water. Mix well!
  4. Pour mixture into two greased loaf pans and bake at 350 for 60-70 minutes or until done.
  5. Cool completely before turning out.

Ingredients
  • 2 cans small biscuits
  • 1 c. orange juice
  • 1 c. sugar
  • ½ c. butter
Instructions
  1. Place two biscuits side by side in muffin pan.
  2. Bake according to directions on package.
  3. While the biscuits are baking, bring orange juice, sugar, and butter to a boil on the stove. Boil for about 10 minutes or until it starts to thicken slightly.
  4. As soon as the biscuits come out of the oven, pour about ⅛ cup of orange juice mixture over the biscuits and serve.

Ingredients
  • 1 stick butter
  • 1 c. sugar
  • 1 egg
  • 1 tbsp. milk
  • ½ tsp. vanilla
  • 2 c. flour
  • 1 tsp. baking powder
Instructions
  1. Cream butter, sugar and vanilla all together.
  2. Add egg. Beat until light and fluffy.
  3. Stir in milk.
  4. Stir in sifted dry ingredients. Blend well.
  5. Divide dough in half. Chill 1 hour or more.
  6. Roll dough on floured board to about ⅛ inch thickness.
  7. Cut to desired shape.
  8. Bake on cookie sheet, in a 375 degree oven, for 8 minutes.
  9. ICING:
  10. c. sifted confectioner's sugar
  11. /4 c. milk
  12. /2 tsp. vanilla
  13. Dash of salt
  14. Combine all ingredients and mix well.
  15. Add food coloring if desired.

 

Potato Latkas (Latke)

Ingredients
  • 3 to 4 lg. potatoes, peeled and grated
  • ¼ c. minced onion
  • 1 tbsp. flour
  • 2 tsp. salt
  • ⅓ tsp. baking powder
  • 2 egg yolks, beaten
  • 2 egg whites, beaten until stiff
Instructions
  1. Mix above ingredients in order given.
  2. Fold in egg white to batter.
  3. Fry mixture in oil about an inch deep.
  4. Drop batter from teaspoon.
  5. Fry to golden brown on both sides.

 

English Toffee

Ingredients
  • 2 C. Sugar
  • 5 tbsp. Water
  • Lb. butter
  • 1 C. Almonds, Chopped (optional)
Instructions
  1. Using a heavy wide bottom pan, melt the butter and mix in the sugar.
  2. Cook on high, stirring constantly until mixture reached hard crack temperature (300).
  3. Pour on a buttered cookie sheet.
  4. Score the top a little bit and top with 1 C. chopped nuts if desired.
