Ingredients
  • 3 eggs, lightly beaten
  • 1 tbsp. flour
  • 1 C. sugar
  • 1 C. white Karo syrup
  • 1 tbsp. butter
  • 1 tsp. pure vanilla
  • ¼ tsp. salt
  • 1 unbaked pie crust
  • 1 C. pecans
Instructions
  1. Arrange pecans over the bottom of the crust to cover the entire crust.
  2. Combine remaining ingredients together and pour over the pecans.
  3. Bake at 350 for 45-60 minutes.

 

Thanksgiving Jello Salad

Ingredients
  • 6 oz. box raspberry Jello
  • 1 c. boiling water
  • 1 c. Sprite
  • 16 oz. can jellied cranberries
  • 1 pkg. frozen raspberries
  • 1 lg. bowl Cool Whip
  • 8 oz. pkg. cream cheese
  • 1 c. powdered sugar
Instructions
  1. Beat together the jello mix, water, sprite and cranberry sauce.
  2. Add raspberries and gently mix in.
  3. Pour mixture in a large casserole dish and refrigerate mixture for at least 2 hours.
  4. In a separate bowl, mix remaining ingredients and pour over the top of the first mixture.
  5. Serve cold.

 

Cornbread Stuffing

Ingredients
  • 1 med. onion, chopped
  • 3 stalks celery, chopped
  • 1 pan cornbread, crumbled (8 or 9 inch cake pan)
  • 3 raw eggs
  • 1 bag herb stuffing
  • 2 cans chicken broth
  • 2 cans cream of chicken soup
  • 4 boiled eggs, chopped
  • Salt and pepper to taste
Instructions
  1. Saute onion and celery and add remaining ingredients. Toss in a pan and bake at 350 until it reaches the desired texture.

Ingredients
  • ½ cup butter, softened
  • 1-1/4 cups sugar
  • 3 eggs
  • ½ teaspoon vanilla extract
  • ½ teaspoon rum extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup eggnog
  • FROSTING:
  • ¼ cup all-purpose flour
  • ¼ teaspoon salt
  • 1-1/2 cups eggnog
  • 1 cup butter, softened
  • 1-1/2 cups confectioners' sugar
  • 1-1/2 teaspoons vanilla extract
  • Red and green gel food coloring, optional
Instructions
  1. In a large bowl, cream butter and sugar until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Add Rum and Vanilla extract.
  4. In a seperate bowl, combine the remaining dry ingredients and gradually add to creamed mixture.
  5. Add eggnog and mix well.
  6. Pour into two 9-in. round baking pans coated with cooking spray.
  7. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to wire racks to cool completely.
  8. For frosting, put eggnog in a small saucepan over low heat.
  9. Gradually whisk in flour and salt and increase heat.
  10. Bring mixture to a boil while whisking continuously for 2 minutes and remove from heat.
  11. Allow mixture to cool to room temperature.
  12. In a large bowl, cream butter and sugar until light and fluffy and gradually beat in the eggnog mixture and vanilla until smooth.

Ingredients
  • 1¼ C. eggnog
  • 1 tbsp. gelatin
  • 1 tbsp. water
  • 3 egg yolks, beaten
  • 1 c. whipping cream
  • 1 tsp. vanilla
  • 1 pie shell
  • Nutmeg to taste
Instructions
  1. Heat eggnog.
  2. Dissolve gelatin in water and add to eggnog.
  3. Remove from heat and add beaten egg yolks.
  4. Cool. Whip cream until fluffy and add vanilla.
  5. Fold whipped cream into eggnog mixture.
  6. Pour mixture into pie shell and sprinkle with nutmeg.
  7. Refrigerate and serve the next day.

 

Orange slush

  • 4 c. sugar
  • 6 c. water
  • 1 lg. can pineapple juice
  • 1 sm. Can frozen lemonade (6 oz.)
  • 1 lg. can frozen orange juice (12 oz.)
  • Juice from 2 lemons
  • 1 tsp. almond extract
  • 1 tsp. vanilla flavoring
Instructions
  1. Bring sugar and water to a boil and then cool.
  2. Then add remaining ingredients.
  3. Freeze and serve with 2 quarts of 7- up or ginger ale.

 

Hot chocolate

Ingredients
  • 2 chocolate bars
  • 2 cans evaporated milk
  • ½ gal. milk
  • 2 tsp. vanilla
  • Whole cinnamon stick
  • Whole cloves
  • Sugar
Instructions
  1. Boil 4 cups of water with the cinnamon and cloves for 10-15 minutes to flavor the water, and then add the chocolate bars.
  2. Let the chocolate melt and then add the sugar to the taste, and then add the milk.
  3. Let them boil and add the evaporated milk and vanilla.

Ingredients
  • 1 C. sugar
  • 3 tbsp. water
  • 1 tbsp. Karo syrup
  • 1½ C. butter
  • ¾ C. nuts
  • ½ C. chocolate chips
Instructions
  1. Place sugar, water, syrup and butter in a pan.
  2. Cook to hard crack stage using a candy thermometer.
  3. In the bottom of an 8x8 pan, place nuts and chocolate chips.
  4. Pour the candy mixture over the top of the nut mixture.
  5. Let candy harden and turn out of pan.

Ingredients
  • 1 C. sugar
  • ½ C. shortening
  • 1 egg
  • ½ C. milk
  • 3½ C. flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • ½ tsp. salt
Instructions
  1. Cream the sugar and shortening.
  2. Add egg and milk and mix well.
  3. Sift in dry ingredients and add vanilla.
  4. Roll into a ball and roll out.
  5. Cut out desired shapes with a cookie cutter.
  6. Bake at 375 for 5-7 minutes.
  7. Makes 45 cookies.

 

Cranberry Relish

  • 1 pkg. fresh cranberries, ground coarsely
  • 1 orange, peeled and ground
  • 1 lemon, peeled and ground
  • 1 can crushed pineapple
  • 1 C. chopped nuts
Instructions
  1. Mix all ingredients and sweeten to the taste with sugar.
  2. Make at least 1 day before serving.

  • ½ C. shortening
  • 1½ C. sugar
  • 1 egg
  • 1 C. pumpkin
  • 2½ C. flour
  • ½ C. nuts (Optional)
  • ½ tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1 pkg, chocolate chips.
Instructions
  1. Cream the shortening, sugar and egg together.
  2. Add remaining ingredients.
  3. Drop on a greased cookie sheet.
  4. Bake at 375 for 10-12 minutes.

Ingredients
  • 1 C. brown sugar
  • ½ C. butter, melted
  • 3 tsp. ground cinnamon, divided
  • 3 tart apples, peeled, cored and thinly sliced
  • ½ C. dried cranberries or raisins
  • 1 loaf French bread cut into 1 inch slices
  • 6 large eggs
  • 1½ C. milk
  • 1 tbsp. vanilla
Instructions
  1. Combine brown sugar, butter and 1 tsp. cinnamon in a 9X13 casserole dish.
  2. Add apples and cranberries or raisins and toss to coat well.
  3. Spread apple mixture evenly over the bottom of the dish.
  4. Arrange slices of bread on the top.
  5. Mix the eggs, milk, vanilla and remaining cinnamon.
  6. Pour the egg mixture over the bread making sure to get all of the bread covered.
  7. Cover and refrigerate for 4-24 hours.
  8. Bake covered at 375 for 40 minutes.
  9. Uncover and bake for an additional 5 minutes.
  10. Let stand for 5-10 minutes before serving.

Ingredients
  • 2½ C. croutons
  • 2 C. mild cheddar cheese
  • 2 lbs. Hormel Little Sizzlers
  • 4 eggs
  • ¾ tsp. dry mustard
  • 1 can cream of mushroom soup
  • 2½ C. milk
  • 1 small can mushrooms
Instructions
  1. Place croutons in a greased 9X13 casserole dish.
  2. Top with cheese.
  3. Cook sausage until brown and drain.
  4. Place sausage on cheese.
  5. Beat eggs, blend in soup and milk.
  6. Pour egg mixture over sausage.
  7. Bake at 300 for 1 hour 30 minutes.

Ingredients
  • 3 C. boiled mashed yams
  • 2 eggs
  • 1 C. sugar
  • ½ tsp. salt
  • ½ stick margarine
  • ½ C. milk
  • 1 tsp. vanilla
Instructions
  1. Cream sugar and margarine together and add remaining ingredients.
  2. Beat with a mixer until well mixed.
  3. Pour into a casserole dish.
  4. Mix 1 C. brown sugar, 1 C. chopped pecans, ½ C. flour and ½ stick of softened margarine.
  5. Crumble on top of potatoes.
  6. Bake at 325 for 15 minutes.
