Chocolate Crinkle Cookies

Ingredients
  • ½ C. vegetable oil
  • 4 squares unsweetened chocolate, melted
  • 2 C. granulated sugar
  • 4 eggs
  • 2 tsp. vanilla
  • 2 C. flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 1 C. confectioners sugar
Instructions
  1. Mix oil, chocolate and granulated sugar together.
  2. Blend in one egg at a time until well mixed.
  3. Add vanilla.
  4. Sift flour, baking powder and salt into mixture.
  5. Chill for several hours or overnight.
  6. Preheat oven to 350F.
  7. Drop teaspoons of dough into confectioners sugar and roll in the sugar.
  8. shape dough into balls and place about 2 inches apart on a greased baking sheet.
  9. Bake for 10-12 minutes. Do not over bake.
  10. Makes about 6 doz. cookies.

 

Cutout Sugar Cookies

Ingredients
  • 1 cup real butter, softened
  • 1 cup sugar
  • 2 eggs
  • ½ teaspoon vanilla
  • ½ teaspoon almond extract
  • (can omit almond and add 1 t vanilla)
  • 3¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • Icing*
  • 2 cups sifted confectioners' sugar
  • 1 or more tablespoon milk
  • 1 tablespoon light corn syrup
  • ¼ teaspoon almond extract (can use ½ teaspoon vanilla in place of the almond)
  • food coloring
Instructions
  1. In large bowl with mixer, combine butter and sugar, add eggs and extracts; Beat on high til light and fluffy. In another bowl combine flour, baking powder, baking soda and salt; gradually stir into the butter mixture until well blended. Cover bowl with plastic wrap and chill for 2 hours. Set oven to 400°F. Line cookie sheets with parchment paper. On very lightly floured surface roll out the dough into about ¼-inch thickness. Cut into desired shapes using cookie cutters. Place cookies 2-inches apart on cookie sheet. Bake 4-6 minutes. Remove cookies to wire racks to cool completely before icing.
  2. Icing
  3. In a small bowl mix the confectioners sugar with milk (start with 1-2 tablespoons, you will likely need more milk for the perfect spreading consistency). Beat in corn syrup and almond extract until the icing is smooth and glossy (if the icing is too thick add in a small amount more of corn syrup). Divide into as many separate bowls as you wish for different colors. Add in food coloring until desired intensity is achieved. Decorate as desired….you can use small paint brushes, piping bags or dip the cookies in the icing to add detail. Allow to set on waxed paper until icing is set. Icing will harden.
  4. Amount of cookies depends on size of cutters you use.

Ingredients
  • 12 cups fresh bread cubes
  • (6 c white & 6 c wheat)
  • 1 c butter
  • ¾ c finely chopped onion
  • 1½ c chopped celery
  • 1 T salt
  • 1 t pepper
  • 1 T sage
  • 1 T poultry seasoning
Instructions
  1. In a large bowl, prepare bread cubes. In a medium size pan, place butter, celery, onion and all seasonings. Cook until onion and celery are tender. Pour the mixture over the bread cubes so they are moistened.
  2. You can use this to stuff your bird, or place in a casserole dish and bake at 250 until the mixture is heated all the way through.

 

Sour Cream Sugar Cookies

Ingredients
  • 1 c sugar
  • ¼ c shortening
  • ¼ c butter
  • 1 t vanilla
  • 1 egg
  • ½ c sour cream
  • Mix together then add:
  • 2⅔ c flour
  • ½ t baking powder
  • ½ t salt
Instructions
  1. Roll dough on a floured surface to ¼” thick.
  2. Use your favorite cookie cutter.
  3. Place on a baking sheet.
  4. Bake at 400 degrees for 8-10 minutes.

 

Pumpkin Roll

Ingredients
  • 3 eggs
  • 1 c white sugar
  • ⅔ c pumpkin
  • 1 tsp lemon juice(optional)
  • ¾ c flour
  • 1 t baking powder
  • ½ t salt
  • 2 t ground cinnamon
  • 2 t pumpkin pie spice
  • 1 c chopped walnuts
  • 8 oz pkg cream cheese
  • 2 T butter
  • 1½ cups confectioners' sugar
  • 1 t vanilla extract
Instructions
  1. Preheat oven to 350.
  2. Lightly grease a 10×15 inch jelly roll pan.
  3. In a large bowl, beat eggs until fluffy. Beat in sugar until fluffiness resumes. Stir in pumpkin and lemon juice. In a separate bowl, combine flour, baking powder, salt, cinnamon and pumpkin pie spice. Fold dry ingredients into pumpkin mixture. Spread in prepared pan; sprinkle with nuts.
  4. Bake in preheated oven 15 minutes. Sprinkle a kitchen towel with confectioner’s sugar. Turn cake out onto towel while still hot. Carefully roll cake in towel, long ends together, and let cool completely.
  5. Filling: In medium bowl, cream together cream cheese, butter and confectioners’ sugar. Stir in vanilla.
  6. Carefully unroll cooled cake and remove kitchen towel. Spread cake with filling and re-roll. Refrigerate until ready to serve.

 

Pumpkin Cheesecake Bars

Ingredients
  • 1 c flour
  • ⅓ c brown sugar
  • 5 T butter softened
  • ½ c chopped pecans or walnuts
  • 1 pkg cream cheese softened
  • ¾ c sugar
  • ½ c of pumpkin
  • 2 eggs lightly beaten
  • 1½ t cinnamon
  • 1 t allspice
  • 1 t vanilla
Instructions
  1. In a mixing bowl, combine flour and brown sugar.
  2. Cut in butter to make a crumb mixture.
  3. Stir in nuts and set aside ¾ c of the mixture for the topping.
  4. Press remaining mixture into the bottom of 8×8 pan.
  5. Bake at 350 for 15 minutes. Cool.
  6. Combine the pumpkin, cream cheese, sugar, eggs cinnamon, allspice, and vanilla in a mixing bowl and mix well.
  7. Pour mixture over the top.
  8. Sprinkle the reserved topping over that.
  9. Bake an additional 30-35 minutes

Ingredients
  • Crust
  • 2 c ground gingersnaps
  • 4-5 T melted butter
  • Filling
  • 1 16oz can pumpkin
  • 4 8 oz pkg softened cream cheese
  • 1 t vanilla
  • 3 eggs
  • 2 t cinnamon
  • 2 t nutmeg
  • ½ t ginger and ginger cloves
  • 1 c sugar
  • Topping(optional)
  • 1 c sour cream
  • 3 T sugar
  • 1 t vanilla
  • 1 T apple cider
Instructions
  1. Mix ground gingersnaps and butter and press into a 8” pie pan and form pie crust.
  2. Preheat the oven to 350.
  3. Mix all the pie filling ingredients together and pour into the pie shell. Bake for 1 hour. Remove from the oven and let cool for 15 minutes. Chill for 4 hours.
  4. Mix all the topping ingredients together and spread on top. Chill 1 more hour.

 

Fudge

Ingredients
  • 7 oz marshmallow creme
  • 1½ cups white sugar
  • ⅔ c evaporated milk
  • ¼ c butter
  • ¼ t salt
  • 2 cups milk chocolate chips
  • 1 c semisweet chocolate chips
  • ½ cup nuts(chopped)
  • 1 t vanilla extract
Instructions
  1. Line an 8×8 inch pan with aluminum foil. Set aside.
  2. In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter and salt.
  3. Bring to a full boil, and cook for 5 minutes, stirring constantly.
  4. Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth.
  5. Stir in nuts and vanilla.
  6. Pour into prepared pan.
  7. Chill in refrigerator for 2 hours, or until firm. T
  8. o add color, sprinkle with your favorite colored sugar.

Ingredients
  • 12-15 medium potatoes, peeled and boiled until cooked through
  • 8 oz cream cheese
  • 1 c sour cream
  • 1 T butter
  • salt and pepper to taste
Instructions
  1. In a large mixing bowl, place cooked potatoes in the bowl and begin to mix/mashing them.
  2. Whip in all remaining ingredients.
  3. Then transfer to a large casserole dish.
  4. Cover and bake at 350 for 30 minutes or until heated.

 

Citrus Sweet Potatoes

Ingredients
  • 4-5 large yam sweet potatoes(boil and remove skins)
  • ½ c fresh squeezed orange juice
  • ½ c heavy cream
  • ⅓ c brown sugar
  • ¼ c butter
  • ½ t nutmeg and cinnamon
  • 1½ t salt
  • Topping: Combine in a small bowl.
  • ⅓ c chopped pecans
  • 3 T butter melted
Instructions
  1. Preheat oven to 350.
  2. In a large mixing bowl mash your cooked yams.
  3. Add all remaining ingredients except topping ingredients.
  4. Mix until blended then pour into a 9×13 casserole dish.
  5. Pour topping over the top and bake, uncovered, for 30 minutes or until hot.

  • 1 8 oz pkg softened cream cheese
  • ⅓ c sugar
  • ½ c sour cream
  • 1 t vanilla
  • 1 4 oz container Cool Whip
  • 1 graham cracker crust
  • 1 bottle of caramel ice cream topping or your favorite topping
Instructions
  1. Mix all ingredients until blended well.
  2. Pour in graham cracker crust and chill for approx 4 hours.

Ingredients
  • ½ c granulated sugar
  • 1 large egg
  • 1½ t vanilla, divided
  • 2 c flour
  • 1 2 sticks butter
  • ¾ c confectioners sugar
  • 2 to 3 T heavy whipping cream or milk
Instructions
  1. Preheat oven to 350.
  2. Beat butter and granulated sugar in large bowl with electric mixer until light and fluffy, about 3 minutes. Beat in egg and 1 t vanilla. Beat in flour on low speed just until blended.
  3. Roll dough into 1-inch balls with lightly floured hands and arrange on ungreased cookie sheets, 2 inches apart. Gently flatten each ball with bottom of lightly floured flat glass. Bake 12 minutes or until cookie bottoms are lightly golden. Cool completely on wire rack.
  4. Mix confectioners sugar, heavy cream and remaining ½ teaspoon vanilla in small bowl until smooth; spread on cookies and decorate with colored sugars, sprinkles or tinted icing.

 

Peppermint Patties

Ingredients
  • 14 oz. sweetened condensed milk
  • 1 tbsp. peppermint extract
  • 6 c. confectioners sugar
  • Additional confectioners sugar
  • 1½ lbs. semi sweet chocolate chips, melted
Instructions
  1. In a large bowl, combine sweetened condensed milk, extract and sugar and mix until smooth.
  2. Turn out mixture onto surface well sprinkled with confectioners sugar.
  3. Shape into 1-inch balls and place them on wax paper.
  4. Flatten each ball into an 1½-inch patty.
  5. Let dry one hour.
  6. Flip patties over and allow second side to dry for an additional hour.
  7. Melt the chocolate chips in a double broiler and dip each pattie into the chocolate.
  8. Allow to dry on waxed paper.

 

Peanut Brittle

Ingredients
  • 2 cups raw peanuts
  • ¼ cup water
  • 1 teaspoon baking soda
  • 1 teaspoon butter
  • 1 cup granulated sugar
  • ½ cup white Karo syrup
Instructions
  1. Butter a cookie sheet and set aside.
  2. Mix water, sugar, peanuts, and syrup in a large sauce pan and bring to a boil.
  3. Cook on high heat until candy thermometer reaches hard crack stage (310°F). Remove from heat.
  4. Quickly stir in butter first and then add the baking soda and stir until dissolved.
  5. Pour the mixture on the buttered cookie sheet and allow to coll for at least an hour. Mixture will harden as it cools.
  6. Break into pieces and serve.

 

Jack Daniels Pecan Pie

Ingredients
  • 2 large eggs, lightly beaten
  • ¼ C. dart Karo syrup
  • ¼ C. Jack Daniels bourbon
  • ¾ C. sugar
  • ½ C. butter
  • 4 tsp. corn starch
  • 6 oz. semi-sweet chocolate
  • 1 bag pecan halves
Instructions
  1. Mix together the eggs and Karo and slowly add sugar and corn starch mixing thoroughly.
  2. Melt together the butter and chocolate using a double broiler.
  3. Combine all ingredients except for the pecans and pour into a 9 inch unbaked pie shell.
  4. Arrange the pecan halves over the top. Bake at 350 for 1 hour.
  5. Pie will set up and get firm as it cools.
