Ingredients
- Crust
- 2 c ground gingersnaps
- 4-5 T melted butter
- Filling
- 1 16oz can pumpkin
- 4 8 oz pkg softened cream cheese
- 1 t vanilla
- 3 eggs
- 2 t cinnamon
- 2 t nutmeg
- ½ t ginger and ginger cloves
- 1 c sugar
- Topping(optional)
- 1 c sour cream
- 3 T sugar
- 1 t vanilla
- 1 T apple cider
Instructions
- Mix ground gingersnaps and butter and press into a 8” pie pan and form pie crust.
- Preheat the oven to 350.
- Mix all the pie filling ingredients together and pour into the pie shell. Bake for 1 hour. Remove from the oven and let cool for 15 minutes. Chill for 4 hours.
- Mix all the topping ingredients together and spread on top. Chill 1 more hour.
