Rhubarb Pie

Ingredients
  • 1½ cups sugar
  • 3 tablespoons flour
  • ½ teaspoon nutmeg
  • 1 tablespoon butter
  • 2 eggs
  • 3 cups rhubarb, chopped fine
Instructions
  1. Cream the butter and sugar together.
  2. Blend the flour and nutmeg into the creamed butter and beat until lump free.
  3. Add rhubarb pieces.
  4. Pour into an unbaked pie shell, top with strips of pastry.
  5. Bake at 425 for 10 minutes, reduce heat to 375 and continue to bake until filling thickens, About 30 more minutes.

  • 4 tbsp. flour
  • 4 tbsp. sugar
  • 2 tbsp. coco powder
  • 2 tbsp. oil
  • 2 tbsp. milk
Instructions
  1. Combine all ingredients in a microwave safe mug.
  2. Microwave on high for 2 minutes.

 

Lemon and Orange Shortbread

Ingredients
  • 1 C. flour
  • ½ C. cornstarch
  • ½ C. butter, softened
  • ¼ C. powdered sugar
  • ½ lemon rind, grated
  • ½ orange rind, grated
Instructions
  1. Cream the butter and sugar together.
  2. Combine remaining ingredients and mix into the butter mixture.
  3. Roll out into an 8 inch circle and place on a greased baking sheet.
  4. Prick the top all over with a fork and flute the edges.
  5. Cut into 12 wedges and sprinkle with additional powdered sugar.
  6. Allow to set in the refrigerator for at least 15 minutes.
  7. Bake at 325 for 35 minutes or until golden brown.
  8. Allow to cook for at least 5 minutes before turning out on a wire rack.

 

Apple Fritters

Ingredients
  • 2 eggs
  • 2 egg yolks
  • 4 tbsp. whole wheat and/or rye flour
  • 2 tsp. honey
  • ¼ tsp. cinnamon
  • 2 apples, peeled & coarsely chopped
  • 2 egg whites
  • Butter
  • Cinnamon
Instructions
  1. Beat eggs and egg yolks.
  2. Stir in flour, honey, cinnamon and apple pieces.
  3. Beat egg whites until stiff and fold into batter.
  4. Melt butter in medium hot skillet and drop batter by tablespoon into the butter.
  5. Cook to a golden brown on both sides.

 

Vanilla Pudding

Ingredients
  • 2 tsp. cornstarch
  • Dash of salt
  • 3 egg yolks, slightly beaten
  • ½ C. sugar
  • 26 oz. milk
  • 1 tsp. vanilla extract
Instructions
  1. In a large pot, combine the cornstarch, sugar, milk and salt and cook over medium heat until it thickens.
  2. In a small bowl, temper some of the milk mixture into the egg yolks until they have reached temperature.
  3. Combine milk mixture and egg mixture and mix together.
  4. Continue to cook for one more minute or until the pudding coats the back of a wooden spoon.
  5. Remove from heat and stir int he vanilla.
  6. Allow to cool before serving.

Ingredients
  • ¼ C. butter
  • 1 C. sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 2 C. flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 C. sour milk
  • 1 tsp. cinnamon
Instructions
  1. To sour the milk, add 1 tsp. of vinegar to the milk and let stand for a few moments.
  2. Preheat the oven to 350.
  3. Cream the butter and sugar together and add eggs and vanilla to the mixture.
  4. In a separate bowl, combine and mix all of the dry ingredients.
  5. mix the dry mixture and the sour milk alternately into the cream mixture and mix well.
  6. Pour half of the mixture into a greased loaf pan.
  7. Combine 1 tbsp. cinnamon and 3 tbsp. brown sugar and spread over the mixture in the loaf pan.
  8. Top with remaining mixture.
  9. Cut through the batter with a knife several times to swirl the cinnamon mixture throughout.
  10. Bake at 350 for 1 hour.

Banana Cream Pie

Ingredients
  • 9 inch premade pie shell, baked
  • 3 C. milk
  • ¾ C. sugar
  • ⅓ C. flour
  • ¼ tsp. salt
  • 3 egg yolks, slightly beaten
  • 2 tbsp. butter
  • 1 tsp. vanilla
  • 3 bananas
Instructions
  1. Scald the milk in a large saucepan.
  2. Gradually sir in the sugar, salt and flour into the scalded milk.
  3. Cook over medium heat until mixture thickens.
  4. Lightly beat the egg yolks in a small bowl and temper in small amounts of the scalded milk mixture.
  5. Once the egg yolks have reached the same temperature as the scalded milk, pout them into the milk and mix together.
  6. Continue to cook for an additional one to three minutes stirring continuously until the mixture coats the back of a wooden spoon.
  7. Remove from heat and stir in the butter and vanilla.
  8. Slice all three bananas in the bottom of the pie shell and pour mixture over the top.
  9. Refrigerate covered for several hours before serving.

 

Jack Daniels Pecan Pie

Ingredients
  • 2 large eggs, lightly beaten
  • ¼ C. dart Karo syrup
  • ¼ C. Jack Daniels bourbon
  • ¾ C. sugar
  • ½ C. butter
  • 4 tsp. corn starch
  • 6 oz. semi-sweet chocolate
  • 1 bag pecan halves
Instructions
  1. Mix together the eggs and Karo and slowly add sugar and corn starch mixing thoroughly.
  2. Melt together the butter and chocolate using a double broiler.
  3. Combine all ingredients except for the pecans and pour into a 9 inch unbaked pie shell.
  4. Arrange the pecan halves over the top. Bake at 350 for 1 hour.
  5. Pie will set up and get firm as it cools.

  • 3 eggs, lightly beaten
  • 1 tbsp. flour
  • 1 C. sugar
  • 1 C. white Karo syrup
  • 1 tbsp. butter

  • 1 unbaked pie crust
  • 1 C. pecans
Instructions
  1. Arrange pecans over the bottom of the crust to cover the entire crust.
  2. Combine remaining ingredients together and pour over the pecans.
  3. Bake at 350 for 45-60 minutes.

Ingredients
  • 1 C. white sugar
  • ¼ C. water
  • 12 oz. can evaporated milk
  • 5 ounce can sweetened condensed milk
  • 6 egg yolks
  • 1 tbsp vanilla extract
Instructions
  1. Preheat oven to 350
  2. In a heavy saucepan over medium heat, cook sugar and water, stirring constantly until the sugar melts and turns a light brown.
  3. Pour sugar into a flan pan or cake mold and tilting the pan to coat the bottom.
  4. Set to the side while you prepare the flan.
  5. In a large bowl or blender, whisk together the remaining ingredients.
  6. Tap the mixture on the counter top to remove any bubbles and pour over the sugar mixture.
  7. Place a towel in the bottom of a roasting pan.
  8. Place baking dish on towel, inside roasting pan, and place roasting pan on oven rack.
  9. Fill roasting pan with water to reach halfway up the sides of the baking dish.
  10. Bake for 45 to 50 minutes or until a sharp knife comes out clean
  11. Run a knife around the edges of the pan and invert the flan onto a serving platter or large plate.
  12. Refrigerate overnight before serving.

Ingredients
  • 4½ c. flour
  • 2½ c. brown sugar
  • 1 c. butter, softened
  • 3 tsp. baking powder
  • 3 tsp. cinnamon
  • 2 tsp. ground ginger
  • 2 tsp. ground nutmeg
  • 1½ tsp. vanilla
  • 1 tsp. salt
  • 2 lg. eggs
  • ¼ c. water
  • 3 c. shredded carrots
  • 1 c. raisins
  • 2⅔ c. coconut
  • 1 c. nuts
Instructions
  1. In large mixing bowl combine all ingredients and mix well.
  2. Drop by the spoonful on ungreased cookie sheet.
  3. Bake 350 degrees 20-25 minutes or until lightly browned.
  4. Allow to cool completely before frosting.

 

Eggnog Cake

Ingredients
  • ½ cup butter, softened
  • 1-1/4 cups sugar
  • 3 eggs
  • ½ teaspoon vanilla extract
  • ½ teaspoon rum extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup eggnog
  • FROSTING:
  • ¼ cup all-purpose flour
  • ¼ teaspoon salt
  • 1-1/2 cups eggnog
  • 1 cup butter, softened
  • 1-1/2 cups confectioners' sugar
  • 1-1/2 teaspoons vanilla extract
  • Red and green gel food coloring, optional
Instructions
  1. In a large bowl, cream butter and sugar until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Add Rum and Vanilla extract.
  4. In a seperate bowl, combine the remaining dry ingredients and gradually add to creamed mixture.
  5. Add eggnog and mix well.
  6. Pour into two 9-in. round baking pans coated with cooking spray.
  7. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to wire racks to cool completely.
  8. For frosting, put eggnog in a small saucepan over low heat.
  9. Gradually whisk in flour and salt and increase heat.
  10. Bring mixture to a boil while whisking continuously for 2 minutes and remove from heat.
  11. Allow mixture to cool to room temperature.
  12. In a large bowl, cream butter and sugar until light and fluffy and gradually beat in the eggnog mixture and vanilla until smooth.

 

Cherry Peach Cobbler

  • 1 can cherry pie filling
  • 1 can peach pie filling
  • ⅓ C. sugar
  • ½ tsp. cinnamon, ground
  • ¼ C. butter, melted
  • 1 can refrigerated biscuits
Instructions
  1. Preheat the oven for 400.
  2. In the bottom of a 9X13 inch casserole dish, combine and mix both cans of pie filling.
  3. In a bowl, combine and mix the sugar and cinnamon.
  4. cut each of the biscuits into fourths and coat in the melted butter.
  5. Dip each piece if buttered biscuit dough in the cinnamon and sugar and place on top of the pie filling.
  6. Bake at 400 for 10-20 minutes or until golden brown.

  • ½ tsp. cream of tartar

  1. Beat all ingredients at high speed for 7 to 10 minutes or until stiff.

Ingredients
  • 1¼ C. eggnog
  • 1 tbsp. gelatin
  • 1 tbsp. water
  • 3 egg yolks, beaten
  • 1 c. whipping cream
  • 1 tsp. vanilla
  • 1 pie shell
  • Nutmeg to taste
Instructions
  1. Heat eggnog.
  2. Dissolve gelatin in water and add to eggnog.
  3. Remove from heat and add beaten egg yolks.
  4. Cool. Whip cream until fluffy and add vanilla.
  5. Fold whipped cream into eggnog mixture.
  6. Pour mixture into pie shell and sprinkle with nutmeg.
  7. Refrigerate and serve the next day.
