Pumpkin Cheesecake Bars

Ingredients
  • 1 c flour
  • ⅓ c brown sugar
  • 5 T butter softened
  • ½ c chopped pecans or walnuts
  • 1 pkg cream cheese softened
  • ¾ c sugar
  • ½ c of pumpkin
  • 2 eggs lightly beaten
  • 1½ t cinnamon
  • 1 t allspice
  • 1 t vanilla
Instructions
  1. In a mixing bowl, combine flour and brown sugar.
  2. Cut in butter to make a crumb mixture.
  3. Stir in nuts and set aside ¾ c of the mixture for the topping.
  4. Press remaining mixture into the bottom of 8×8 pan.
  5. Bake at 350 for 15 minutes. Cool.
  6. Combine the pumpkin, cream cheese, sugar, eggs cinnamon, allspice, and vanilla in a mixing bowl and mix well.
  7. Pour mixture over the top.
  8. Sprinkle the reserved topping over that.
  9. Bake an additional 30-35 minutes

Ingredients
  • Crust
  • 2 c ground gingersnaps
  • 4-5 T melted butter
  • Filling
  • 1 16oz can pumpkin
  • 4 8 oz pkg softened cream cheese
  • 1 t vanilla
  • 3 eggs
  • 2 t cinnamon
  • 2 t nutmeg
  • ½ t ginger and ginger cloves
  • 1 c sugar
  • Topping(optional)
  • 1 c sour cream
  • 3 T sugar
  • 1 t vanilla
  • 1 T apple cider
Instructions
  1. Mix ground gingersnaps and butter and press into a 8” pie pan and form pie crust.
  2. Preheat the oven to 350.
  3. Mix all the pie filling ingredients together and pour into the pie shell. Bake for 1 hour. Remove from the oven and let cool for 15 minutes. Chill for 4 hours.
  4. Mix all the topping ingredients together and spread on top. Chill 1 more hour.

 

Pistachio Cheesecake

Ingredients
  • 18 Oreo cookies crushed
  • ¼ cup cold butter
  • 6 8 oz pkg cream cheese softened
  • 1 can sweetened condensed milk
  • 2 sm pkg instant pistachio pudding mix
  • 5 eggs
Instructions
  1. In a small bowl cut Oreos into butter until crumbly.
  2. Press onto the the bottom and 1-1/4 up the sides of the greased 10 inch springform pan.
  3. Bake at 400 for 10 minutes.
  4. In a large mixing bowl, beat cream cheese, milk and pudding mixes until smooth.
  5. Add eggs and beat on low speed just until combined.
  6. Pour over crust.
  7. Place pan on a baking sheet.
  8. Reduce heat to 350. Bake 55-60 minutes or until center is almost set.
  9. Cool on a wire rack for 10 minutes.
  10. Carefully run a knife around edge of pan to loosen.
  11. Cool 1 hour longer.
  12. Refrigerate overnight.
  13. Garnish with whipped cream and pistachios.

 

Pina Colada Wedge

Ingredients
  • 8 oz cream cheese softened
  • ⅓ c sugar
  • 2 T rum extract
  • 3½ cups cool whip thawed
  • 8¼ oz crushed pineapple juice
  • 2 cups flaked coconut angel
Instructions
  1. Beat cream cheese with sugar and rum until smooth.
  2. Fold in 2 cups of the whipped topping, pineapple with syrup and ⅔ of the coconut, spread in 8 inch layer pan lined with plastic wrap.
  3. Invert pan onto serving plate, remove pan and plastic wrap.
  4. Spread with remaining whipped topping and sprinkle with remaining coconut.
  5. Freeze until firm, about 2 hours.
  6. Cut into wedges Garnish with pineapples and cherries if desired.

Ingredients
  • 2 c graham cracker crumbs
  • 4 c powdered sugar
  • 1 c flaked coconut
  • 1 c butter, softened
  • 1 t vanilla
  • 1 c creamy peanut butter
Instructions
  1. Mix graham cracker, powdered sugar and coconut together.
  2. Add butter, vanilla, and peanut butter until combined.
  3. Roll or press mixture into 1-inch balls.

 

Oreo Balls

Ingredients
  • 16 oz Oreo cookies crushed
  • 8 oz cream cheese softened
  • 24 oz white chocolate bark
  • 24 oz chocolate bark
Instructions
  1. Using a blender or hand held mixer, mix Oreos and cream cheese together.
  2. Roll into walnut size balls. Chill for an hour.
  3. Melt approximately ¾ package of white almond bark.
  4. Stick a toothpick in an Oreo ball and dip it in the melted white almond bark. Allow to harden on wax paper. Takes about 15 minute.
  5. While waiting, melt about ¼ package of chocolate almond bark.
  6. When Oreo balls are no longer sticky to the touch, decorate with drizzles of chocolate and white almond bark.
  7. I just use a sandwich bag with a tiny hole cut in one corner to drizzle the almond bark.

 

Nutella Brownies

Ingredients
  • ½ c flour
  • ¼ t salt
  • 2 egg
  • 1 c Nutella
  • ½ c brown sugar
  • 1 t vanilla extract
  • ½ c unsalted butter (melted)
Instructions
  1. Preheat the oven to 325.
  2. Line the bottom of a 8 inch square cake pan with parchment paper, letting the paper extend over two opposite sides. Butter the two other sides.
  3. Combine the flour and salt in a medium bowl and set aside.
  4. In another bowl, beat the eggs, hazelnut spread, brown sugar and vanilla extract with an electric mixer until smooth, about 2 minutes. With the mixer on low speed, add the flour mixture, alternating with the melted butter.
  5. Scrape the batter into the cake pan. Bake until a toothpick inserted in the center comes out with a few crumbs attached (not completely clean), 35 to 40 minutes.
  6. Cool in the pan for about 2 hours. Unmold and cut into squares.
  7. Serve warm or at room temperature.

Ingredients
  • 12 oz vanilla wafers(24)
  • 2 8 oz cream cheese
  • ¾ cup white sugar
  • 2 eggs
  • 1 T lemon juice or 1 t vanilla
  • 21 oz cherry pie filling
Instructions
  1. Preheat oven to 350.
  2. Line muffin tin with paper liners and spray with Pam.
  3. Place 1 wafer in each liner.
  4. Cream together with an electric mixer the cream cheese, sugar, eggs and lemon or vanilla. Fill each muffin liner ½ full with this mixture.
  5. Bake at 350 for 15 minutes. Cool and then top with a teaspoonful of cherry (or any other flavor) pie filling.
  6. These can be frozen, without the topping, for later use.

 

Lemonade Pie

Ingredients
  • 1 graham cracker crust(9 inch prepared)
  • 1 qt vanilla ice cream(softened)
  • 6 oz frozen lemonade concentrate or pink lemonade
  • 8 oz frozen whipped topping(thawed)
Instructions
  1. Preheat oven to 350.
  2. Bake crust in oven for 8 to 10 minutes until light brown. Allow to cool.
  3. In a large bowl, mix until creamy the ice cream, lemonade and whipped topping.
  4. Spread mixture into pie crust, then place in freezer for 20 minutes.
  5. Serve pie after it has set.

 

Lemon Pineapple Cake

Ingredients
  • 18¼ oz lemon cake mix
  • 6 egg whites
  • ⅓ c applesauce
  • 3½ oz instant vanilla pudding mix
  • 15 oz crushed pineapple with juice
  • 16 oz frozen whipped topping thawed
Instructions
  1. Prepare cake mix as directed, except substitute egg whites for eggs and applesauce for oil.
  2. Bake in a 9×13 inch pan as directed.
  3. Remove from oven and poke holes in the cake with a fork.
  4. Pour pineapple over cake as soon as your done.
  5. Cool.
  6. Frosting: Prepare instant pudding as directed. Fold in whipped topping. Let sit 10 minutes. Spread over cake.

 

Jello Dessert With Pretzel Crust

Ingredients
  • 3 handfuls of small pretzels (crumbled)
  • ½ c sugar
  • ½ c melted butter
  • (double the recipe for a thicker crust)
  • Center layer;
  • ¼ c sugar
  • 8 oz softened cream cheese
  • 8 oz cool whip
  • Top layer;
  • 1 sm pkg of your favorite jello
  • I usually follow the fruit recipe and add fruit.
  • orange flavor & add mandarin oranges
  • strawberry banana flavor & add fresh strawberries
  • raspberry flavor and add fresh raspberries
Instructions
  1. Crust; Take your crumbled pretzels, butter, and sugar and mix well. In a buttered 13 × 9 pan, press the mixture in the bottom of the pan to form a crust. Bake at 350 for 10 minutes. Let cool.
  2. Center layer; Mix your sugar and cream cheese together. Then fold in the cool whip. Place mixture over the pretzel crust.
  3. Top layer; Take your favorite package of jello and follow the recipe on the package. Remember to follow the fruit recipe if you choose to add fruit. Pour this mixture over the center layer. Cover and refrigerate for 3-4 hour until the jello is set.

Ingredients
  • 7 oz marshmallow creme
  • 1½ cups white sugar
  • ⅔ c evaporated milk
  • ¼ c butter
  • ¼ t salt
  • 2 cups milk chocolate chips
  • 1 c semisweet chocolate chips
  • ½ cup nuts(chopped)
  • 1 t vanilla extract
Instructions
  1. Line an 8×8 inch pan with aluminum foil. Set aside.
  2. In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter and salt.
  3. Bring to a full boil, and cook for 5 minutes, stirring constantly.
  4. Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth.
  5. Stir in nuts and vanilla.
  6. Pour into prepared pan.
  7. Chill in refrigerator for 2 hours, or until firm. T
  8. o add color, sprinkle with your favorite colored sugar.

 

Fruit Pizza

Ingredients
  • 1 pkg refrigerated sugar cookie mix, sliced.
  • 1 8 oz pkg cream cheese, softened
  • ½ cup powdered sugar
  • If the mixture is too thick, take the juice from a can of pineapple to thin.
  • 4 cups assorted cut-up fruit(kiwi, strawberries, raspberries, blueberries, blackberries, sliced peaches, drained can of mandarin oranges, or canned pineapple)or any of your favorites.
  • 1 pkg Danish Dessert; any flavor (prepared and cool, don't allow to set)
Instructions
  1. Preheat oven to 350.
  2. Line a 12-inch pizza pan with foil; spray with cooking spray.
  3. Arrange cookie dough slices in single layer on prepared pan; press together to form crust.
  4. Bake 11-15 minutes until done, then cool completely. Invert onto a 12” serving platter and carefully remove foil. Turn crust over.
  5. Beat cream cheese, sugar and fruit juice with mixer until well blended. Spread over crust.
  6. Top with your favorite fruits, and take your Danish Dessert and pour over the pizza like a glaze. Refrigerate 2 hours.

  • 2 eggs
  • 1½ c milk
  • 1 flour
  • ¼ t salt
  • ¼ t sugar
  • 1 t butter (browned butter is best)
  • 1 t vanilla (optional)
Instructions
  1. Mix all ingredients well. Cook in a lightly greased omelet pan.
  2. Serve with your favorite toppings.
