Ingredients
- 12 oz vanilla wafers(24)
- 2 8 oz cream cheese
- ¾ cup white sugar
- 2 eggs
- 1 T lemon juice or 1 t vanilla
- 21 oz cherry pie filling
Instructions
- Preheat oven to 350.
- Line muffin tin with paper liners and spray with Pam.
- Place 1 wafer in each liner.
- Cream together with an electric mixer the cream cheese, sugar, eggs and lemon or vanilla. Fill each muffin liner ½ full with this mixture.
- Bake at 350 for 15 minutes. Cool and then top with a teaspoonful of cherry (or any other flavor) pie filling.
- These can be frozen, without the topping, for later use.
