Lemon Squares

Ingredients
  • 1 C. flour
  • ½ C. butter, softened
  • ¼ C. confectioners sugar
  • 2 eggs
  • 1 C. granulated sugar
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • 2 tbsp. lemon juice
Instructions
  1. Heat oven to 350F.
  2. Mix together the butter, flour and confectioners sugar.
  3. Press mixture in an ungreased 8X8X2 pan building up a ½ inch edge.
  4. Bake for 20 minutes.
  5. Beat remaining ingredients until light and fluffy.
  6. Pour mixture over hot crust.
  7. Bake for an additional 25 minutes.
  8. Cool and cut into squares.

 

Russian Teacakes

Ingredients
  • 1 cup butter (do not use margarine)
  • ½ C. powdered sugar
  • 1 tsp. vanilla
  • 2¼ C. flour
  • ¼ tsp. salt
  • ¾ C. chopped nuts
Instructions
  1. Mix butter, sugar and vanilla thoroughly.
  2. Stir flour and salt together and blemd into the butter mixture.
  3. Mix in nuts.
  4. Chill the dough.
  5. Heat the oven to 400F.
  6. Roll dough into 1 inch balls.
  7. Place on ungreased baking sheet.
  8. Bake for 10-12 minutes or until set but not browned.
  9. While still warm, roll in powdered sugar.
  10. Cool and roll in powdered sugar for a second time.

 

Chocolate Crinkle Cookies

Ingredients
  • ½ C. vegetable oil
  • 4 squares unsweetened chocolate, melted
  • 2 C. granulated sugar
  • 4 eggs
  • 2 tsp. vanilla
  • 2 C. flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 1 C. confectioners sugar
Instructions
  1. Mix oil, chocolate and granulated sugar together.
  2. Blend in one egg at a time until well mixed.
  3. Add vanilla.
  4. Sift flour, baking powder and salt into mixture.
  5. Chill for several hours or overnight.
  6. Preheat oven to 350F.
  7. Drop teaspoons of dough into confectioners sugar and roll in the sugar.
  8. shape dough into balls and place about 2 inches apart on a greased baking sheet.
  9. Bake for 10-12 minutes. Do not over bake.
  10. Makes about 6 doz. cookies.

 

Black Forest Flan

Ingredients
  • 1 bx. devil's food cake mix
  • ½ C. vegetable oil
  • 1¼ C. water
  • 1 tsp. vanilla butter and nut flavoring
  • 4 extra large eggs
  • 3 oz. box instant chocolate pudding mix
  • 8 oz. pkg. cream cheese, softened
  • 1½ C. confectioners sugar
  • 1 tsp. vanilla
  • 2 cans cherry pie filling
Instructions
  1. Preheat oven to 350F.
  2. Grease the bottom of two flan pans.
  3. In a large mixing bowl, blend the cake mix, oil, water, flavoring, eggs and pudding mix.
  4. Beat on medium speed for 2 minutes.
  5. Divide batter evenly between the 2 pans.
  6. Bake for 25-30 minutes or until cakes spring back when touched lightly.
  7. Let rest on cooling racks for 15 minutes and then invert and lift off the pans.
  8. Cool thoroughly and place on a serving plate.
  9. Whip cream cheese, sugar and vanilla until smooth.
  10. Spread half of the topping over each of the cakes and top one can of pie filling on each.
  11. Each flan serves 6-8 people.

 

Orange Drop Cookies

Ingredients
  • ⅔ C. shortening
  • ¾ C. sugar
  • 1 egg
  • ½ C. undiluted frozen orange juice concentrate, thawed
  • 2 tbsp. grated orange rind
  • 2 C. flour
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt.
Instructions
  1. Heat oven to 400F.
  2. Mix shortening, sugar and egg thoroughly.
  3. Stir in orange juice and rind.
  4. Stir dry ingredients together and blend in.
  5. Drop rounded teaspoons of dough about 2 inches apart on an ungreased baking sheet.
  6. Bake for 8-10 minutes or until edges begin to brown.
  7. Frost with icing.
  8. to make the orange butter icing, combine 2½ tbsp. softened butter, 1½ C. powdered sugar and 2 tbsp. orange juice.

 

Ginger Creams

Ingredients
  • ⅓ C. shortening
  • ½ C. sugar
  • 1 egg
  • ½ C. molasses
  • ½ C. water
  • 2 C. all purpose flour
  • ½ tsp. salt
  • ½ tsp. baking soda
  • 1 tsp. ginger
  • ½ tsp. nutmeg
  • ½ tsp. cloves
  • ½ tsp. cinnamon
  • Lemon Icing
Instructions
  1. Mix shortening, sugar, egg, molasses and water and mix thoroughly.
  2. Stir dry ingredients together and blend in.
  3. Chill dough.
  4. Heat oven to 400F
  5. Drop dough by teaspoon about 2 inches apart onto a lightly greased baking sheet.
  6. Bake for approximately 8 minutes or until almost no imprint is left when lightly touched.
  7. While slightly warm, frost with lemon icing.
  8. To prepare the lemon icing, mix together 2½ tbsp. softened butter, 1½ C. powdered sugar and 2 tbsp. lemon juice.

Ingredients
  • 4 oz. sugar
  • 5 egg yolks
  • ½ tsp. vanilla
  • 5 egg whites
  • ½ tsp. cream of tartar
  • 3 oz. superfine or powdered sugar
  • ½ C. flour
Instructions
  1. Preheat oven to 375F.
  2. Cream the sugar and egg yolks together.
  3. Add the vanilla and beat until light and creamy.
  4. Beat the egg whites, gradually adding the sugar until stiff.
  5. Fold into egg yolk mixture alternating egg whites and flour.
  6. Put mixture into a pastry bag fitted with a medium plain tube.
  7. Pipe mixture onto a greased and floured baking sheet forming 3 inch fingers.
  8. Bake 8-10 minutes and cool on rack.

 

Banana Chocolate Chip Cake

Ingredients
  • 2½ C. all purpose flour.
  • 2 tsp. baking soda
  • ¼ tsp. salt
  • 1 C. canola oil
  • 2 C. sugar
  • 4 large eggs
  • 2 C. mashed bananas, ripe works best
  • 1 tsp. vanilla
  • 1⅓ C. semisweet chocolate chips
  • ¾ C. toasted walnuts (optional)
Instructions
  1. Preheat oven to 350F
  2. Line two 9X5 metal loaf pans with greased parchment paper.
  3. In a bowl, combine flour, baking soda and salt.
  4. In a large bowl, using an electric mixer, beat oil and sugar. Add eggs to mixture one at a time, beating well after each addition.
  5. Add bananas and vanilla and beat well.
  6. Combine both the wet and dry mixtures and combine until smooth.
  7. Stir in chocolate chips and walnuts if using them.
  8. Spread batter evenly in prepared pans.
  9. Bake in a preheated oven for 60 to 65 minutes.
  10. Let cakes cool for 15 minutes before removing from the pans.

Ingredients
  • 1 package sugar cookie dough
  • 1 16oz. pkg. cream cheese, softened
  • 1 tub frozen whipped topping, thawed
  • ½ C. powdered sugar
  • 1 tsp. vanilla
  • Strawberries
  • Kiwi
  • Blueberries
  • 1 can Peach slices in syrup
Instructions
  1. Preheat the oven to 325
  2. Place one cube of cookie dough in the bottom of each cup of a muffin pan.
  3. Bake for 10-12 minutes. Remove from the pan and allow to cool completely.
  4. In a large bowl, combine cream cheese, sugar and vanilla.
  5. Wash, peel and slice the fruit into small chunks.
  6. Spoon the cream cheese mixture onto the cookie dough, top with fruit and whipped topping.

Ingredients
  • ¼ C. butter
  • ½ C. sugar
  • ½ C. brown sugar
  • ½ C. light Karo syrup
  • ½ C. sweetened condensed milk
Instructions
  1. Combine all ingredients in a large microwave safe dish.
  2. Cook for 6 minutes, stirring every two minutes.
  3. Stir and pour in a shallow, lightly greased casserole dish.
  4. Allow to cool completely.
  5. Cut and wrap individual pieces in waxed paper.
  6. Store in an airtight container.

Ingredients
  • 1 cup confectioners' sugar
  • 2 t milk
  • 2 t light corn syrup
  • ¼ t almond extract
  • food coloring(assorted)
Instructions
  1. In a small bowl, stir together confectioners’ sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
  2. Divide into separate bowls, and add food coloring to each to desired intensity. Dip cookies, or paint them with a brush.

Ingredients
  • 2 cans refrigerated biscuit mix(any)
  • ½ c powdered sugar in a small bowl(for powdered donuts)
  • ½ c sugar in a small bowl(for sugar donuts)
  • 1 canister of chocolate frosting, vanilla, or your favorite
  • sprinkles(assorted)
  • oil
Instructions
  1. In a large frying pan, pour enough oil to shallow fry a few donuts at a time.
  2. Open biscuits and pull 1 off at a time.
  3. Shape it in your hand creating a circle in the middle, and place in hot oil.
  4. As it browns on 1 side, flip it with some tongs and brown the other side.
  5. Place on a wire rack to cool slightly.
  6. Your family or guests can start decorating to their desire.

 

Pumpkin Roll

Ingredients
  • 3 eggs
  • 1 c white sugar
  • ⅔ c pumpkin
  • 1 tsp lemon juice(optional)
  • ¾ c flour
  • 1 t baking powder
  • ½ t salt
  • 2 t ground cinnamon
  • 2 t pumpkin pie spice
  • 1 c chopped walnuts
  • 8 oz pkg cream cheese
  • 2 T butter
  • 1½ cups confectioners' sugar
  • 1 t vanilla extract
Instructions
  1. Preheat oven to 350.
  2. Lightly grease a 10×15 inch jelly roll pan.
  3. In a large bowl, beat eggs until fluffy. Beat in sugar until fluffiness resumes. Stir in pumpkin and lemon juice. In a separate bowl, combine flour, baking powder, salt, cinnamon and pumpkin pie spice. Fold dry ingredients into pumpkin mixture. Spread in prepared pan; sprinkle with nuts.
  4. Bake in preheated oven 15 minutes. Sprinkle a kitchen towel with confectioner’s sugar. Turn cake out onto towel while still hot. Carefully roll cake in towel, long ends together, and let cool completely.
  5. Filling: In medium bowl, cream together cream cheese, butter and confectioners’ sugar. Stir in vanilla.
  6. Carefully unroll cooled cake and remove kitchen towel. Spread cake with filling and re-roll. Refrigerate until ready to serve.
