Black and White Chocolate Chunck Cookies

Ingredients
  • ¼ pound (1 stick) butter, softened
  • ½ cup light brown sugar, packed
  • ½ cup granulated sugar
  • 1 tsp. vanilla extract
  • ¼ tsp. salt
  • ⅓ cup unsweetened cocoa powder
  • 1 egg
  • ½ tsp. baking soda
  • 1 cup all purpose flour
  • 6 oz white chocolate chips
  • 1 cup coarsely chopped nuts
Instructions
  1. preheat oven to 350.
  2. Cream butter and both sugars together until fluffy.
  3. Mix in vanilla and salt.
  4. Add cocoa and egg, and mix until well blended.
  5. Mix in soda and flour until incorporated. Stir in white chocolate.
  6. Drop 2 tablespoons of batter onto greased baking sheets about 2 inches apart.
  7. Bake for 10 to 12 minutes (tops will look set, but the cookies will be very soft. **do not over bake; they will firm as they cool)
  8. If baking two sheets in the same oven, rotate half way through baking time.
  9. Remove from oven and let sit for 10 minutes
  10. Store in an air tight container at room temp, or freeze for up to several weeks.
  11. Makes about 40 cookies.

Ingredients
  • 4 oz. unsweetened chocolate
  • ⅔ C. shortening
  • 2 C. sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 1¼ C. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 C. chopped nuts
  • Frosting:
  • 3 tbsp. butter, softened
  • 3 oz. unsweetened chocolate
  • 2 C. confectioners sugar
  • ¼ tsp. salt
  • ⅓ C. milk
  • 1 tsp. vanilla
Instructions
  1. Preheat the oven to 350.
  2. Grease the bottom and sides of a 13x9x2 baking dish.
  3. Melt chocolate and shortening in a large saucepan over medium heat.
  4. Remove from heat.
  5. Mix in sugar, eggs and vanilla.
  6. Spread in pan.
  7. Bake at 350 for 30 minutes or until brownies start to pull away from the sides of the dish.
  8. Do not over bake.
  9. Cool slightly and cut into bars about 2x1-1/2 inches.(should make about 32 bars)
  10. frost before serving.

 

Chocolate Filled Bundt Cake

Ingredients
  • Filling:
  • ⅓ C. sugar
  • 1 tbsp. cornstarch
  • 2 tbsp. butter
  • ¼ C. milk
  • ½ tsp. vanilla
  • 8 oz. cream cheese
  • 1 C. chocolate chips
  • 1 egg
  • Cake:
  • 1 yellow cake mix (pudding kind)
  • ¾ C. water
  • ⅓ C. oil
  • 3 eggs
Instructions
  1. To prepare cake mix, combine all ingredients and beat on high for 2 minutes.
  2. Pour half the batter into a well greased and floured bundt pan.
  3. Prepare filling.
  4. Melt chocolate chips over hot water.
  5. In a small bowl, combine all filling ingredients and beat until smooth.
  6. Drop by spoonfuls onto cake batter in Bundt pan.
  7. Do not let the filling touch the sides of the pan.
  8. Pour remaining batter on top of filling.
  9. Bake at 350 for 45-55 minutes or until toothpick comes out clean.
  10. Allow to cool for 15 minutes before removing from pan.
  11. Glaze with chocolate icing.

Ingredients
  • ⅔ c. Minute Rice
  • 2¾ c. milk
  • ⅓ c. sugar
  • 1 tbsp. butter
  • ½ tsp. salt
  • ½ tsp. vanilla
  • ¼ tsp. nutmeg
  • Cinnamon
  • ½ c. raisins (optional)
Instructions
  1. Preheat the oven to 350
  2. Combine all ingredients in a 1 quart baking dish.
  3. Bake in oven and 350 for 1 hour, stirring once after 15 minutes and again after it's done.
  4. Sprinkle with cinnamon.
  5. Pudding will thicken as it stands.

Ingredients
  • 5½ Tbsp butter
  • 4½ Tbsp unsweetened bakers cocoa
  • 2 cups sifted confectioners’ sugar
  • ½ tsp vanilla
  • dash of salt
  • 4 tsp milk
Instructions
  1. Melt 2 Tablespoons butter over medium low heat.
  2. Stir in cocoa, remove from heat and allow to cool.
  3. Cream remaining butter and sugar together.
  4. Add vanilla, salt and cooled chocolate and mix well.
  5. Add milk slowly until mixture reached the right consistency.

Ingredients
  • 1 unbaked pie crust
  • 1 lb sweet potatoes, cooked and peeled
  • ¼ cup butter
  • 2 eggs
  • 14 oz. sweetened condensed milk
  • 1 tsp. vanilla
  • 1 tsp. grated orange rind
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • ¼ tsp. salt
Instructions
  1. Preheat oven to 350 degrees F.
  2. In bowl, beat sweet potatoes and butter together until smooth and lump free.
  3. Add milk, orange rind, vanilla, cinnamon, nutmeg, salt and eggs and mix together well.
  4. Pour into pie shell and bake 30 minutes or until golden brown cool.
  5. And top with whipped cream.

No-Bake Chocolate Kahlua Christmas Balls

Ingredients
  • 1 cup semi-sweet chocolate chips
  • 1 can (5 ounces) evaporated milk
  • 1¼ cups vanilla cookie crumbs
  • 1¼ cups ginger snap cookie crumbs
  • ½ cup confectioners' sugar, sifted
  • ½ cup finely chopped walnuts
  • ⅓ cup Kahlúa liqueur
  • 1 teaspoon pure vanilla extract
  • 2 cups shredded coconut
Instructions
  1. Melt the chocolate chips in evaporated milk in a pot over low heat, stirring constantly, until well blended.
  2. Remove from the heat and set aside to cool for about 30 minutes.
  3. Combine all remaining ingredients except the coconut; stir into the chocolate mixture, blending well.
  4. Shape the mixture into 1- to 1½-inch balls (if the dough is too moist, add up to ⅓ cup more cookie crumbs), then roll in coconut.
  5. Let air-dry for 2 hours on waxed paper.
  6. Transfer to an airtight container; store in refrigerator.

  • 1 unbaked pie shell
  • 3 large eggs
  • ½ C. sugar
  • ½ tsp. salt
  • ½ tsp. nutmeg
  • 2⅔ C. milk
  • 1 tsp. vanilla extract
Instructions
  1. Preheat the oven to 350
  2. Beat eggs slightly and add remaining ingredients except for nutmeg.
  3. Pour into unbaked pie shell.
  4. Bake 35-40 minutes.
  5. Remove from oven and allow to cool completely.
  6. Top with ground nutmeg.

 

Poor Mans Pie

Ingredients
  • 1 unbaked pie shell
  • 1 C. brown sugar
  • ⅓ C. flour
  • ¼ tsp. salt
  • 1½ C. cream or half and half
  • 3 tbsp. apple cider vinegar
  • 3 tbsp. butter, room temperature
  • 1 tsp. cinnamon
Instructions
  1. Preheat oven to 400
  2. Place pie crust into a pie pan and prick the bottom with a fork.
  3. Bake for 10 minutes and set aside.
  4. Reduce heat to 350.
  5. Mix together brown sugar, flour and salt.
  6. Add remaining ingredients and mix well.
  7. Dot the top with butter.
  8. Bake for 50-60 minutes ur until golden brown spots form on the top of the pie.
  9. Cool completely, filling will firm up as it cools.

Ingredients
  • 3 C. flour
  • 2 tsp. baking powder
  • ¼ tsp. baking soda
  • 3 tbsp. milk
  • ½ tsp. salt
  • ¾ C. butter
  • ½ C. instant cocoa
  • 1 C. radishes, shredded and drained
  • 1½ C. sugar
  • 1 tsp. vanilla
  • 4 eggs
  • ½ C. sour cream
  • 1 tsp. orange peel, finely grated
Instructions
  1. Grease and flour a 9-10 inch cake pan.
  2. An a large bowl, cream the butter and sugar together.
  3. Add vanilla to the butter and mix until fluffy.
  4. Add one egg at a time beating after each addition.
  5. In a separate bowl, combine the flour, baking powder and baking soda and salt. Mix well.
  6. In another bowl, combine the remaining ingredients except for the cocoa.
  7. Combine all three mixtures together and mix until well blended.
  8. Retain one cup of the cake mix and pour the remaining into the cake pan.
  9. Mix the cocoa mix into the reserved batter and mix well. Pour over the top of the cake.
  10. Bake at 350 for 50-60 minutes.
  11. Serve with a frosting made of 1 C. powdered sugar, 4 tsp. milk and vanilla to taste drizzled over the top.

 

Butterscotch Brownies

Ingredients
  • ¼ C. butter
  • 1 C. packed brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • ¾ C. flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1 C. walnuts, chopped
  • Powdered sugar
Instructions
  1. Preheat oven to 350F.
  2. Grease and flour an 8X8 baking pan.
  3. In a saucepan, melt butter and stir in brown sugar until dissolved. Allow to cool slightly.
  4. Pour butter and sugar mixture into a mixing bowl and add egg and vanilla. Mix well.
  5. Sift flour into bowl and add baking powder and salt. Mix well.
  6. Stir in walnuts.
  7. Pour mixture into the prepared baking dish and bake for 25 minutes.
  8. Remove from oven and allow to cool.
  9. Dust with powdered sugar, cut into bars and serve.

 

Zucchini Cake

Ingredients
  • Cake:
  • 1½ C. flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ½ tsp. baking powder
  • 2 tsp. cinnamon
  • 3 large eggs
  • 1¼ C. vegetable oil
  • 1 C. granulated sugar
  • 1 C. packed brown sugar
  • 2 tsp. vanilla
  • 2 C. shredded zucchini, lightly packed
  • 1 C. chopped walnuts
  • Glaze:
  • 1 C. confectioner's sugar
  • 2 tbsp. hot water
Instructions
  1. Preheat oven to 325 degrees. Butter Frankfort Ring mold.
  2. Sift together the dry ingredients.
  3. Add eggs, oil, sugars, and vanilla. Stir until combined.
  4. Add zucchini and walnuts, and mix well.
  5. Pour batter into prepared pan.
  6. Bake 50-60 minutes, or until tester inserted in the middle of cake comes out clean.
  7. Allow cake to cool in pan 5-10 minutes, then remove from pan to finish cooling on wire rack.
  8. Sprinkle with powdered sugar or glaze.
  9. Glaze: While beating, add water to sugar a few drops at a time until the glaze is just thin enough
  10. to pour. Pour it over the cake and let it dribble down the sides.

 

Lemon Citrus Savarin Ring Cake

Lemon Citrus Savarin Ring Cake

Ingredients
  • Cake:
  • 1 (18.25 oz) yellow cake mix
  • ½ C. butter, softened
  • 3 eggs
  • ⅔ C. orange juice concentrate (undiluted)
  • 1 tsp. lemon zest
  • scant ¼ C. powdered sugar, for garnish
  • Lemon Glaze:
  • ⅓ C. fresh lemon juice
  • ½ C. honey
Instructions
  1. Combine lemon juice and honey in small saucepan. Warm over low while stirring until blended.
  2. Preheat oven to 350 degrees.
  3. In large bowl, combine cake mix, butter, eggs, orange juice and lemon zest.
  4. Beat on low speed to blend, then beat on medium for 2 minutes.
  5. Pour batter into greased and floured Vienna Ring pan.
  6. Bake for 45-50 minutes, or when cake tester comes out clean.
  7. Remove cake from oven and let cool for 10 minutes in pan, then turn out on platter.
  8. While still lukewarm, poke holes over surface with toothpick and spoon Lemon Glaze over.
  9. When glaze has soaked into cake, sift powdered sugar lightly over for decoration.
  10. Before serving, fill ring with fresh strawberries, orange segments, green grapes and red grapes.

Ingredients
  • Filling:
  • 8-oz package cream cheese, softened
  • ⅓ C. granulated sugar
  • 1 large egg
  • 1 C. sweetened coconut flakes
  • ⅛ tsp. almond extract (optional)
  • Chocolate batter:
  • 1½ C. all-purpose flour
  • 1 C. granulated sugar
  • ¼ C. baking cocoa
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 C. water
  • ⅓ C. vegetable oil
  • 1 tbsp. white vinegar
  • 1 tsp. vanilla extract
Instructions
  1. Preheat oven to 350 degrees and line muffin tins with paper cups.
  2. To make filling: Beat together cream cheese and sugar.
  3. When smooth, beat in egg.
  4. Stir in coconut and almond extact (if using). Set aside.
  5. Leftover filling can be refrigerated at least 1 week (for another batch later).
  6. To make batter: Stir together four, granulated sugar, baking cocoa, baking soda and salt.
  7. Add water, vegetable oil, white vinegar and vanilla extract.
  8. Fill paper cups a little less than half full.
  9. Top again with a spoonful of chocolate batter.
  10. Bake 25 minutes, or until done.
  11. Sift powdered sugar on tops.
  12. Makes 18 cupcakes.

 

Blueberry Ricotta Squares

Ingredients
  • Part 1:
  • 1 C. flour
  • ¾ C. sugar
  • 1¼ tsp. baking powder
  • ¼ tsp. salt
  • ⅓ C. milk
  • ¼ C. shortening
  • 1 egg
  • ½ tsp. vanilla
  • 1½ C. blueberries
  • Part 2:
  • 2 eggs
  • 1¼ C. ricotta cheese
  • 1¼ C. sugar
  • ¼ tsp. vanilla
Instructions
  1. Part 1: In a small mixer bowl, combine flour, ¾ C. sugar, baking powder and salt.
  2. Add milk, shortening, the 1 egg and vanilla.
  3. Beat with mixer on low speed until combined.
  4. Beat on mediium speed for 1 minute.
  5. Pour batter into greased 9x9x2 pan. Spread evenly.
  6. Sprinkle 1½ cups blueberries over batter.
  7. Part 2: In a medium mixing bowl, lightly beat eggs with a fork.
  8. Add ricotta cheese, sugar and vanilla. Beat until combined.
  9. Spoon ricotta mixture over blueberries and spread evenly.
  10. Bake in 350 degree oven
  11. Time: 55-60 minutes or until lightly golden and knife inserted near center comes out clean.
  12. Cool, cut into squares. Refrigerate.
