Ingredients
  • ½ lb. bacon, cooked and crumbled
  • 1½ C. Swiss cheese, shredded
  • 3 green onions, chopped
  • 1½ C. half and half (Can use milk)
  • 3 eggs, beaten
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ½ tsp. dry mustard
Instructions
  1. Saute green onions in butter and mix with bacon and Swiss cheese.
  2. Grease a 9x9 pie plate and layer bacon and cheese in the bottom.
  3. Combine remaining ingredients and pour over the top of the bacon and cheese.
  4. Bake at 375 for 45 minutes.

Ingredients
  • 4 pkg. frozen cauliflower
  • ½ C. onions, chopped
  • 2 cans cream of mushroom soup
  • 2 eggs, beaten
  • 1 C. mayonnaise
  • 1 C. cheese, grated
  • 1 C. mushrooms
Instructions
  1. Cook vegetables slightly to thaw.
  2. Mix sauce and layer between the vegetables.
  3. Bake at 350 for 1 hour.

Ingredients
  • 1 C. brown sugar
  • ½ C. butter, melted
  • 3 tsp. ground cinnamon, divided
  • 3 tart apples, peeled, cored and thinly sliced
  • ½ C. dried cranberries or raisins
  • 1 loaf French bread cut into 1 inch slices
  • 6 large eggs
  • 1½ C. milk
  • 1 tbsp. vanilla
Instructions
  1. Combine brown sugar, butter and 1 tsp. cinnamon in a 9X13 casserole dish.
  2. Add apples and cranberries or raisins and toss to coat well.
  3. Spread apple mixture evenly over the bottom of the dish.
  4. Arrange slices of bread on the top.
  5. Mix the eggs, milk, vanilla and remaining cinnamon.
  6. Pour the egg mixture over the bread making sure to get all of the bread covered.
  7. Cover and refrigerate for 4-24 hours.
  8. Bake covered at 375 for 40 minutes.
  9. Uncover and bake for an additional 5 minutes.
  10. Let stand for 5-10 minutes before serving.

Ingredients
  • 2½ C. croutons
  • 2 C. mild cheddar cheese
  • 2 lbs. Hormel Little Sizzlers
  • 4 eggs
  • ¾ tsp. dry mustard
  • 1 can cream of mushroom soup
  • 2½ C. milk
  • 1 small can mushrooms
Instructions
  1. Place croutons in a greased 9X13 casserole dish.
  2. Top with cheese.
  3. Cook sausage until brown and drain.
  4. Place sausage on cheese.
  5. Beat eggs, blend in soup and milk.
  6. Pour egg mixture over sausage.
  7. Bake at 300 for 1 hour 30 minutes.

  • 1 lb. ground sausage
  • 5 eggs, lightly beaten
  • 2 C. milk
  • 1 tsp. salt
  • 1 tsp. dry mustard
  • 2 slices bread, crushed and crumbled
  • 1 C. cheddar cheese, grated
Instructions
  1. Brown sausage in a skillet and drain off the fat.
  2. Mix all ingredients together and pour into a casserole dish.
  3. Bake at 350 for 45 minutes.
  4. Serves 6-8

Ingredients
  • 8 slices white bread
  • ¼ Lb. cubed ham
  • ⅛ Lb. cooked sausage
  • ⅛ Lb. cooked and crumbled bacon
  • 1 small can green chilies, diced
  • 2 C. sharp cheddar cheese, grated
  • 8 eggs
  • 2 C. milk
  • ½ tsp. dry mustard
  • ½ tsp. salt
  • ½ tsp. pepper
  • ½ tsp. Tabasco sauce
  • 1 tsp. garlic salt
Instructions
  1. Break the bread into small pieces and put in the bottom of a greased 9X13 casserole dish.
  2. Spread the meat over the bread and sprinkle with cheese.
  3. In a large bowl, combine the remaining ingredients and mix well.
  4. Pour the egg mixture over the meat and bread.
  5. Cover and allow to sit overnight in the refrigerator.
  6. Next morning, bake uncovered until the eggs have set.

 

Sausage Gravy

Ingredients
  • ½ pkg. sausage
  • 2 tbsp. butter
  • 2 tbsp. flour
  • 5 c. whole milk
  • 1½ tsp. salt
  • 1½ tsp. pepper
Instructions
  1. Cook sausage until done. Add butter and flour.
  2. Simmer for a few minutes on medium heat stirring frequently.
  3. Add milk, salt and pepper.
  4. Simmer over medium-high heat stirring constantly until you reach the desired thickness.
  5. Spoon gravy over biscuits and enjoy!

  • 1 c. flour
  • 1 tbsp. sugar
  • ½ tsp. salt
  • ½ tsp. baking soda
  • 1 egg
  • 1 c. buttermilk
  • 2 tbsp. melted butter
  • ½ tsp. vanilla
Instructions
  1. Mix all dry ingredients and blend in buttermilk, butter, and vanilla mixing all ingredients together well.
  2. Cook on lightly oiled griddle or fry pan.
  3. Turn pancakes when surface bubbles begin to break.

Ingredients
  • 3 c. self-rising flour, sifted
  • ½ c. butter, melted
  • ⅓ c. sugar
  • milk
  • 2 eggs
  • 1 tsp. baking powder
Instructions
  1. Preheat oven to 400°F degrees.
  2. Cut butter into the flour using your fingers until mixture resembles coarse crumbs. Stir in sugar, baking powder, and beaten eggs
  3. Add enough milk to form a sticky dough, turn out onto a lightly floured board and knead approximately 10 turns. Do not over-knead, as this will make the scones tough.
  4. Flatten to a circular shape, about 1½" in thickness and cut wedge shaped pieces. Arrange pieces 1 inch apart in a circle on a lightly greased pan. Brush tops with cream or beaten egg white and bake about 15 minutes or until golden.

  • 1 (9 inch) pie shell, baked
  • 6 eggs, beaten
  • 8 slices bacon, crisp cooked, drained & crumbled
  • 1 c. shredded cheddar cheese
  • 1¼ c. half & half
  • ½ tsp. salt
  • ⅛ tsp. pepper
Instructions
  1. Stir together bacon and cheese. Put in pie shell. Add remaining ingredients to beaten eggs. Beat until well blended. Pour over bacon and cheese mixture.
  2. Bake at 375 degrees for 35 to 40 minutes or until knife comes out clean.

  • 2 tsp. olive oil
  • 1 med. onion, minced
  • 2 cloves garlic, minced
  • 1 red or green bell pepper, seeded & minced
  • 2 (15½ oz.) cans corned beef hash
  • ¼ c. finely chopped fresh parsley
  • ¼ tsp. dried thyme
  • ¼ tsp. pepper
Instructions
  1. In 12" skillet, heat the oil over medium heat.
  2. Add onion, garlic and pepper; saute until softened.
  3. Stir in the other ingredients and cook over medium high heat until thoroughly heated.

  • 4 eggs
  • 1 can cheddar cheese soup
  • ½ c. light cream
  • 1 c. shredded cheddar cheese
  • ½ c. diced cooked ham
  • ½ c. cooked broccoli
  • 1 9" unbaked pie crust
Instructions
  1. In a medium bowl, beat eggs until fluffy.
  2. Add soup and cream; mix well.
  3. Sprinkle cheese, meat, and broccoli over unbaked pie crust.
  4. Follow with soup mixture.
  5. Bake for 50 minutes at 350°F

 

Hushpuppies

Ingredients
  • 1 c. plain white cornmeal
  • ½ c. plain flour
  • 2½ tsp. baking powder
  • 1 med. onion
  • 1 tbsp. sugar
  • 1½ tsp. salt
  • ⅔ c. buttermilk
  • 1 egg
Instructions
  1. Sift all dry ingredients.
  2. Add egg and milk the last minute just before cooking is the secret of good hushpuppies.
  3. Drop a teaspoon of mix in hot grease for each hushpuppy.
