Chile Con Carne

Ingredients
  • 1 lb. ground beef
  • 1 C. chopped onion
  • ¾ C. green bell pepper, chopped
  • 1 clove garlic, minced
  • ¾ C. celery, chopped
  • 1 lb. can whole chopped tomatoes
  • 2 cans red kidney beans, drained
  • 8 oz. can tomato sauce
  • 2 tsp. chili powder
  • ½ tsp. dried basil, crushed
  • 1 bay leaf
  • 2 C. water
Instructions
  1. In a large skillet, brown hamburger meat, onion, green pepper, celery and chili powder until meat is brown and vegetables are tender.
  2. Transfer ingredients into a large dutch oven and add remaining ingredients.
  3. cover and simmer ion low heat for ½ hour.
  4. Remove bay leaf before serving.

Ingredients
  • 2½ C. corned beef, cooked and chopped
  • 2½ C. potatoes, cooked, cooled and diced.
  • 1 med. onion, chopped
  • 1 tbsp. bacon drippings or butter
  • ½ C. evaporated milk
  • ½ tsp. salt
  • ⅛ tsp. pepper
Instructions
  1. Mix the beef, onions and potatoes.
  2. Heat the drippings in a large frying pan and then turn the meat mixture into the pan.
  3. Add the milk a little at a time and spread the mixture flat in the pan.
  4. Keep over very low heat and brown in on the bottom, approximately 40-45 minutes.
  5. Sprinkle with salt and pepper and fold in half like an omelet.
  6. Pour out onto a hot platter.

Ingredients
  • ½ C. onion, minced
  • 1 Clove garlic, minced
  • ¼ C. butter
  • 1 lb. ground beef
  • 2 tbsp. flour
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 1 lb fresh mushrooms, sliced
  • 10½ oz. can cream of chicken soup, undiluted
  • 1 C. sour cream
  • parsley
Instructions
  1. Saute onion and garlic in butter over medium heat.
  2. Stir in meat and brown.
  3. Stir in flour, salt, pepper and mushrooms.
  4. Cook for 5 minutes.
  5. Stir in soup.
  6. Simmer uncovered for 10 minutes.
  7. Stir in sour cream and heat through.
  8. Garnish with parsley
  9. Serve over noodles or rice.

Lebanese Stuffed Grape Leaves (Dolmates)

Ingredients
  • 1½ C. uncooked rice (NOT instant)
  • 2 tsp. salt
  • 1 tsp. pepper
  • ¾ tsp. allspice.
  • ¾ tsp. cinnamon
  • 2 tbsp. butter, melted
  • 2 lbs. lean ground lamb or beef
  • 100 grape leaves (You can also use cabbage leaves)
  • juice from 1 lemon.
Instructions
  1. Combine the rice, salt, pepper, cinnamon and allspice and mix well.
  2. Add butter and meat to the rice mixture and mix well.
  3. Remove grape leaves from bottles and drain in colander.
  4. To stuff the leaves, add 1 tsp. of the mixture on each leaf.
  5. beginning at the stem edge, fold the leaf over the filling, folding the sides of the leaf halfway towards the center so that the leaf is a tightly tucked little package.
  6. Repeat with the remaining leaves and filling.
  7. Cover the bottom of a large pan with the grape leaves arranged in neat rows.
  8. Sprinkle lemon on the grape leaves.
  9. Invert a heavy dish on the top of the leaves so that the bottom is pressing down on them.
  10. Add water to the pan and bring to a boil.
  11. Reduce heat and simmer on low for about 35-40 minutes or until tender.

 

Stuffed Green Peppers

Ingredients
  • 3 large green peppers
  • 1 C. boiling salted water
  • ½ bl. ground beef
  • 8 oz. can tomato sauce
  • ½ C. bread or cracker crumbs
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 1 tbsp. onion, chopped
  • 1 can mushrooms, sliced (optional)
Instructions
  1. Heat oven to 350
  2. Remove the top of each pepper and core and wach each.
  3. Cook peppers in the salted water for 5 minutes.
  4. Drain peppers.
  5. mix remaining ingredients.
  6. Stuff the peppers lightly with the mixture.
  7. Stand peppers upright in a small baking dish.
  8. Bake covered for 45 minutes and uncovered for an additional 15 minutes.
  9. Serve with baked potatoes.

  • ½ Stick butter
  • 1 large red onion, chopped
  • 2 lbs. ground beef
  • 2 large cans whole tomatoes
  • 2 medium cans kidney beans
  • 2 bell peppers
  • 1 pkg. frozen corn
  • 1 tbsp. salt
  • ½ tsp. pepper
  • ¼ tsp. oregano
  • ¼ tsp. basil
Instructions
  1. Saute onions and peppers ion butter.
  2. Add ground beef and brown.
  3. Add remaining ingredients and cook uncovered for 1½ hours.

 

Chocolate Filled Bundt Cake

Ingredients
  • Filling:
  • ⅓ C. sugar
  • 1 tbsp. cornstarch
  • 2 tbsp. butter
  • ¼ C. milk
  • ½ tsp. vanilla
  • 8 oz. cream cheese
  • 1 C. chocolate chips
  • 1 egg
  • Cake:
  • 1 yellow cake mix (pudding kind)
  • ¾ C. water
  • ⅓ C. oil
  • 3 eggs
Instructions
  1. To prepare cake mix, combine all ingredients and beat on high for 2 minutes.
  2. Pour half the batter into a well greased and floured bundt pan.
  3. Prepare filling.
  4. Melt chocolate chips over hot water.
  5. In a small bowl, combine all filling ingredients and beat until smooth.
  6. Drop by spoonfuls onto cake batter in Bundt pan.
  7. Do not let the filling touch the sides of the pan.
  8. Pour remaining batter on top of filling.
  9. Bake at 350 for 45-55 minutes or until toothpick comes out clean.
  10. Allow to cool for 15 minutes before removing from pan.
  11. Glaze with chocolate icing.

Ingredients
  • ¼ C. dill, fresh, finely chopped
  • 2 large cucumbers, sliced thin
  • ½ tsp. black pepper
  • 1 tsp. coarse salt
  • 3 tbsp. sugar
  • ½ C. white vinegar
Instructions
  1. Place cucumber slices in a large bowl and sprinkle them with salt.
  2. Toss to coat and let them stand for 15 minutes.
  3. In a separate bowl, combine vinegar, dill, sugar, and pepper and mix until sugar is dissolved.
  4. Drain cucumbers well; pat dry. Add cucumbers to sauce and stir to coat cucumber slices.
  5. Refrigerate for at least 15 minutes. serve cold.

  • 2 cups plain corn meal
  • ¼ cup sugar
  • ¼ cup + 3 Tbsp minced onion
  • 1 ½ cup buttermilk
  • 1 Tbsp flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 egg, beaten
Instructions
  1. Mix together cornmeal, sugar, flour, soda and salt; add onions.
  2. Stir egg and buttermilk together and add to dry mixture; mix together and drop by spoonfuls into hot oil.
  3. When done hush puppies will float to top. Remove, drain on paper towel.

  • ⅔ c. Minute Rice
  • 2¾ c. milk
  • ⅓ c. sugar
  • 1 tbsp. butter
  • ½ tsp. salt
  • ½ tsp. vanilla
  • ¼ tsp. nutmeg
  • Cinnamon
  • ½ c. raisins (optional)
Instructions
  1. Preheat the oven to 350
  2. Combine all ingredients in a 1 quart baking dish.
  3. Bake in oven and 350 for 1 hour, stirring once after 15 minutes and again after it's done.
  4. Sprinkle with cinnamon.
  5. Pudding will thicken as it stands.

Ingredients
  • 1½ cups all purpose flour
  • 2¼ tsp baking powder
  • 1 tsp salt
  • 1 cup sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup vegetable oil
  • 2 Tbsp milk
  • 2 eggs, slightly beaten
  • 1 cup mashed cooked sweet potatoes
  • 1 cup chopped pecans
  • ½ cup raisins, optional
Instructions
  1. preheat the oven to 350.
  2. Grease the bottom only of a loaf pan with shortening or butter.
  3. In large bowl, combine all of the dry ingredients.
  4. Add in remaining ingredients and mix well.
  5. Pour the mixture into the prepared loaf pan.
  6. Bake at 350 for 75 minutes or until toothpick inserted in center comes out clean.
  7. Remove from oven, cool in pan 15 minutes, remove from pan to cooling rack.

Ingredients
  • 8-10 bread ends
  • 3 tbsp. butter
  • 1 stalk celery, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ tsp. sage
  • ¼ tsp. marjoram
  • 2 tbsp. fresh chopped parsley
  • ¼ tsp. pepper
  • 1 cup boiling water or chicken broth
Instructions
  1. Cut bread ends into cubes and measure out about 4 cups.
  2. Saute celery, onion and garlic in butter over medium heat for about 5 minutes or until onions are translucent.
  3. Add parsley, herbs and pepper to sauteed veggie mix and stir.
  4. Add boiling water and bring to a boil.
  5. Remove from heat and let stand for 5 minutes.
  6. With a fork, fluff up the bread and serve.

  • 1 C. celery, chopped
  • 1 small onion, chopped
  • ½ C. butter
  • 1 can cream of mushroom soup
  • ½ C. milk
  • 15 oz. jar jar Cheese Whiz
  • 1 package frozen chopped broccoli, thawed
  • 2 C. cooked rice
Instructions
  1. Preheat the oven to 350.
  2. Prepare rice and set aside.
  3. Saute the celery and onion in better until light brown.
  4. In a large bowl, combine all of the ingredients and mix.
  5. pour the mixture into a lightly greased 2 quart casserole dish.
  6. Bake at 350 degrees for 45-60 minutes.

  • 5½ Tbsp butter
  • 4½ Tbsp unsweetened bakers cocoa
  • 2 cups sifted confectioners’ sugar
  • ½ tsp vanilla
  • dash of salt
  • 4 tsp milk
Instructions
  1. Melt 2 Tablespoons butter over medium low heat.
  2. Stir in cocoa, remove from heat and allow to cool.
  3. Cream remaining butter and sugar together.
  4. Add vanilla, salt and cooled chocolate and mix well.
  5. Add milk slowly until mixture reached the right consistency.

 

Rolled Italian Meat Loaf

Ingredients
  • 1¼ lb extra-lean ground beef
  • ¾ lb Italian sausage
  • 1 egg
  • 8 oz. pizza sauce
  • ¼ cup Italian style bread crumbs
  • ¼ teaspoon pepper
  • 2 C. shredded Italian cheese
  • 2 C. fresh spinach leaves
Instructions
  1. Preheat the oven to 350.
  2. In a large bowl, Combine meats, egg, bread crumbs, salt and pepper and half of the pizza sauce.
  3. On a large foil sheet, pat out the meat mixture and top with cheese and spinach.
  4. Roll up the meat tightly and make sure that none of the spinach leaves are visible.
  5. Place the roll, seam side down, into an un-greased casserole dish.
  6. Bake for 1 hour at 350.
  7. Spread remaining pizza sauce over the top and bake for an additional 15 minutes.
Notes
Depending on how thick the roll is, cooking times may vary. Internal temperature should be 160-165 before removing from the oven.
