Creamed Spinach

Ingredients
  • 1 large bag of spinach leaves
  • 4 oz. cream cheese
  • ¼ C. shredded Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp. red onion, minced
  • 2 tbsp. olive oil
  • Salt and pepper to taste
Instructions
  1. Over medium-high heat, warm olive oil in a skillet.
  2. Add in the onions and saute 2-3 minutes or until translucent.
  3. Add in the spinach and garlic and saute.
  4. When spinach is cooked through, stir in the remaining ingredients.
  5. Continue cooking and stirring until the cream cheese is melted.
  6. Remove from heat.
  7. Serve over chicken or pork.
Notes
You can also add mushrooms to this recipe.

 

Beer Bread

Ingredients
  • ½ C. sugar
  • 12-oz bottle of beer
  • 2⅔ cups flour
  • 4 tsp. baking powder
  • 1 tsp. salt
Instructions
  1. Preheat oven to 375.
  2. Mix all ingredients together in a large bowl.
  3. Pour the batter into a lightly greased loaf pan.
  4. Bake at 375 for 50-55 minutes
Notes
Variations to use in place of the beer:
Cinn-A-Dew -Mountain Dew, ½ c. cinnamon chips, sprinkle with 1 Tbls. sugar.

Ginger Bread -Root Beer, ½ cup molasses, one scoop Chai, no butter on top.

Cherry Bread -Black Cherry Soda and chopped marchino cherries.

Cranberry Orange Bread- Orange Juice and chopped cranberries.

Orange Bread- Orange Crush and drained mandarin oranges.

Peanut Butter Bread -Cream Soda and ½ c. peanut butter chips.

Cooking times may vary due to the different ingredients used.

 

Sweet potato pie

Ingredients
  • 1 unbaked pie crust
  • 1 lb sweet potatoes, cooked and peeled
  • ¼ cup butter
  • 2 eggs
  • 14 oz. sweetened condensed milk
  • 1 tsp. vanilla
  • 1 tsp. grated orange rind
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • ¼ tsp. salt
Instructions
  1. Preheat oven to 350 degrees F.
  2. In bowl, beat sweet potatoes and butter together until smooth and lump free.
  3. Add milk, orange rind, vanilla, cinnamon, nutmeg, salt and eggs and mix together well.
  4. Pour into pie shell and bake 30 minutes or until golden brown cool.
  5. And top with whipped cream.

 

Connie’s Chili Beans

Ingredients
  • 1lb hamburger, cooked and not drained
  • 1 package of cooked pinto beans/ or 2 cans pinto beans. You can also add kidney beans
  • 1 small can tomato sauce
  • 1 can stewed tomatoes- smashed
  • 5-6 roasted Anaheim peppers (I use the hot ones)
  • Red new Mexico chili powder (you can find it the “Hispanic” section with all the other Hispanic spices and bulk beans.
  • ½-1 full onion diced up
  • Onion powder to taste
  • Garlic powder to taste
  • Garlic salt to taste
  • Salt and pepper to taste
  • Flour
  • Water
Instructions
  1. Cook the hamburger with the onion, onion powder, garlic powder, garlic salt, salt/pepper. While this is cooking, peel and clean the Anaheims and blend them up, or chop real fine.
  2. When the meat is done, pour enough flour in to make a “roux” and then add about ¼- ½ of the new Mexico chili powder in. “brown” the flour to get the flour taste out for about 30 sec- 1 minute. Then add your beans, chili peppers, tomato sauce, stewed tomatoes, then add enough water to make it runny enough like gravy, but not soup.
  3. Turn temperature down to low/med and let simmer for about 20-30 minutes to let everything “merry” together. This is when you can taste it and add more seasonings if needed.

Ingredients
  • ½ Lb. butter
  • ½ lb Oleo
  • 1 C. sugar
  • ½ tsp. vanilla
  • ½ C. flour
  • 6 oz. bag potato chips, crushed
Instructions
  1. Cream the butter and Oleo together.
  2. Add remaining ingredients.
  3. Drop by tsp. onto a cookie sheet.
  4. Bake at 375 for 10-15 minutes.
Notes
instead of Oleo, you can use margarine.

No-Bake Chocolate Kahlua Christmas Balls

Ingredients
  • 1 cup semi-sweet chocolate chips
  • 1 can (5 ounces) evaporated milk
  • 1¼ cups vanilla cookie crumbs
  • 1¼ cups ginger snap cookie crumbs
  • ½ cup confectioners' sugar, sifted
  • ½ cup finely chopped walnuts
  • ⅓ cup Kahlúa liqueur
  • 1 teaspoon pure vanilla extract
  • 2 cups shredded coconut
Instructions
  1. Melt the chocolate chips in evaporated milk in a pot over low heat, stirring constantly, until well blended.
  2. Remove from the heat and set aside to cool for about 30 minutes.
  3. Combine all remaining ingredients except the coconut; stir into the chocolate mixture, blending well.
  4. Shape the mixture into 1- to 1½-inch balls (if the dough is too moist, add up to ⅓ cup more cookie crumbs), then roll in coconut.
  5. Let air-dry for 2 hours on waxed paper.
  6. Transfer to an airtight container; store in refrigerator.

Ingredients
  • 1 cup butter, softened
  • 1 cup Imperial Sugar® / Dixie Crystals® Granulated Sugar
  • 1 cup confectioners' sugar
  • 1 cup vegetable oil
  • 2 eggs
  • 1 teaspoon almond extract
  • 3-½ cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cream of tartar
  • 1 cup chopped almonds
  • 1 package (8 ounces) mini red and green M&M's or Heath baking bits
Instructions
  1. In a bowl, cream butter, sugars and oil. Add eggs and extract; mix well. Combine flours, baking soda, salt and cream of tartar; gradually add to creamed mixture and mix well. Stir in almonds and candy. Chill for 1 hour or until firm enough to handle. Shape into 1-in. balls; roll in sugar. Place on ungreased baking sheets. Flatten with a flat-bottomed glass. Bake at 350° for 15-18 minutes or until lightly browned. Cool on wire racks.

Ingredients
  • 6-8 hard boiled eggs
  • 1 avocado, diced small
  • 3 tbsp. mayonnaise
  • 2 tsp. lemon juice
  • ⅛ tsp. garlic powder
  • ⅛ tsp. cayenne pepper, optional
  • salt to taste
Instructions
  1. Cut boiled eggs in half and scoop out the yolks.
  2. Mash the egg yolks and mix in the renaming ingredients except for the cayenne pepper.
  3. Fill eggs with yolk mixture and sprinkle with cayenne.

Ingredients
  • 2 lbs sausage, ground
  • 1 lb. ground beef
  • 3 eggs
  • 2 tbsp. dried onion flakes
  • ½ tsp. black pepper
  • ½ lb cheddar cheese, shredded
Instructions
  1. Mix all ingredients together and form into 1 inch balls.
  2. Place balls onto a cookie sheet or broiler pan.
  3. Bake at 375 for 25 minutes

 

Dr. Pepper BBQ Sauce

Ingredients
  • 1 C. onion, chopped
  • ¼ C. vegetable oil
  • 1½ C. Dr. Pepper
  • 1 can tomatoes
  • ½ C. orange juice
  • ¼ C. cider vinegar
  • ½ C. honey
  • ½ tsp. cayenne
  • salt to taste
Instructions
  1. Heat the oil over medium heat and saute the onions until translucent.
  2. Add the remaining ingredients and mix well.
  3. Allow to simmer for 30-40 minutes
  4. Process the sauce in a food processor and blend until smooth,
  5. Return to stove-top and simmer for 1-2 hours.

Ingredients
  • 1 qt. warm water
  • 1 C. sugar
  • 1 C. powdered milk
  • 1 C. oil
  • 1 tbs. salt
  • 2 pkg. yeast
  • 8 C. all purpose flour
Instructions
  1. Combine water, yeast and sugar and let the yeast dissolve.
  2. In a separate bowl, combine milk, salt and five cups of flour.
  3. When the yeast dissolves, add the iol and pour into the dry mixture.
  4. Mix thoroughly and continue to add remaining flour until dough is not too sticky.
  5. Allow to rise until doubled in size.
  6. Bake at 350 for 15-20 minutes or until lightly browned.

  • 1 lemon cake mix
  • 1 pk. instant pineapple pudding mix
  • 4 eggs
  • ¾ C. oil
  • 1 12oz. can seven up

  1. Mix all ingredients together in a large bowl.
  2. Bake at 350 for 30 minutes.

Ingredients
  • 1 unbaked pie shell
  • 3 large eggs
  • ½ C. sugar
  • ½ tsp. salt
  • ½ tsp. nutmeg
  • 2⅔ C. milk
  • 1 tsp. vanilla extract
Instructions
  1. Preheat the oven to 350
  2. Beat eggs slightly and add remaining ingredients except for nutmeg.
  3. Pour into unbaked pie shell.
  4. Bake 35-40 minutes.
  5. Remove from oven and allow to cool completely.
  6. Top with ground nutmeg.

 

Poor Mans Pie

Ingredients
  • 1 unbaked pie shell
  • 1 C. brown sugar
  • ⅓ C. flour
  • ¼ tsp. salt
  • 1½ C. cream or half and half
  • 3 tbsp. apple cider vinegar
  • 3 tbsp. butter, room temperature
  • 1 tsp. cinnamon
Instructions
  1. Preheat oven to 400
  2. Place pie crust into a pie pan and prick the bottom with a fork.
  3. Bake for 10 minutes and set aside.
  4. Reduce heat to 350.
  5. Mix together brown sugar, flour and salt.
  6. Add remaining ingredients and mix well.
  7. Dot the top with butter.
  8. Bake for 50-60 minutes ur until golden brown spots form on the top of the pie.
  9. Cool completely, filling will firm up as it cools.
