Ingredients
  • 2 lbs hamburger
  • 1 C. bread crumbs
  • 3 eggs
  • 1 pkg. onion soup mix
  • 8 oz. sauerkraut, drained and rinsed
  • 1 can whole cranberries
  • 1 C. brown sugar
  • 12 oz. bottle chili sauce
  • 12 oz. water
Instructions
  1. To make the meatballs, Mix hamburger, eggs, breadcrumbs and soup mix together and shape into balls.
  2. Bake in oven at 350 for 20 minutes.
  3. To make the sauce, combine remaining ingredients in a saucepan and heat on low heat for 20 minutes.
  4. Stir to prevent scorching.

Ingredients
  • 6 pork chops
  • 1 C. minute rice
  • 1 can cream of celery soup
  • ¾ C. water
Instructions
  1. Sprinkle minute rice on the bottom of a casserole dish.
  2. Top with meat and season with salt and pepper to taste.
  3. Mix soup and water together and pour over the top of the meat.
  4. Cover with foil and bake at 350 for 1 hour 45 minutes.
  5. Makes 6

Ingredients
  • 1 round steak, 2 lbs, cut into serving size pieces
  • 1 can cream of mushroom soup
  • ½ can water
  • ½ pkg. onion soup mix
Instructions
  1. Place raw meat in a greased casserole dish.
  2. Combine soup and water and mix in onion soup mix.
  3. Pour mixture over meat.
  4. Cover and bake at 300 for 3 hours.

Ingredients
  • 1 round steak
  • 1 box Stove top stuffing for beef, prepared
Instructions
  1. Spread stuffing on steak and roll up jelly roll style. Secure with toothpicks.
  2. Use 1 can cream of mushroom soup, mixed with water, or one can beef broth and put in casserole dish.
  3. Bake for 1 hour at 350 and slice.

 

Crock Pot Mac and Cheese

Ingredients
  • 1 package elbow macaroni
  • 2 tbsp. butter
  • ¼ c. flour
  • 1 tsp. salt
  • ½ tsp. dry mustard
  • ¼ tsp. pepper
  • Garlic powder to taste.
  • 2½ c. milk
  • 2 c. grated Cheddar cheese for sauce
  • Additional Cheddar cheese for macaroni
Instructions
  1. In a saucepan, cook macaroni until done al dente and drain.
  2. Turn Crock pot to High setting.
  3. Combine flour, salt, dry mustard, garlic powder, pepper and milk. Microwave on High setting until it begins to thicken. Do not overcook or milk will curdle.
  4. Stir in butter and 2 cups Cheddar cheese, stirring until cheese melts.
  5. Butter the sides and bottom of pot. Place a layer of macaroni and layer of extra cheese until all macaroni of the macaroni has been used.
  6. Cook on High setting for about 30 minutes.
  7. Turn to Low setting and cook for 2 hours.

Ingredients
  • 4 lbs. spareribs
  • 1 C. sliced onion
  • 1 C. catsup
  • 1 C. water
  • 2 tsp. salt
  • 2 tbsp. Worcestershire sauce
  • ¼ C. vinegar
  • ¼ C. brown sugar
  • 2 tsp. dry mustard
  • 1 tsp. paprika
Instructions
  1. Cut spareribs into serving pieces and brown them in a pan.
  2. Combine the remaining ingredients and pour over the ribs.
  3. Cover and bake in the oven at 350 for 1 hour and 45 minutes.
  4. Spoon the sauce over the ribs 2-3 times during the baking process.
  5. Bake 15 additional minutes uncovered.

 

Pepper Steak

Ingredients
  • 2 tbsp. cornstarch
  • 2 tbsp. water
  • 1 tbsp. soy sauce
  • 2 tbsp. oil
  • pepper to taste
  • 1 lb. flank steak
  • 2 green peppers
  • garlic salt to taste
  • 1½ C. boiling water
  • ¼ tsp. salt
  • 1½ C. rice
Instructions
  1. Combine cornstarch, water, soy sauce, 1 tbsp. oil, pepper and beef.
  2. Cover and set aside.
  3. Sauté peppers in 1 tbsp. oil.
  4. Add meat mixture and cook fro 1 minute without stirring.
  5. Cook and stir until meat is medium rare and remove from skillet.
  6. Add water and salt to the skillet and bring to a boil.
  7. Stir until all brown particles are loosened.
  8. Stir in the rice and top with meat and pepper mixture.
  9. Cover and let sand fro 5 minutes.
  10. Stir.

Ingredients
  • 1 C. milk
  • ¾ C. crushed crackers
  • ¼ C. onion, minced
  • 2 eggs
  • ¼ C. green pepper, minced
  • 1 tsp. seasoning salt
  • 1 lb. hamburger
  • 3 slices cheese
Instructions
  1. Pour milk into bowl and add crackers. Allow to soak.
  2. Add remaining ingredients except for the cheese and mix well.
  3. Shape into 12 balls
  4. Place in greased 2 inch muffin cups.
  5. Bake at 325 for 25 minutes.
  6. Top each with cheese and bake for an additional 5 minutes.

 

Salisbury Steaks

Ingredients
  • 1 tbsp. margarine
  • ¼ C. chopped onion
  • 1 Can cream of mushroom soup
  • 1 egg
  • ½ C. Italian seasoned bread crumbs
  • ¼ tsp. salt
  • 1½ lbs hamburger
  • ⅓ C. water
Instructions
  1. Cook onion in the margarine until brown.
  2. In a large bowl, beat together ⅓ C. cream of mushroom soup and 1 egg.
  3. Stir in the bread crumbs and salt.
  4. Let stand for 5 minutes.
  5. Stir cooked onion and the beef to the bread crumbs and mix well.
  6. Shape into 6 patties.
  7. Put patties into a lightly greased 9x13 pan.
  8. Bake at 350 for 30 minutes and drain.
  9. Blend the remaining soup and water together and pour over the patties.
  10. Bake for an additional 10 minutes.

 

Beef Bavarian

Ingredients
  • 1½ Lb. round steak cut into 1 inch strips
  • 2 tbsp. cornstarch
  • 1 tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. garlic powder
  • 1 tbsp. brown sugar
  • 2 tbsp. oil
  • 1 large onion, chopped
  • 2½ C. beef broth
  • ¼ tsp. Tabasco sauce
  • 4 large carrots, sliced
Instructions
  1. Pound meat until thin.
  2. Blend cornstarch and spices and coat the meat in the cornstarch mixture.
  3. Brown meat in oil, add onion and cook an additional 5 minutes.
  4. Stir in broth, Tabasco and brown sugar and bring to a boil.
  5. Reduce heat and cover. Allow to simmer for 2 hours.
  6. Add sliced carrots 1 hour before cooking ends.
  7. Serve over hot rice.

Ingredients
  • 1 chuck or round steak (2 pounds) about 2 inches thick.
  • 1 pkg. Lipton Onion soup mix.
Instructions
  1. Place meat on a large sheet of aluminum foil and sprinkle both sides with the soup mix.
  2. Wrap foil loosely around the steak sealing the edges and making airtight.
  3. Place packaged steak in a casserole dish and bake at 374 for 1 hour or until steak is tender.
  4. Thicken the gravy if desired and pour over the steak.
  5. Makes about 8 servings.

Ingredients
  • 1 C. bread crumbs
  • 1 C. milk
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 3 eggs
  • ½ C. minced onion
  • 2 tsp. salt
  • 1 tsp. pepper
  • ½ tsp. allspice
  • 1 C. milk
  • 2 tbsp. oil
  • Flour
  • 2 cans consommé
Instructions
  1. Soak bread crumbs in 1 cup of milk.
  2. Mix pork, beef, eggs, bread crumbs and spices.
  3. Beat at a low speed and gradually add second cup of milk.
  4. Beat until smooth.
  5. Chill Thoroughly.
  6. Make into balls and drop onto waxed papper.
  7. Brown in oil.
  8. Cover all with consommé, cover and simmer 20 minutes.

  • 1 lb. hamburger
  • 2 cans enchilada sauce
  • 1 small can chopped olives
  • 1 small onion, minced
  • 2 C. tomatoes
Instructions
  1. Brown meat and onion in the frying pan and add remaining ingredients.
  2. Put in crock pot and simmer on low all day.
  3. Using a corn tortilla, fill with meat mixture and roll up.
  4. Top with remaining sauce and cheddar cheese.
  5. Bake until the cheese melts.

Ingredients
  • 1 bottom round roast, about 4 lbs.
  • Salt and freshly ground black pepper
  • 5 tablespoons vegetable oil
  • 3 small onions, medium diced
  • 1 head garlic (about 10 to 12 cloves), lightly smashed
  • 1 pound carrots (about 4 medium), cut roughly into 1½-inch pieces
  • 2 cups low-sodium chicken, beef, or vegetable broth
  • 2 cups medium-bodied red wine
  • 2½ tablespoons honey
  • 5 to 6 sprigs fresh thyme
  • 2 pounds russet potatoes, peeled and cut into 1½ to 2-inch cubes
Instructions
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Season roast with salt and pepper. Heat oil in large oven-safe pot over high heat for a couple minutes. Add the meat and brown well on all sides, about 10 minutes total.
  3. Remove and set aside on a plate. Lower heat to medium and sauté onions, garlic, and carrots for 5 minutes. Add the broth, wine, honey, and thyme, stir to combine, and then add the roast back to the pot.
  4. Cover pot and transfer to oven. Bake for 2 hours, turning the meat over twice. Add the potatoes to the pot and bake, uncovered, for another 30 to 45 minutes longer until both the potatoes and the meat are fork-tender.

 

Dutch Almond Cake

In Dutch, this is called Bouterkoek. It is one of my family's favorites.
Ingredients
  • 1½ cup flower (Dutch word for flour is bloem, which also means flower. See comments below)
  • 1 t. baking powder
  • ¼ t. salt
  • ¾ cup sugar
  • 1 cube butter or margarine
  • 1 egg yolk (needed for the top)
  • 1 egg white
  • 1 t. almond extract
Instructions
  1. Mix all ingredients together (mix the dry ingredients first) by hand and press into a greased 10 inch cake or pie pan.
  2. Brush the top with 1 egg yolk and sprinkle with sliced almonds.
  3. Bake at 300 degrees Fahrenheit for thirty minutes.
  4. Note: For those of you wondering, Yes – we are aware that the word “flour” is misspelled as “flower” above. We chose to leave it this way in respect of the original Dutch recipe. Dutch word for flour is bloem, which also means flower.
