Chicken Salad Casserole

Ingredients
  • 4 C. cold chicken cut into pieces
  • 2 C. celery, chopped
  • 4 hard boiled eggs
  • 2 tsp. pimentos
  • 2 tbsp. lemon juice
  • ¾ C. mayo
  • 1 tsp. salt
  • 1 can cream of chicken soup
  • 1 tsp. minced onion
  • ½ C. cheese
  • ⅔ C. slivered almonds
  • ½ C. Chinese noodles
Instructions
  1. Combine the chicken, celery, eggs and pimentos.
  2. In a separate bowl, combine the lemon juice, mayo, salt, soup and onion and mix well.
  3. Combine the two bowls and pour into a casserole dish.
  4. Sprinkle the top with cheese and almonds and top with noodles.
  5. Bake at 400 for 20 minutes.

Ingredients
  • 2-3 C. Chicken
  • 1 qt. chicken broth
  • 1 onion, diced
  • 3 stalks celery, diced
  • 4 med. potatoes, diced
  • 1 can cream of mushroom soup
  • 1 pkg. frozen mixed vegetables
  • 1 can mushrooms
  • ½ tsp. garlic powder
  • 2 C. Bisquick
  • 1½ C. milk
Instructions
  1. Preheat the oven to 375.
  2. In a large sauce pan, cook the onion, celery and potatoes in a small amount of water until almost done.
  3. Add frozen vegetables and cook for an additional 5 minutes.
  4. Add broth, soup mix and mushrooms (including juice form mushrooms) and heat.
  5. Add chicken, garlic powder, salt and pepper.
  6. Pour into a 9x13 casserole dish.
  7. Mix Bisquick and milk together and pour over the top of the chicken and vegetables.
  8. Bake at 375 for 45 minutes.

 

Lemon Garlic Chicken

Ingredients
  • 2 Chicken Breasts cut into pieces
  • 1 tbsp. ginger
  • 2 lrg. garlic cloves, minced
  • ½ tsp. salt
  • 1 lrg. onion, cut into thin wedges
  • 1 tbsp. oil
  • 2 C. pea pods
  • ¾ C. picante sauce
  • 2 tsp. cornstarch
  • ½ tsp. sugar
  • ½ tsp. lemon peel
  • 2 C. cooked rice
  • 2 tbsp. slivered almonds
Instructions
  1. Sprinkle chicken with ginger, garlic and salt and set to the side.
  2. Cook onion in oil for 2 minutes and add chicken.
  3. Stir fry until chicken in no longer pink.
  4. Add peas and cook for an additional 1 minute.
  5. Combine picante sauce, cornstarch lemon peel, and sugar and add to the pan.
  6. Cook while stirring until sauce thickens.
  7. Spoon over rice and sprinkle with almonds.

 

Chicken Enchiladas

Ingredients
  • 2 lrg. chicken breasts - boned
  • 1 C. onion, minced
  • 1 clove garlic
  • 2 tbsp. margarine
  • 16 oz. can tomatoes
  • 8 oz. can tomato sauce
  • 2½ C. cheese
  • 4 oz. can chopped green chilies
  • 1 tsp. sugar
  • 1 tsp. cumin
  • ½ tsp. salt
  • 1.2 tsp. oregano
  • 6 flour tortillas
  • ¾ C. sour cream
Instructions
  1. Cut chicken into strips and sprinkle with salt. Set aside.
  2. In a pan, cook onion and garlic in butter.
  3. In a blender, combine tomatoes, tomato sauce, chilies and spices.
  4. Mix the sauce with the onions and garlic and simmer for 20 minutes.
  5. Dip each tortilla into the sauce to soften.
  6. Fill tortillas with chicken and cheese.
  7. Roll up tortillas and place the seam side down in a greased 9x12 dish.
  8. Blend sour cream with remaining sauce.
  9. Pour sauce over tortillas and top with remaining cheese.
  10. Cover and bake at 350 for 40 minutes.

Ingredients
  • 3 C. boiled mashed yams
  • 2 eggs
  • 1 C. sugar
  • ½ tsp. salt
  • ½ stick margarine
  • ½ C. milk
  • 1 tsp. vanilla
Instructions
  1. Cream sugar and margarine together and add remaining ingredients.
  2. Beat with a mixer until well mixed.
  3. Pour into a casserole dish.
  4. Mix 1 C. brown sugar, 1 C. chopped pecans, ½ C. flour and ½ stick of softened margarine.
  5. Crumble on top of potatoes.
  6. Bake at 325 for 15 minutes.

 

Chicken with Gravy

Ingredients
  • 5-6 pieces chicken, coated with flour and fried half way
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can water
  • ½ tsp. poultry seasoning
  • 1 minced onion
  • ½ tsp. paprika
  • Salt, pepper and garlic salt to taste
Instructions
  1. Combine soups, water, onion and seasonings and ring to a boil.
  2. Pour over chicken and cook on range top for 45 minutes.
  3. Use leftover gravy for potatoes.

 

Fried noodles

Ingredients
  • ½ lb. uncooked linguine noodles
  • ¾ C. tomato juice
  • 3 tbsp. soy sauce
  • 1 tbsp. vinegar
  • 2 tsp. sugar
  • ¾ tsp. cornstarch
  • 3 tbsp. vegetable oil, divided
  • ½ lb. chicken strips
  • 2 cloves garlic
  • ½ lb. bean sprouts
  • ⅓ C. green onions, chopped
  • ½ lb. baby shrimp, rinsed and cooked
  • 1 tbsp. cilantro
Instructions
  1. Cook and drain the pasta.
  2. Combine tomato juice, soy sauce, vinegar, sugar and cornstarch and set aside.
  3. Heat 1 tbsp. oil in a wok and add meat. Stir fry for 1 minute and remove from pan.
  4. Heat the remaining oil in the wok and add garlic, sprouts and onions and stir fry for 1 minute.
  5. Return chicken with shrimp, cilantro and tomato juice mixture.
  6. Cook until sauce boils and thickens.
  7. Serve with lime wedges.
  8. Makes 4 servings.

Ingredients
  • 8 med. potatoes, cooked, cooled and shredded
  • ½ square margarine
  • 1 can cream of chicken soup
  • 1 C. sour cream
  • 1 C. shredded cheese
  • ½ C. crushed corn flakes
Instructions
  1. In a large saucepan, combine margarine, soup, sour cream and cheese and mix well.
  2. Heat until smooth.
  3. Place potatoes in a 9x13 casserole dish and pur sauce over the top.
  4. Poke with a fork to allow sauce to penetrate.
  5. Top with the corn flakes.
  6. Bake at 350 for 30-45 minutes.

 

Parmesan Potatoes

Ingredients
  • ½ C. margarine
  • 6 lrg. potatoes
  • ⅓ C. parmesan cheese
  • ⅓ C. flour
  • ½ tsp. salt
  • ½ tsp. pepper
Instructions
  1. Heat oven to 375
  2. Place margarine on a cookie sheet and melt in the oven. Set aside.
  3. Peel the potatoes, quarter lengthwise and set aside.
  4. In a large plastic bag, combine the cheese, flour, salt and pepper.
  5. Add potatoes to the bag and shake to coat.
  6. Place potatoes in the melted butter on the pan.
  7. Bake at 375 for 1 hour or until tender.

 

Lasagna

Ingredients
  • 1½ lbs. hamburger
  • ½ C. chopped onion
  • 1 qt. golden grain marinara sauce
  • ½ C. parmesan cheese
  • 2 tbsp. parsley flakes
  • 1 tbsp. basil
  • 1 tsp. salt
  • ½ tsp. pepper
  • 12 oz. lasagna noodles
  • 1 lb. mozzarella cheese, sliced thin
Instructions
  1. Brown meat and onion together and drain.
  2. Cook the lasagna noodles as directed on the box.
  3. Combine remaining ingredients except for the mozzarella cheese.
  4. In a 9x13 casserole dish, layer noodles, meat and sauce mixture and sliced cheese until all ingredients are used.
  5. Cover with foil and bake at 400 for 20 minutes.

 

Macaroni and Cheese

Ingredients
  • 1½ C. elbow macaroni
  • ½ C. margarine
  • ½ C. flour
  • 1 tsp. salt
  • ⅛ tsp. pepper
  • 1 tsp. dry mustard
  • 2½ C. milk
  • ½ C. pimento
  • ½ C. green pepper
  • 2 C. grated American cheese
  • 2 tbsp. bread crumbs tossed with 1 tbsp. melted margarine.
Instructions
  1. Cook macaroni and drain.
  2. Melt margarine in a sauce pan and remove from heat.
  3. Stir in flour, salt, pepper and mustard until smooth.
  4. Slowly stir in milk and bring to a boil.
  5. Add in the pimento and green pepper and reduce heat to a simmer.
  6. Stir in the macaroni and 1½ C. of the grated cheese.
  7. Pour into a 2 qt. casserole dish and top with bread crumbs and remaining cheese.
  8. Bake at 375 for 15-20 minutes or until cheese is melted and bread crumbs are brown.

 

Italian meatloaf

Ingredients
  • 2 tbsp. extra virgin olive oil
  • 2 cans mushrooms
  • 1 onion, diced
  • 4 cloves of garlic
  • 2 lb. ground beef
  • 4 eggs
  • 1½ C. bread crumbs
  • 2 C. grated parmesan cheese
  • 2 tbsp. Worcestershire sauce
  • 2 tbsp. Balsamic vinegar
  • 2 tbsp. BBQ sauce
  • 1 pkg. fresh basil leaves, chopped
  • 1 pkg. fresh oregano, chopped
  • 2 tbsp. parsley leaves, chopped
  • 2 tsp. salt
  • 1 tsp. black pepper
  • 2 C. marinara sauce
Instructions
  1. Preheat the oven to 350
  2. Heat 1 tbsp oil in a sauté pan and add the mushrooms, onions and garlic.
  3. Sauté until just soft and remove to a plate to cool.
  4. When the mushrooms are cool, combine the remaining ingredients except for the marinara sauce together.
  5. Pack the meat into an oiled loaf pan.
  6. Top with marinara sauce, making sure to spread evenly over the top.
  7. Bake at 350 for 50 to 60 minutes or until done.
  8. Remove from oven and let stand for 5 minutes.
  9. Slice and serve.

Ingredients
  • 3-4 lb. boneless beef chuck roast
  • 1 can cream of mushroom soup, undiluted
  • 1 pkg. onion soup mix
  • 1 tbsp. steak sauce
Instructions
  1. Put meat in a covered dish.
  2. Mix remaining ingredients in a bowl and spread over top and sides of meat.
  3. Cover and bake at 325 for 3 hours.
  4. Serve with gravy.

 

BBQ Pork

Ingredients
  • 3-4 lb bone in pork shoulder
  • 1 onion, diced
  • ½ C. vinegar
  • ¼ C. brown sugar
  • ¼ C. catsup
  • 2 tbsp. margarine
  • ½ tbsp. lemon juice
  • ½ tbsp. dry mustard
  • 1 bay leaf
  • ¼ tsp garlic
  • Dash of pepper sauce
Instructions
  1. Cook the meat in a crock pot until done. Cool completely.
  2. Remove the fat from the meat and pull the meat from the bone in big chunks.
  3. Chop the meat or shred into smaller pieces.
  4. Mix the remaining ingredients in a large sauce pan and bring to a boil.
  5. Reduce the heat and simmer for 30 minutes. Do not cover!
  6. Discard the bay leaf, stir in meat and heat throughout.
  7. Serve on toasted buns.
  8. Serves 9

 

Teriyaki Beef marinade

  • 1½ C. oil
  • ¾ C. soy sauce
  • ¼ C. Worcestershire sauce
  • 2 tbsp. dry mustard
  • 2 tbsp. ground pepper
  • ½ C. wine vinegar
  • 1½ tsp. parsley flakes
  • 2 garlic clove, crushed and minced
  • ⅓ C. fresh lemon or lime juice
Instructions
  1. Mix all ingredients well and store in fridge.
  2. Makes 3½ Cups.
