Ingredients
  • 2-3 slices of Prosciutto
  • 1 tsp. coarse sea salt
Instructions
  1. Preheat the over to 375F
  2. On a baking sheet, bake the prosciutto for 20-25 minutes or until crisp.
  3. Remove all oil from the prosciutto and leave to dry on paper towels. The drier, the better.
  4. Crush the prosciutto into small pieces and mix with the salt. If you have a mortar, use that to combine.
  5. Store in an airtight container in the fridge.

Ingredients
  • 20 sheets spring roll wrappers
  • 2 carrots, Shredded
  • 1 white cabbage, shredded
  • 1 cup dry flavoured soy mince
  • 1 C. beansprouts
  • salt pepper
  • oil for frying
Instructions
  1. Soak soy in a little bit of water until damp.
  2. Combine All ingredients
  3. Wrap into spring roll sheets and fry in oil.

 

Blonde Brownies

Ingredients
  • ½ c. plus 2 tbsp. butter
  • 2 tbsp. hot water
  • 2¼ C brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2 c. flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. salt
Instructions
  1. Melt Butter in pan.
  2. Add hot water and stir.
  3. Mix remaining ingredients.
  4. Place in a greased ban.
  5. Sprinkle ½ package of chocolate chips on top.
  6. Bake 25 minutes at 350 degrees.

 

Eggless Rice Pudding

Ingredients
  • 4 cups milk.
  • ⅔ cup rice.
  • ⅓ cup molasses.
  • ½ teaspoon cinnamon.
  • 1 tablespoon butter.
  • ½ cup seeded raisins.
  • Salt.
Instructions
  1. Wash rice; mix ingredients in the order given and pour into a buttered baking dish; bake three hours in a slow oven, stirring three times during first hour of cooking to prevent rice from settling.
  2. When stirring the last time, add butter.

Ingredients
  • 1 cup cracker crumbs.
  • 2 teaspoons finely chopped parsley.
  • 1 tablespoon finely chopped pickles.
  • 1 teaspoon salt.
  • 1 teaspoon grated onion.
  • 3 tablespoons butter.
  • ¼ to ½ cup boiling water.
Instructions
  1. Melt butter in hot water; add remaining ingredients in the order given.
  2. Mix lightly with a fork.

 

Yankee Plum Pudding

Ingredients
  • ⅔ cup Cottolene (lard).
  • 1 cup molasses.
  • 3 cups flour.
  • 1½ teaspoons soda.
  • 1 teaspoon cinnamon.
  • ½ teaspoon cloves.
  • ½ teaspoon nutmeg.
  • ½ teaspoon salt.
  • 1 cup sweet milk.
  • 1 cup seeded shredded raisins.
  • 1 cup English Walnut meats broken in pieces.
Instructions
  1. Cream Cottolene, add molasses; mix and sift flour, soda, spices and salt; add alternately with milk, reserving enough flour to dredge raisins and nut meats; mix well and turn in buttered molds.
  2. Steam three hours.
  3. Serve with Brandy or Vanilla Sauce.

 

Rice Balls

Ingredients
  • 1 cup cold, cooked rice.
  • 2 tablespoons flour.
  • 1 teaspoon grated onion.
  • 1 teaspoon finely chopped parsley.
  • 1 egg slightly beaten.
  • Salt, pepper, cayenne.
Instructions
  1. Warm rice slightly and rub through a sieve, add flour, seasonings, and bind together with egg.
  2. Measure mixture by the teaspoonful.
  3. Roll in small balls.
  4. Poach until firm on outside in boiling salted water.
  5. Remove with skimmer and drop into clear, hot soup.

 

Anise Seed Wafers

Ingredients
  • ⅓ cup Cottolene (lard).
  • 1 cup granulated sugar.
  • 3 eggs.
  • 2 cups flour.
  • 3 teaspoons anise seed.
  • ¼ teaspoon nutmeg.
  • ½ teaspoon salt.
  • Flour.
Instructions
  1. Cream Cottolene, add sugar gradually, add egg yolks, one at a time, beating constantly.
  2. Beat whites of eggs stiff, add to first mixture alternately with flour mixed and sifted with anise seed, nutmeg and salt.
  3. Add just enough extra flour to dough to roll very thin.
  4. Shape with small, fluted cutter, and bake in a quick oven (400-425 F)..

 

Ambrosia Salad

Ingredients
  • 6 sweet Florida oranges.
  • 1 cocoanut grated.
  • 4 plantains (red bananas).
  • ⅓ cup fine table Sherry wine.
  • ¼ cup lemon juice.
  • Bar sugar. Also known as Castor Sugar.
Instructions
  1. Peel the oranges, separate the sections, remove the tough membrane and seeds.
  2. Dispose a layer of orange pulp in bottom of shallow, glass, serving-dish, sprinkle with wine and lemon juice and sugar, strew with coconut and a layer of thinly sliced banana.
  3. Repeat until all ingredients are used, having a thick layer of coconut on top.

 

Corn Chowder

Ingredients
  • 2 cups cooked corn cut from cob, or
  • 1 can of corn.
  • 1 cup salt pork cubes.
  • 1 cup potatoes cut in cubes.
  • ½ onion sliced.
  • 3 cups water.
  • 2 cups scalded milk.
  • 1 tablespoon butter.
  • 1 tablespoon flour.
  • ⅔ cup cracker crumbs.
  • Salt, Pepper.
Instructions
  1. Cut salt pork in one-fourth inch cubes and try out in a frying pan; add onion, and cook until yellow.
  2. Pare and cut potatoes in one-half inch cubes, parboil five minutes.
  3. Add to onion, with corn and water; cover and cook twenty minutes or until potatoes are soft.
  4. Melt butter in a sauce-pan, add flour, stir to a smooth paste, pour some of the milk on slowly, stirring constantly.
  5. Combine mixtures; add crumbs and seasonings.
  6. Serve for dinner in cups or in small "nappies."

 

Banana Sauce

Ingredients
  • 1 cup water.
  • ½ cup sugar.
  • Pulp 3 bananas.
  • 3 tablespoons lemon juice.
  • 2 eggs well beaten.
  • Few grains salt.
  • Few gratings lemon rind.
Instructions
  1. Make a syrup by boiling water and sugar ten minutes.
  2. Rub bananas through a sieve, add remaining ingredients and beat until well blended and light.
  3. Pour on hot syrup slowly, beating constantly.
  4. Serve hot.
  5. Pulp of peaches or apricots may be used in place of bananas.

 

Steamed Cottage Pudding

Ingredients
  • 3 tablespoons Cottolene (Lard).
  • 1 cup sugar.
  • 2 eggs.
  • 1 cup milk.
  • 2 cups flour.
  • 3 teaspoons baking powder.
  • ¼ teaspoon salt.
Instructions
  1. Cream Cottolene, add sugar gradually, stirring constantly, add yolks of eggs beaten very light.
  2. Mix and sift flour, baking powder and salt, add to first mixture alternately with milk; cut and fold in the stiffly beaten whites of eggs.
  3. Turn in a well-buttered tube mold, and steam one and one-half hours.
  4. Serve with Vanilla, Strawberry, or Banana Sauce.

 

Tomato Sauce

Ingredients
  • 1 half can tomatoes.
  • ⅛ teaspoon soda.
  • 1 teaspoon sugar.
  • 6 peppercorns.
  • 2 cloves.
  • Slice onion.
  • Bit of bay leaf.
  • ½ teaspoon salt.
  • Few grains cayenne.
  • 4 tablespoons butter.
  • 3 tablespoons flour.
  • 1 cup Brown Stock.
Instructions
  1. Heat tomatoes to boiling point; add soda and the seven ingredients following.
  2. Cook twenty minutes.
  3. Rub through a purée strainer, add stock.
  4. Brown butter in a sauce-pan, add flour and continue browning, stirring constantly.
  5. Add hot tomato mixture slowly, mix well, and pour over Macaroni.

 

Cheese Sauce

Ingredients
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • Pepper to taste
  • ½ tsp. salt
  • 1 C. milk
  • 1 C. American Cheese, shredded
Instructions
  1. In a sauce pan, combine butter, flour and milk.
  2. Cook over medium heat until the mixture has thickened.
  3. Remove from heat.
  4. Add remaining ingredients and stir until the cheese has melted.
Notes
Goes great over vegetables or elbow macaroni for Mac and Cheese.
