Popovers

Ingredients
  • 1 C. flour
  • ½ tsp. salt
  • 1 C. milk
  • 1 tbsp. melted butter
  • 3 eggs
Instructions
  1. Preheat the over to 450 degrees.
  2. Combine all ingredients in a bowl and mix well.
  3. Pour into buttered popover cups or standard size muffin tins until ½ full.
  4. Once the oven reaches temperature, put the popovers in the middle of the oven.
  5. Bake for 15 minutes and reduce the temperature to 350 degrees. DO NOT OPEN THE OVEN.
  6. Continue to bake for 20-30 minutes or until golden brown and dry to the touch. If you want the popovers to retain their shape, cook for an additional 5 minutes.
Notes
For cheese popovers, add ¼ cup shredded cheese to the mix. For herb popovers, add 1½ tsp. of your favorite herbs. Serve hot with honey butter.

Ingredients
  • 1 C. sugar
  • ½ C. water
  • ⅓ C. butter
  • ⅓ C. dry milk
Instructions
  1. In a saucepan, combine sugar,. water and butter.
  2. Bring to a boil, stirring constantly.
  3. Put in a blender and add dry milk.
  4. Blend until smooth.
  5. Recipe yields 14 oz. which is equal to one can.

Ingredients
  • 2 C. rolled oats
  • 1 C. brown sugar
  • ½ C. melted butter
  • 1 tsp. baking powder
  • 1 egg, beaten
Instructions
  1. Preheat the oven to 400 degrees.
  2. Mix oats and baking powder together.
  3. Slowly add melted butter, sugar and egg to the oats.
  4. Mix thoroughly.
  5. Drop rounded teaspoons of dough on a wax-paper lined cookie sheet about three inches apart. Cookies will spread out.
  6. Bake for 6-7 minutes or until the cookies are brown around the edges.
  7. Allow to cool before removing from tray.
  8. Dust with powdered sugar.

Ingredients
  • 1 box cake mix (Any kind)
  • 8 oz. cool whip
  • 1 egg
  • Powdered sugar
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine cake mix, cool whip and egg.
  3. Mix thoroughly.
  4. Drop spoonfuls of mixture into powdered sugar to coat.
  5. Bake at 350 for 12 minutes.
  6. Allow to cool before removing from tray.

Ingredients
  • ½ C. shortening
  • 1 egg
  • 6 Tbsp. cocoa powder
  • ½ tsp. salt
  • ½ C. milk
  • 1 C. brown sugar
  • 1 tsp. vanilla
  • 1⅔ C. flour
  • ½ tsp. baking soda
Instructions
  1. Preheat the oven to 350 degrees.
  2. Mix all ingredients together.
  3. Drop by tablespoons onto a greased cookie sheet.
  4. Bake at 350 for 10-12 minutes
  5. Frost with buttercream frosting.

 

Apple Crisp

Ingredients
  • ½ C. flour
  • ½ C. rolled oats
  • 1 C. brown sugar
  • ⅓ C. butter
  • Apples
  • Cinnamon and Nutmeg to taste
Instructions
  1. Cover the bottom of a casserole dish with sliced apples approximately ½ Inch thick.
  2. Mix remaining ingredients and pour over the opt of the apples.
  3. Bake in the oven at 350 degrees for ½ hour or until apples are soft.

Ingredients
  • 3 C. sugar
  • ½ C. vinegar
  • 2 Tbsp. butter
  • ½ C. water
  • 1 tsp. vanilla
  • ½ tsp. baking soda
Instructions
  1. Boil the sugar, vinegar, butter and water until the mixture turn brittle when dropped into cold water.
  2. Remove from heat and add vanilla and baking soda.
  3. Pour onto a buttered platter.
  4. Turn in edges when cool and pull until white and brittle.

 

Baked Spaghetti

Ingredients
  • 16 oz. spaghetti, cooked
  • 1 26 oz. can cream of mushroom soup
  • 1 can evaporated milk
  • 1 small onion, chopped
  • 1 small or ½ large green bell pepper, chopped
  • 1 small, or ½ large red bell pepper, chopped
  • Parmesan cheese to taste
  • shredded cheddar cheese
  • celery seed to taste
  • celery salt to taste
  • black pepper to taste
  • oil for sauteing vegetables
Instructions
  1. Preheat the oven to 350 degrees.
  2. Cook the noodles according to the package instructions.
  3. In a skillet, saute the onions and bell peppers and set aside.
  4. In a large bowl, combine the vegetables, soup, milk and seasonings together.
  5. In a large casserole dish, line the bottom with half of the prepared noodles.
  6. Pour half of the soup mixture over the noodles and top with Parmesan cheese.
  7. Repeat with remaining ingredients and top with shredded cheddar cheese.
  8. Bake for 1 hour or until all of the cheese is melted and begins to brown.

 

Cream Puffs

Ingredients
  • 1 c. hot water
  • ½ c. butter
  • 1 c. sifted all-purpose flour
  • ½ tsp. salt
  • 4 eggs, unbeaten
Instructions
  1. Bring water to boil in saucepan and add butter.
  2. Stir until all of the butter has melted.
  3. Add flour and salt all at once, stirring vigorously.
  4. Cook over low heat, stirring constantly for 3-5 minutes or until mixture has the consistency of mashed potatoes.
  5. Remove from heat and allow to cool for about 1 minute.
  6. Add eggs, one at a time, and beat thoroughly after each egg is added until the mixture is smooth.
  7. Drop heaping tablespoons of the dough 2 inches apart on greased cookie sheet.
  8. Shape into rounds.
  9. Bake for 10 minutes at 450 degrees then reduce heat to 400 degrees and bake and additional 20 to 25 minutes.
  10. To make the filling, mix together the following ingredients:
  11. pkg. instant vanilla pudding
  12. c. milk
  13. c. heavy cream
  14. tbsp. powdered sugar
  15. Cool puffs completely and fill the centers with the filling. Use a syringe or pastry bag to fill.

 

Frito Pie

Ingredients
  • 1 lb. lean ground beef
  • 1 can (16 oz) chili beans
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) diced tomatoes
  • 1 envelope taco seasoning
  • 1 C. cheddar cheese, shredded
  • 3½ cups Frito brand corn chips
  • 1¼ cup sour cream
Instructions
  1. preheat oven to 350 degrees.
  2. Cook ground beef until meat is browned and drain off the excess grease.
  3. Stir in beans, tomato sauce, diced tomatoes, taco seasoning mix and ¼ c. of the shredded cheese.
  4. Sprinkle 1 cup corn chips in bottom of 8x8 baking dish.
  5. Cover with meat mixture.
  6. Bake at 350 for 20 minutes.
  7. Spread sour cream over chili.
  8. Top with remaining corn chips and cheese.
  9. Bake for an additional 4-5 minutes or until all of the cheese has melted.

 

Kentucky Biscuits

Ingredients
  • 2 C. flour
  • 1½ tsp. baking powder
  • ½ tsp. baking soda
  • 2 Tbsp. sugar
  • dash of salt
  • ½ C. butter
  • ¾ C. buttermilk
Instructions
  1. Preheat oven to 400 degrees.
  2. Mix dry ingredients.
  3. Cut in butter, add milk and knead into soft dough. Do not over knead!
  4. Pat into a ungreased pie pan.
  5. Cut into wedges (like a pizza) before you cook.
  6. Bake at 400' for 15 to 20 minutes or until done and golden brown.

 

Ranch Dressing Mix

  • ¼ C. powdered buttermilk
  • 3 Tbsp. dried minced onion
  • 1 tsp. salt
  • 3 Tbsp. dried minced parsley
  • 1 Tbsp. dried minced chives
  • ½ tsp. garlic powder
  • ½ tsp. ground celery seed
  • ½ tsp. pepper
Instructions
  1. Put all ingredients in a bowl and mix well.
  2. Store in Jar with air-tight lid until ready to use.
  3. To Mix dressing: combine 1½ Tbsp. dry mix to ½ C. milk and ½ C. mayonnaise and mix well.

 

Old Fashioned Goulash

  • 1½ lbs ground beef
  • 1 can diced tomatoes
  • 1 small onion, diced
  • 1 can corn, drained
  • chili powder to taste
  • 1 pkg macaroni noodles
Instructions
  1. Cook noodles according to package directions.
  2. In a skillet, brown the meat and onions.
  3. Add remaining ingredients and heat until warm.
  4. Add the noodles and mix well.
  5. Serve.

 

Fried Okra

Ingredients
  • 1½ lbs. fresh okra
  • 1 egg, beaten
  • 2 Tbsp. water
  • 1 C. cornmeal
  • Salt and pepper to taste
  • Oil for frying
Instructions
  1. Wash, trim and cut okra into ½ inch slices.
  2. Mix the eggs and water together and toss okra slices in egg mixture.
  3. Add cornmeal, salt and pepper and mix well so that all pieces are well coated.
  4. Heat the oil in a pan and fry okra until golden brown.
  5. drain on paper towels and serve.
