Cream Puffs
CREAM PUFFS

Ingredients
- 1 c. hot water
- ½ c. butter
- 1 c. sifted all-purpose flour
- ½ tsp. salt
- 4 eggs, unbeaten
Instructions
- Bring water to boil in saucepan and add butter.
- Stir until all of the butter has melted.
- Add flour and salt all at once, stirring vigorously.
- Cook over low heat, stirring constantly for 3-5 minutes or until mixture has the consistency of mashed potatoes.
- Remove from heat and allow to cool for about 1 minute.
- Add eggs, one at a time, and beat thoroughly after each egg is added until the mixture is smooth.
- Drop heaping tablespoons of the dough 2 inches apart on greased cookie sheet.
- Shape into rounds.
- Bake for 10 minutes at 450 degrees then reduce heat to 400 degrees and bake and additional 20 to 25 minutes.
- To make the filling, mix together the following ingredients:
- pkg. instant vanilla pudding
- c. milk
- c. heavy cream
- tbsp. powdered sugar
- Cool puffs completely and fill the centers with the filling. Use a syringe or pastry bag to fill.
