Ingredients
  • 1 lb cubed chicken
  • 1 cup flour, ½ t salt and pepper place in a large bag
  • 2 T oil or butter
  • ½ c chopped onion
  • 1 clove garlic minced
  • 1½ c ketchup
  • 2 c water
  • 1 c chopped mushrooms with juice
  • basil, oregano, salt & pepper to taste (approx 1 t basil ½ t oregano)
  • 1 package egg noodles
  • Ricotta cheese(optional)
Instructions
  1. In a large bag, coat the cubed chicken with flour, salt and pepper.
  2. In a medium skillet, brown the chicken in 2 T oil or butter.
  3. Add all remaining ingredients to the chicken mixture and simmer 1½ hours.
  4. After 1 hour, boil a large pan of water and start cooking your noodles.
  5. After the noodles are cooked, drain.
  6. Combine the noodles with the ketchup mixture. Serve.
  7. You can compliment it with a side of Ricotta cheese.

Ingredients
  • 1 sm box each corn, rice, and wheat chex cereal
  • 3-4 c peanuts(or your favorite combination of nuts)
  • 1 bag of pretzel sticks
  • 1 lg box of cheese nibs
  • 1 Ib butter
  • ¾ c Worcestershire
  • ¼ c season salt
Instructions
  1. In a large roasting pan(I use my turkey roaster)mix all boxes of cereal, nuts, pretzels, and cheese nibs. I
  2. n a medium size sauce pan, melt butter, then add Worcestershire and season salt.
  3. Slowly drizzle sauce over the cereal mix 1 large spoonful at a time, constantly stirring making sure every piece gets coated.
  4. Preheat oven to 250. Place pan in oven, uncovered, for 2½ hours.
  5. You must stir every 15 minutes so mixture begins to dry out.
  6. When the mixture cools down it should be crispy, otherwise return to the oven and cook longer.
  7. I keep this in my basement cold storage room during the holidays. You can save your cereal packages and store the cool, dry mixture back in the box. This is a party favorite!

Ingredients
  • 1 c shortening
  • 1 c white sugar
  • 1 c brown sugar
  • 3 eggs
  • 1 c milk
  • 1 t vanilla
  • 2 t baking powder
  • 1 t baking soda
  • ½ t salt
  • 4½ cups flour
  • 1 sm pkg chocolate chips
Instructions
  1. Preheat oven to 375.
  2. In a large mixing bowl, add ingredients in the order listed.
  3. Mix well.
  4. Drop by spoonful onto a cookie sheet.
  5. Bake for 10-12 minutes.

 

Cherry Salad

Ingredients
  • 1 can cherry pie filling
  • 1 sm can crushed pineapple
  • 1 can sweetened condensed milk
  • 1 t lemon juice
  • 1 small container cottage cheese
  • ¼ c chopped walnuts
  • 1 12 oz container cool whip
Instructions
  1. In one bowl, mix cherry pie filling and pineapple together.
  2. In another bowl, mix sweetened condensed milk, lemon juice, cottage cheese, and nuts. Then add to cherry mixture.
  3. Fold in Cool Whip. Chill.

Ingredients
  • 21 ounces cherry pie filling, divided
  • 1½ c boiling water
  • 1 sm package jello gelatin, cherry flavored
  • 1½ c cold water
  • 4 c angel food cake, cubes
  • 3 c cold milk
  • 1 sm pkg instant vanilla pudding
  • 12 oz cool whip, divided
Instructions
  1. Reserve ⅓ cup cherry pie filling for garnish. Set aside.
  2. Stir boiling water into dry jello mix in large bowl at least 2 minutes until completely dissolved, then stir in cold water and remaining cherry pie filling.
  3. Refrigerate 45 minutes or until slightly thickened.
  4. Place cake cubes in a 3 quart serving bowl.
  5. Spoon jello mixture over cake.
  6. Refrigerate 45 minutes or until set but not firm.
  7. Pour milk into large bowl and add dry pudding mixes. Beat with wire whisk 2 minutes. Gently stir in 2 cups of the cool whip.
  8. Spoon over jello mixture in bowl.
  9. Refrigerate 2 hours or until set.
  10. Top with remaining cool whip and reserved cherry pie filling.

Ingredients
  • 1 18 oz package chocolate cake mix(DO NOT follow package instructions)
  • 3 eggs
  • 1 t almond extract
  • 1 21 oz can cherry pie filling
  • 1 c granulated sugar
  • 5 T butter
  • ½ c milk
  • 1 6 oz package chocolate chips
Instructions
  1. Heat oven to 350. Combine cake mix, eggs and cherry fruit filling, blend well.
  2. Pour into greased and floured 9 × 13 pan or Bundt pan.
  3. Bake 25 to 40 minutes or until cake springs back when lightly touched.
  4. Frosting: After cake cools, combine sugar, butter and milk in small pan, bring to boil, stirring constantly.
  5. Cook 1 minute, remove from heat.
  6. Stir in chocolate pieces until melted and smooth.
  7. Spread or drizzle on cake.

Ingredients
  • 1 pound bulk Italian sausage
  • 1 large onion, chopped
  • 1 10 oz pkg frozen chopped spinach, thawed and squeezed dry
  • 1 8 oz pkg cream cheese, cubed
  • 1 egg, lightly beaten
  • 2 cups shredded mozzarella cheese, divided
  • 2 cups shredded cheddar cheese
  • 1 c cottage cheese
  • 1 c grated Parmesan cheese
  • ¼ t salt
  • ¼ t pepper
  • ⅛ t ground cinnamon, optional
  • 24 jumbo pasta shells, cooked and drained
  • SAUCE:(or use your favorite pasta sauce)
  • 1 lg (29oz) can tomato sauce
  • 1 T dried minced onion
  • 1½ t dried basil
  • 1½ t dried parsley flakes
  • 2 garlic cloves, minced
  • 1 t sugar
  • 1 t dried oregano
  • ½ t salt
  • ¼ t pepper
Instructions
  1. In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Transfer to a large bowl. Stir in the spinach, cream cheese and egg. Add 1 cup mozzarella cheese, cheddar cheese, cottage cheese, Parmesan cheese, salt, pepper and cinnamon if desired.
  2. Stuff pasta shells with sausage mixture. Arrange in a large baking dish coated with cooking spray. Combine the sauce ingredients; spoon over shells.
  3. Cover and bake at 350° for 45 minutes. Uncover, sprinkle with remaining mozzarella. Bake 5-10 minutes longer or until bubbly and cheese is melted. Let stand for 5 minutes before serving. These can be frozen.

  • 1 lb Velveeta cheese melted
  • 1 sm can green chilies
  • 1 sm can rotel tomatoes(I like to use the hot ones)
  • 1 bunch chopped green onions
  • ½ c sour cream
Instructions
  1. Combine all ingredients.
  2. Microwave until melted.
  3. Serve with your favorite corn chip.
  4. You can put this mixture in a fondue pot for parties.

  • 1 8 oz pkg softened cream cheese
  • ⅓ c sugar
  • ½ c sour cream
  • 1 t vanilla
  • 1 4 oz container Cool Whip
  • 1 graham cracker crust
  • 1 bottle of caramel ice cream topping or your favorite topping

  1. Mix all ingredients until blended well.
  2. Pour in graham cracker crust and chill for approx 4 hours.

  • 1 pkg cream cheese
  • 1 bunch chopped green onions
  • garlic powder to taste
  • Worcestershire sauce to taste
  • 1 pkg thin deli sliced lunch meat chopped in very small pieces.
  • Accent salt to taste
Instructions
  1. Once the cheese mixture is mixed well, form into a ball.
  2. Roll the ball into the meat and salt mixture.
  3. Serve with your favorite crackers.

  • 1 sm box krispex cereal
  • 1 sm box golden grahams cereal
  • 1 c shredded coconut
  • 1-2 c peanuts or cashews
  • 1 c corn syrup
  • 1 c sugar
  • ¾ c butter
Instructions
  1. Bring the corn syrup, sugar and butter to a boil for 2-3 minutes.(boil to a softball)
  2. Place cereal mix and coconut in a large mixing bowl and pour corn mixture over.
  3. Stir until totally coated.
  4. Spread on a cookie sheet and let cool.

  • 1 c sugar
  • 1 c brown sugar
  • 4 eggs
  • 1 c oil
  • 1 t salt, soda, and cinnamon
  • 1 t baking powder
  • 3 c grated carrots
  • 2 c flour
  • 1 c chopped walnuts (optional)

  1. Beat the first six ingredients together. Then add carrots, continue mixing and add flour and walnuts. Pour into a 13 × 9 pan and bake at 350 for 35-40 Min.

  • 1 frozen banana
  • ¾ c orange juice, pineapple juice, or white grape juice
  • 2 cups fresh fruit(pick your favorites; grapes, strawberries, blueberries, raspberries, pears, apple slices, kiwi, or pineapple)
  • This is a great way to use leftover fruit salad.
Instructions
  1. Blend all the fruit and juice in a blender until smooth. Serves 1 large or 2 small. Enjoy!

  • ½ Ib butter
  • 2 c light corn syrup
  • 2 c sugar
  • 2 cans sweetened condensed milk
  • ½ c sifted flour
  • 1 t vanilla
Instructions
  1. In a medium size pan, melt butter.
  2. Add corn syrup and sugar.
  3. Bring to a boil, and boil for 6 minutes, stirring constantly.
  4. Add 1½ cans of sweetened condensed milk. In a separate bowl, pour remaining sweetened condensed milk and add flour mixing well.
  5. Then slowly add to the heated mixture.
  6. Bring to a boil.
  7. Cook until 240 degrees or until it forms a medium hard ball, stirring constantly.
  8. Pour into a well buttered 9×13 pan.
  9. Let cool.
  10. Cut into desired size.
  11. I like 1 inch pieces. Wrap in plastic wrap or wax paper.
  12. Makes 5 dozen.

Ingredients
  • 1 8 oz bag puff corn
  • 1 c butter(do not substitute)
  • 1 c brown sugar
  • ½ c light corn syrup
  • 1 t baking soda
Instructions
  1. Place puff corn in a large roaster pan.
  2. In a medium sauce pan bring the butter, sugar & corn syrup a boil, then cook for 2 minutes.
  3. Add the baking soda; this will cause the caramel mixture to foam up.
  4. Stir well and remove from heat.
  5. Pour over puff corn in roasting pan and bake at 250 oven for 45 minutes, stirring every 10-15 minutes.
  6. Remove from oven, spread out onto wax paper to cool.
