Lobster Newburg

Ingredients
  • 4 tbsp. butter
  • Meat of 1 (2-3 lb.) boiled lobster
  • 2 tbsp. flour
  • 1½ c. milk
  • Salt,
  • paprika,
  • slight grating of nutmeg
  • ½ c. cream
  • 2 egg yolks
  • 2 tbsp. sherry
Instructions
  1. Melt half the butter and cook lobster in it for three minutes.
  2. Remove lobster, add remaining butter and blend flour smoothly with it.
  3. Scald and add milk and bring again to boiling point, stirring constantly.
  4. Add seasonings and lobster.
  5. Cook five minutes, beat and add cream, egg yolks, and sherry.
  6. Cook 2 minutes without boiling.

 

Crabcakes

Ingredients
  • 1 lb. crab meat
  • 3 tbsp. all purpose flour
  • ¼ tsp. baking powder
  • 4 shakes Worcestershire sauce
  • 1 egg
  • 1 tbsp. parsley
  • 1 tbsp. prepared mustard
  • 2 tbsp. mayonnaise
  • ¾ c. vegetable oil
Instructions
  1. Place crab meat in a bowl and add the flour, baking powder, Worcestershire, egg, parsley, mustard and mayonnaise; blending gently.
  2. Pour about 1 inch of oil into a skillet. Heat over medium-high heat. When a drop of water splatters when in contact with the oil, it is hot enough to fry crab cakes.
  3. Form crab cakes into balls and flatten into a patty. Fry until golden brown, about 3 minutes. Turn and fry on other side until brown. Remove crab cakes and drain on paper towels. Repeat until all the crab meat is used.

 

Crispy Flounder

Ingredients
  • 2 tbsp. skim milk
  • 1 tbsp. low sodium soy sauce
  • ¼ tsp. garlic powder
  • 1 egg white, lightly beaten
  • 4 (4 oz.) skinned flounder fillets
  • ⅓ c. fine dry bread crumbs
  • ¼ c. grated Parmesan cheese
  • 1 tsp. vegetable oil, divided
  • Lemon wedges
Instructions
  1. Combine first 4 ingredients in a large shallow dish; stir well. Add fish, turning to coat. Marinate in refrigerator 15 minutes, turning fish once. Remove fish from marinade.
  2. Combine the bread crumbs and cheese in a large zip top plastic bag. Add fish fillets shake to coat.
  3. Heat ½ teaspoon oil in a large nonstick skillet over medium heat until hot. Add 2 pieces fish, and cook 2½ minutes on each side or until fish flakes easily with a fork.

 

Shrimp Marinara

Ingredients
  • 1 c. coarsely chopped onion
  • ¼ c. olive oil
  • 2 tsp. dried basil, crushed
  • 2 lb. peeled, deveined, lg. shrimp
  • 2 cloves garlic, minced
  • 2 (28 oz.) cans Italian tomatoes
  • 2 tsp. dried oregano
Instructions
  1. In a large saucepan, cook onion and garlic in hot oil, stirring occasionally, until onion is tender.
  2. Cut up tomatoes. Add tomatoes and juice, basil and oregano to onion mixture. Bring to a boil.
  3. Reduce heat and simmer, uncovered, 30-40 minutes, stirring occasionally, until most of liquid is evaporated. Stir in shrimp. Cook, stirring occasionally, 5 minutes or until shrimp are done.

 

Crab Rangoon

Ingredients
  • 1 can (6½ oz.) crab meat, drained and flaked
  • 1 pkg. (8 oz.) cream cheese, softened
  • 2 green onions, chopped
  • 1 tsp. Worcestershire sauce
  • ¼ tsp. garlic powder
  • ½ tsp. soy sauce
  • 1 pkg. won ton skins
  • Vegetable oil for deep-fat frying
Instructions
  1. In a mixing bowl, combine all ingredients except won ton skins and oil.
  2. Place 1 teaspoon filling in the center of each won ton skin.
  3. Moisten edges with water. Fold each skin in half to form a triangle; press edges to seal. Pull bottom corners of triangle down and overlap slightly.
  4. Moisten corner with water and press to seal.
  5. Heat oil to 375 degrees.
  6. Deep-fry several won tons at a time, turning once, until both sides are golden brown.

  • 1 lb. crabmeat
  • 1 egg
  • 1 c. mayonnaise
  • 2 tsp. Worcestershire
  • 6 dashes Tabasco
  • ½ tsp. salt
  • ¼ tsp. thyme
  • ½ tsp. dry mustard
  • 3 tbsp. chopped parsley
Instructions
  1. Mix all together and spread thin.
  2. Brush top with ⅓ stick of melted butter and sprinkle with paprika.
  3. Bake 375 degree oven for 20 minutes.

Ingredients
  • 1½ lb. firm scaled fish fillets
  • ¼ c. flour3 tbsp. butter
  • 3 tbsp. cooking oil
  • 1 tbsp. blackened fish seasoning
Instructions
  1. Lightly dust the fillets with flour.
  2. Heat the butter and oil in a large, heavy frying pan over medium-high heat.
  3. Add the flour-covered fillets and cook 3 minutes on one side, turn, and sprinkle seasonings evenly over the browned side.
  4. Cook another 3 minutes and turn, sprinkling this side with seasonings.
  5. Turn the heat to high and sear each side for about 2 minutes.

 

Linguine with White Clam Sauce

  • 1 lb. linguine, cooked and drained
  • ½ c. olive oil
  • 1 c. onion, chopped
  • 4 garlic cloves, minced
  • 2 cans clams, minced, with liquid
  • ½ c. white wine
  • 1 tbsp. parsley flakes
  • ½ tsp. oregano
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ½ tsp. sweet basil
Instructions
  1. Heat oil in skillet and simmer with onion and garlic until golden.
  2. Add clams, wine and seasonings, and simmer 5 minutes.
  3. Pour sauce over cooked and drained linguine.

 

Baked Halibut

Ingredients
  • 1 ½ lbs. halibut cut into pieces
  • 1 egg beaten
  • Cracker crumbs
  • Salt and pepper
Instructions
  1. Mix all ingredients together.
  2. Dip halibut in cracker mixture.
  3. Brown halibut in frying pan with shortening.
  4. Place in an oven safe dish and cover and bake in 350 degrees for about 45 min.

 

Crab Salad

  • 1 loaf of sandwich bread
  • 8 eggs, hard boiled
  • 1 onion, diced
  • 2 C. Celery, diced
  • 1 lb. imitation crab meat
  • 1 can shrimp
  • 2 ½ C. miracle whip or mayonnaise
  • Squeeze of lemon
Instructions
  1. Cut off crust from the bread and cube.
  2. Mix bread, eggs and onions and let stand overnight if possible.
  3. Add remaining ingredients and serve.

 

Clam Chowder

Ingredients
  • 1 C. Onion, finely chopped
  • 1 C. Celery, finely chopped
  • 2 C. Potatoes, finely chopped
  • 2 cans minced clams and juice
  • C. butter
  • C. flour
  • 1 qt. half and half cream
  • 1 ½ Tsp. Salt
  • Pepper to taste
  • 1 tsp. sugar
Instructions
  1. Drain juice from clams and pour over the vegetables in a very small saucepan.
  2. Add just enough water to cover the vegetables and cover the pan.
  3. Simmer over medium heat until barely tender.
  4. In a separate saucepan, melt the butter and add flour and cream and cook and stir until smooth and thick.
  5. Add the un-drained vegetables, clams and salt and pepper and continue to cook until clams are done.

 

Salmon Loaf

  • 1 can pink salmon
  • 1 small onion
  • 2 beaten eggs
  • Salt and pepper to taste
  • 1 Tbs. lemon juice
  • C. soda cracker crumbs
  • C. milk
Instructions
  1. Mix all ingredients and place in a greased loaf pan.
  2. Bake at 350 for 40 minutes to an hour covering for the first half.
  3. This recipe can also be made into patties by rolling in cracker crumbs and frying in pan with oil or grease.

  • 2 C. elbow macaroni noodles, uncooked
  • 12 ounces of tuna in spring water
  • 2 cans cream of chicken soup
  • 1 can sweet green peas
  • ½ C. of milk
  • mozzarella cheese, shredded
Instructions
  1. In a medium pot, bring water to a boil and cook noodles until they are tender.
  2. Preheat oven to 350.
  3. In a glass casserole dish, mix in remaining ingredients and spread an even layer of shredded cheese across the top.
  4. Bake for 25 minutes

  • 12-16 oz. salmon
  • 1 c. bread crumbs
  • ½ c. mayonnaise
  • 1 can cream of celery soup
  • 1 egg, beaten
  • ½ c. chopped onion
  • ¼ c. chopped green pepper
  • 1 tbsp. lemon juice
  • 1 tsp. salt
Instructions
  1. In a greased casserole dish, mix all ingredients and bake for 1 hour at 350 degrees.
