Ingredients
- 1 C. Onion, finely chopped
- 1 C. Celery, finely chopped
- 2 C. Potatoes, finely chopped
- 2 cans minced clams and juice
- C. butter
- C. flour
- 1 qt. half and half cream
- 1 ½ Tsp. Salt
- Pepper to taste
- 1 tsp. sugar
Instructions
- Drain juice from clams and pour over the vegetables in a very small saucepan.
- Add just enough water to cover the vegetables and cover the pan.
- Simmer over medium heat until barely tender.
- In a separate saucepan, melt the butter and add flour and cream and cook and stir until smooth and thick.
- Add the un-drained vegetables, clams and salt and pepper and continue to cook until clams are done.
