Ingredients
  • 3 c. chicken broth
  • 3 oz. uncooked regular rice (not minute rice)
  • 2 eggs
  • 3 tbsp. lemon juice
  • Dash of salt
  • Dash of pepper
Instructions
  1. In 2-quart saucepan, bring broth to a boil. Reduce heat, add rice, cover and simmer until rice is tender.
  2. In small bowl, beat eggs and lemon juice. Stirring constantly, add 1 cup of hot chicken broth. Stir mixture into soup in pan and heat. Do not boil! Season with salt and pepper.

Ingredients
  • 1 chicken, cut up
  • 4 cloves garlic, crushed
  • 1 tsp. peppercorn, crushed
  • 2 bay leaves, whole
  • ¼ c. soy sauce
  • 4 tbsp. vinegar
Instructions
  1. Saute garlic until light brown; add chicken, peppercorn, soy sauce, bay leaves for 10 minutes.
  2. Then add soy sauce and vinegar; cover for 1½ hours on low flame.

Ingredients
  • 4 boneless skinless chicken breasts
  • ¼ stick butter
  • 1 large onion
  • 1 green pepper
  • ¼ brown sugar
  • lettuce, tomato
  • sour cream
  • guacamole
  • cheese
  • tortillas
Instructions
  1. Slice chicken into long strips, place in pan with half of the butter.
  2. Cook until lightly browned.
  3. Stir in a small amount of water and the brown sugar.
  4. Cook until caramelized.
  5. Chop the pepper and onions into strips and sauté in a separate skillet with the remaining butter.
  6. Cook until onions are caramelized.

Ingredients
  • 1 lb. onions, peeled, quartered
  • 1 lb. zucchini, cut into chunks
  • 1 lb. peeled turnip, cut into chunks
  • 1 unpeeled butternut squash, cut in chunks
  • 1 (15 oz.) can crushed tomatoes
  • 1 pt. water
  • ¼ c. oil
  • ½ tsp. saffron
  • ½ tsp. turmeric
  • 1 pkg. frozen Lima beans
  • 1 bunch chopped coriander
Instructions
  1. In large saucepan, cook first four ingredients in oil and water, until it starts to soften, stirring occasionally.
  2. Add tomatoes, turmeric, saffron and cook on medium low for 15 more minutes.
  3. Add Lima beans and when heated through, sprinkle in coriander.

 

Spicy Chinese Noodles

Ingredients
  • 1 12 oz. Package fresh Chinese noodles
  • 1 bunch green onions, chopped
  • 1 medium cucumber, peeled, seeded and chopped
  • Sauce:
  • C. Smooth peanut butter
  • 1 tbsp. fresh peeled and minced ginger
  • 1 ½ tbsp. white vinegar
  • 2 tbsp. soy sauce
  • C. chicken broth
  • tsp. Asian hot chili oil
Instructions
  1. Combine sauce ingredients in a small pan and simmer until smooth. If the sauce is too thick, add more chicken broth. Remove from heat.
  2. Cook noodles in boiling water until tender. Fresh noodles cook very quickly.
  3. Drain the noodles and mix in the sauce. Add more broth if the needled seem dry.
  4. Add green onions and cucumber and toss well.
  5. Immediately prior to serving, garnish with cilantro and chopped peanuts.

 

Chili Rellanoes

Ingredients
  • 2 cans (4 oz.) each green chilies (chopped)
  • 3 c. (12 oz.) Monterrey Jack cheese, shredded
  • 1½ c. (6 oz.) sharp cheddar cheese, shredded
  • 2 eggs
  • 2 tbsp. milk
  • 1 tbsp. flour
Instructions
  1. Preheat oven to 375 degrees.
  2. Lightly grease a 9x9 casserole dish and alternate layers of cheese and chilies starting with cheese on bottom and ending with cheese on top.
  3. Beat eggs, milk and flour together.
  4. Pour egg mix over cheeses and bake for one hour.
  5. Allow to cool for 10 to 15 minutes before cutting into squares.

 

Italian Gravy

Ingredients
  • 16 oz. olive oil
  • 3 cans tomato paste
  • ¼ clove garlic, Minced
  • 3 tbsp. parsley
  • 1 tbsp. oregano
  • 3 lg. onions
  • 2 lg. cans water
  • 2 lg. cans tomato sauce
Instructions
  1. Fill a large sauce pan approximately ¼ inch with olive oil and add minced garlic clove.
  2. Heat on medium heat until oil is warm and whisk in tomato paste.
  3. Stir approximately 15 minutes and add 2 to 3 cans of water, onions, parsley, oregano.
  4. Mix well and keep on medium heat on stove top for 30 minutes.
  5. Add cans of tomato sauce, Mix well, cover with lid and let simmer on low heat for 2 hours. for thicher sauce, add flower to desired thickness.

 

Thai Peanut Sauce

Ingredients
  • 4 teaspoons vegetable oil
  • ½ cup minced red onion
  • 2 tablespoons minced garlic
  • ½ teaspoon hot chili pepper
  • 2 tablespoons sugar
  • 2 tablespoons vinegar
  • ⅓ cup peanut butter
  • 1 cup of water
Instructions
  1. In a blender, combine oil, onion, garlic and chili pepper and blend for 1 minute
  2. Pour into a saucepan and place over low heat and simmer for 10 minutes. Add peanut butter and mix well.
  3. Add water and let simmer for 10 minutes or until thickened.
  4. Stir in vinegar and sugar; continue to simmer for 2 more minutes.

Ingredients
  • 3 pounds skinless chicken breast
  • ¼ c. vinegar
  • 1 tbsp. soy sauce
  • 1 clove garlic, crushed
  • 8 whole peppercorns, crushed
Instructions
  1. Wash chicken. Cut chicken into serving pieces. Add vinegar to chicken in 4 quart saucepan. Add soy sauce and rest of ingredients. Cover and simmer chicken till cooked, approximately 30 to 45 minutes.
  2. Saute garlic clove in butter. When browned, add chicken without liquid. Fry till browned. Add liquid and simmer for 5 to 10 minutes.

Ingredients
  • 1 lb chicken, cut into chunks
  • 1 cup water chestnuts
  • 1 cup baby corn
  • 1 cup bean sprouts
  • 1 cup diced potato
  • 2½ cups coconut milk
  • 2 teaspoons red curry paste
  • 3 cups Jasmine rice
Instructions
  1. Cut chicken into chunks (about 2 inches). Add coconut milk, baby corn, water chestnuts, bean sprouts, and potatoes to a large cooking pot.
  2. Stir in curry paste and chicken. In a separate pot, boil rice. Cook curry for 10-15 mintues, stirring occasionally.
  3. Let sit 3-5 minutes, then serve over rice.

 

Samosas

Ingredients
  • 1 c. peas
  • 1½ tsp. chili powder
  • 1 tsp. salt
  • ¼ c. chopped cilantro
  • 1 lb. potatoes
  • 3 chopped onions
  • ⅛ tsp. turmeric
  • 1½ tsp. garam masala
  • 4 chopped green chilies
  • 4 tbsp. oil
  • Egg roll wrappers
Instructions
  1. Peel and boil and mash potatoes.
  2. Heat 4 tablespoons of oil and saute onions.
  3. Add chili powder, turmeric and salt. Fry one minute.
  4. Add potatoes and remaining ingredients except peas.
  5. Cook 3 minutes. Add peas and simmer 5 minutes.
  6. Remove from heat and chill.
  7. Separate egg roll wrappers. Cut into halves. Shape each half into a cone.
  8. Place the cold stuffing into the hollow cone.
  9. Wet your fingers and lightly wet the top edges then press them together so they do not split open during frying.
  10. Prepare all the samosas and then deep fry.

 

Baked Ziti

Ingredients
  • 1 lb. Italian sausage (cooked)
  • 1 lb. ziti noodles (cooked)
  • 1 (8 oz.) pkg. cream cheese
  • 1 (16 oz.) sour cream
  • 1 (16 oz.) cottage cheese, sm. curd
  • 1 c. shredded Mozzarella
  • 1 lg. jar spaghetti sauce
  • Parmesan cheese, grated
Instructions
  1. In a bowl mix cream cheese, sour cream and cottage cheese. Set aside.
  2. In another bowl combine noodles, sauce and sausage.
  3. In a large baking dish put ½ of the mixture of noodles, sauce and sausage. Then make a layer of all of the cream mixture. Then put the rest of the noodle mixture. Top with shredded Mozzarella and sprinkle with Parmesan. Bake at 350 degrees for 35-45 minutes.

  • 3 C/ chopped cold cooked potatoes
  • C. butter
  • 1 onion minced
  • 1 ½ C. chopped cooked cabbage
  • Salt and pepper
Instructions
  1. Crush potatoes slightly.
  2. Melt butter in a large skillet and lightly fry the onion.
  3. Mix in cabbage and potatoes and fry until both sides are a light brown.

Ingredients
  • 1 C. raw rice
  • 2 qt. Cold water
  • 2 tsp. salt
  • 1 ½ C. diced ham
  • C. butter
  • 1 tbs. onion
  • 1 ½ tsp. salt and pepper
  • 2 tbsp. soy sauce
  • 2 eggs beaten (add eggs last)
Instructions
  1. Bring water to a rapid boil and reduce heat.
  2. Boil without stirring for about 12 minutes.
  3. Drain and cover add remaining ingredients (eggs last) and serve.

 

Dutch Apple Cake

Ingredients
  • Dutch Apple Cake
  • 2 C. sifted flour
  • 3 tsp. Baking powder
  • 2 tbsp. sugar
  • tsp. salt
  • 1 egg well beaten
  • C. milk
  • 3 tbsp. Shortening
  • 1 tsp. cinnamon
  • 1 tbsp. milk
  • 2 C. apples, sliced
Instructions
  1. Sift flour with baking powder, sugar, and salt. Cut in ¼ C. shortening until mix is as fine as corn meal.
  2. Combine beaten egg and milk and add to flour mixture, mixing until soft dough is formed.
  3. Melt 3 tbsp. shortening and butter together add brown sugar, cinnamon, and milk, and mix well.
  4. Pour into 8x8 pan greased with shortening.
  5. Press apple slices into mix in circles. Spread dough over apples.
  6. Bake in 350 degrees oven for 50 to 60 min. serve upside down with whipped cream. Yield is 8 to 10 servings.
