Spicy Chinese Noodles

Ingredients
- 1 12 oz. Package fresh Chinese noodles
- 1 bunch green onions, chopped
- 1 medium cucumber, peeled, seeded and chopped
- Sauce:
- C. Smooth peanut butter
- 1 tbsp. fresh peeled and minced ginger
- 1 ½ tbsp. white vinegar
- 2 tbsp. soy sauce
- C. chicken broth
- tsp. Asian hot chili oil
Instructions
- Combine sauce ingredients in a small pan and simmer until smooth. If the sauce is too thick, add more chicken broth. Remove from heat.
- Cook noodles in boiling water until tender. Fresh noodles cook very quickly.
- Drain the noodles and mix in the sauce. Add more broth if the needled seem dry.
- Add green onions and cucumber and toss well.
- Immediately prior to serving, garnish with cilantro and chopped peanuts.
