Ingredients
  • 3 slices bacon
  • 1 C. chopped onion
  • C. chopped green pepper
  • 1 clove garlic chopped
  • 2 C. tomatoes canned
  • 1 ½ C. water
  • C. raw rice regular
  • tsp. chili powder
  • 1 tsp. salt
  • 1 tbs. brown sugar
  • 1 bouillon cube
  • 1 tbs. Worchester sauce
  • tsp. thyme
  • 1 bay leaf
Instructions
  1. Fry bacon pour off drippings but about 3 tbs. take bacon out brown onions, pepper and garlic.
  2. Add other ingredients.
  3. Crumble bacon into small bits and add to pan.
  4. Cover with tight lid and simmer 45 min. makes 6-8 servings.

Ingredients
  • ½ med. onion, chopped
  • 1 c. long grain rice
  • 1 tsp. salt, ground pepper
  • 2 tbsp. shortening
  • ½ green pepper, chopped
  • 8 oz. tomato sauce
  • 2 c. water
Instructions
  1. Melt shortening in skillet. Add onion, green pepper and rice and sauté.
  2. Add remaining ingredients and bring to a boil.
  3. Cover and let simmer until rice is cooked.

 

Swedish Meatballs

Ingredients
  • 2 lbs ground hamburger
  • 1½ teaspoon garlic powder
  • 1 teaspoon seasoning salt
  • ½ teaspoon pepper
  • ¼ cup plain bread crumbs
  • Sauce:
  • 1 bottle chili sauce
  • 1 jar grape jelly
Instructions
  1. Combine all ingredients and put in a casserole dish. Cook at 350 for 35 minutes.
  2. To make the sauce, combine 1 bottle of chili sauce and grape jelly in a saucepan and heat until jelly is melted.
  3. When meatballs are done, remove and drain. Coat meatballs with sauce before serving.

 

Basic Crepes

Ingredients
  • 3 eggs
  • 1½ c. flour
  • 2 tbsp. vegetable oil
  • ⅛ tsp. salt
  • 1½ c. skim milk
Instructions
  1. In mixing bowl, combine all ingredients and beat by hand until smooth and lump free.
  2. If possible, refrigerate for at least 1 hour.
  3. Put 2-3 tablespoons of batter in the bottom of a non stick skillet and flip when bottom is browned.

 

Chinese Chicken Salad

Ingredients
  • 4 c. chicken, cooked & diced
  • 1 c. celery, finely diced
  • 1 green pepper, diced
  • 1 pt. Italian salad dressing
  • 1 (5 oz.) can Chinese noodles
  • ¼ c. onion, chopped
  • 1 (5 oz.) can Mandarin oranges
  • 1 (15 oz.) can pineapple tidbits
  • ½ small jar mustard (not spicy)
Instructions
  1. Drain fruit and combine with chicken, celery, onion, green pepper.
  2. Add salad dressing and mustard.
  3. Blend well and let stand for at least 3 hours.
  4. Add Chinese noodles just before serving.

 

Spinach Timballo

Ingredients
  • 2 pkg. frozen, chopped spinach
  • ½ onion, chopped
  • 2 tbsp. butter
  • 4 oz. cream cheese
  • ⅓ c. bread crumbs, seasoned
  • ½ tsp. salt
Instructions
  1. Defrost and squeeze dry spinach.
  2. Cook onion and salt in butter until caramelizes. Mix onion, spinach, and cream cheese together.
  3. Butter a casserole dish and coat the sides and bottom with the bread crumbs.
  4. Fill with mixture and bake at 350 degrees for 25 minutes.

Ingredients
  • 1 large eggplant
  • 1 clove garlic, minced
  • ¼ tsp. salt
  • ¼ C. Parsley, finely chopped
  • 2 tbsp. tahini (sesame seed paste)
  • 2 tbsp. lemon juice
Instructions
  1. Preheat oven to 450 degrees F.
  2. Prick eggplant with a fork and place on a cookie sheet.
  3. Bake the eggplant for around 20 minutes until it is soft.
  4. Let the eggplant cool and cut it in half lengthwise.
  5. Drain off the liquid and scoop the pulp into a bowl.
  6. In a blender or food processor, process the eggplant until smooth and pour it into a mixing bowl.
  7. Mix in remaining ingredients.
  8. Garnish with additional parsley and Salt and pepper to taste.

 

Baked Manicotti

Ingredients
  • 1 lb. ricotta cheese
  • ½ lb. shredded mozzarella
  • ¾ c. grated Parmesan cheese
  • 2 eggs
  • 1 tsp. parsley
  • Salt & pepper to taste
  • 1 jar spaghetti sauce
  • 1 pkg. manicotti noodles
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients except spaghetti sauce and noodles.
  3. Stuff noodles with cheese mixture and arrange in the bottom of a glass casserole dish..
  4. Pour spaghetti sauce over top and sprinkle with Parmesan cheese.
  5. Bake for 35-45 minutes (until noodles are soft and cheese is melted).

 

Stuffed Rigatoni

  • 1 pkg. rigatoni noodles
  • 1 lb. ground beef
  • ½ c. bread crumbs
  • 1 can spinach, drained
  • 1 tsp. minced garlic
  • 1 small onion, chopped very fine
  • ½ c. grated Parmesan cheese
Instructions
  1. Mix all ingredients together and stuff into cooked rigatoni noodles.
  2. Place in a serving dish and pour hot spaghetti sauce over the top.
  3. Top with shredded cheese if desired.

 

Fettuccine Alfredo

Ingredients
  • 1 lb. fettuccine noodles
  • ½ c. butter
  • ⅔ c. heavy cream
  • 1 c. Parmesan cheese, grated
  • ¼ tsp. salt
  • pepper to taste
  • chopped parsley for garnish
Instructions
  1. Prepare noodles according to package directions.
  2. In a saucepan, heat butter and cream until butter is melted.
  3. Remove from heat and add Parmesan cheese, salt and pepper.
  4. Stir until sauce is smooth.
  5. Combine sauce and noodles and top with additional Parmesan cheese and parsley.

 

Scotch Egg

Ingredients
  • 1 lb. lean sausage
  • ½ c. bread crumbs
  • 1 egg, raw
  • 1 tbsp. barbecue sauce
  • 1 tbsp. flour
  • Salt & pepper to taste
  • 6 hard-boiled eggs
  • 1 egg, beaten (for coating)
  • Dry bread crumbs
  • Vegetable oil for frying
Instructions
  1. Mix sausage with the ½ cup bread crumbs, raw egg BBQ sauce and salt and pepper.
  2. Divide into 6 equal portions.
  3. Coat each of the hard boiled eggs with a little milk and form the sausage mixture around each egg.
  4. Brush a little bit of egg yolk on the sausage ball and roll in bread crumbs.
  5. Deep fry the eggs for 6 to 7 minutes in hot oil until they are brown. Make sure that the meat is cooked through.

 

Bruschetta

Ingredients
  • 5 medium tomatoes, diced
  • 3-4 cloves minced garlic
  • juice from ½ lime
  • ¼ c. extra virgin olive oil
  • 1 c. Parmesan cheese, grated
  • 1 tbs. fresh basil
  • salt and pepper to taste
Instructions
  1. In a large bowl, toss all ingredients together and allow to stand for several hours in the refrigerator.
  2. Spoon mixture onto toasted bread, and top with Parmesan cheese.
  3. Broil until cheese has melted.

Ingredients
  • 4 tbsp. butter
  • ¾ c. flour
  • ½ tsp. baking powder
  • 4 eggs
  • 1 c. milk
Instructions
  1. Melt the butter in a 2 quart oven proof bowl at 425 degrees.
  2. In a small bowl, combine the milk, flour, baking powder, and eggs.
  3. Beat continuously until batter is smooth and lump free.
  4. Pour batter into hot butter.
  5. Bake at 425 degrees for 18 minutes.
  6. DO NOT open oven door while baking. Top with butter and powder sugar.
