Ingredients
  • 1 (8 oz.) jar marinated artichokes
  • 1 box chicken flavor Rice-A-Roni
  • 1 celery stalk, chopped
  • 10 pitted black olives, diced
  • 1 green bell pepper, chopped
  • 1 sm. onion, finely chopped
  • 6 green onions (scallions), sliced
  • ½ c. mayonnaise or salad dressing
  • Salt and pepper, to taste
Instructions
  1. Cook rice as directed on box and allow to cool.
  2. Drain artichokes and retain the liquid.
  3. Mix the artichoke liquid with mayonnaise until creamy.
  4. Add remaining ingredients to the rice.
  5. Add mayonnaise mixture to the rice and allow to chill 4-5 hours before serving.

Ingredients
  • 1 C. almonds, blanched
  • ¾ C. sugar
  • ¼ lb. butter
  • ½ C. dark molasses
  • ½ C. crystallized ginger, chopped
  • 3 eggs
  • 3 C. flour
  • ½ tbsp. baking powder
  • 1 tbsp. cinnamon, ground
  • 1 tsp nutmeg, ground
  • ½ tsp cloves, ground
  • ½ tsp allspice, ground
  • 1 tsp. ginger, ground
  • ½ tsp. salt
Instructions
  1. To blanch the almonds, place in an 8 to 9 inch square pan and bake at 350 until golden brown. Let cool, coarsely chop, and set aside.
  2. In a large bowl combine sugar, butter, molasses, and ginger and mix until smooth.
  3. Add eggs, 1 at a time, beating after each addition.
  4. In a separate bowl combine the flour, baking powder, cinnamon, nutmeg, cloves, allspice and almonds.
  5. Combine both the wet mixture and the dry mixture.
  6. On two greased 12x15 inch baking sheets, use well-floured hands to pat dough into 4 flat loaves, spacing them evenly on sheets; each loaf should be about ½ inch thick, 2 inches wide and the length of the baking sheet.
  7. Bake at 350 until browned at edges and springy to touch, about 25 minutes.
  8. Let loaves stand on baking sheets until cool to touch, then cut into long, ½-inch thick diagonal slices. On baking sheets, arrange slices close together with a cut side down. Return to oven and bake at 350 until cookies are brown (about 15 minutes).
  9. Transfer cookies to a cooling rack and allow to cool completely.

Ingredients
  • ⅓ C. butter
  • 2 C. sugar
  • 4 eggs
  • 1 C. milk
  • 2-1/3 C. flour
  • 4 tsp. baking powder
  • ¼ tsp. salt
  • 2 squares chocolate melted
  • ¾ C. walnuts, chopped
  • ½ tsp. vanilla
Instructions
  1. Cream butter and sugar together.
  2. Beat egg yolks (retain the whites) until thick and fluffy and add to butter and sugar mixture.
  3. Add melted chocolate.
  4. Mix and sift flour, baking powder and salt and add to first mixture alternately with milk.
  5. Add nuts and vanilla and fold in the whites of eggs that have been beaten stiff.
  6. Turn into a well-greased tube pan and bake forty-five minutes in
  7. a moderate oven.
  8. Cool before frosting.

 

Vanilla Ice Cream

Ingredients
  • ¾ cup sugar.
  • ⅓ cup water.
  • 1 quart cream.
  • 1-1/2 tablespoons vanilla.
Instructions
  1. In a large pot, make a syrup by boiling the sugar and water for three minutes.
  2. Cool slightly and add to cream, add vanilla and pour into a brick shaped mold.
  3. Place in freezer and freeze or bury the mold in salt and ice and let stand for several hours.

 

Ham Glaze

  • 1 can frozen orange juice
  • ½ can crushed pineapple
  • ⅔ C. brown sugar
  • ½ C. sugar
  • ½ tsp. cloves
Instructions
  1. Combine all ingredients in a sauce pan and simmer until all of the sugar has dissolved.
Notes
This glaze works well with fish as well.

Ingredients
  • ½ lb. sausage, browned and drained
  • 1¼ C. Bisquick
  • ¼ C. margarine, softened
  • 2 tbsp. water, boiling
  • ½ C. half and half
  • 1 egg
  • 2 tsp. green onions (optional)
  • ¼ tsp. salt
  • ½ C. shredded cheese
Instructions
  1. Preheat the oven to 375
  2. Generously grease the inside of a muffin tin.
  3. Mix the Bisquick, margarine and water and mix until a dough forms.
  4. Place 1 tbsp. of dough into each of the muffin cups pressing it in the bottom and up the sides.
  5. Divide the sausage evenly into each of the cups.
  6. Mix the remaining ingredients except for the cheese and spoon about 1 tbsp. into each cup.
  7. Sprinkle cheese onto the tops of each cup.
  8. Bake at 375 for approximately 25-30 minutes or until the edges are brown and the center is set.

  • 8 slices white bread
  • ½ lb. ham, cubed
  • 2 C. sharp cheddar cheese, shredded
  • 8 eggs
  • 2 C. milk
  • ½ tsp. dry mustard
  • Salt and pepper to taste
  • Dash of garlic salt and Tabasco sauce.
Instructions
  1. Break bread into small pieces and place them in the bottom of a greased 9x13 pan.
  2. Spread cooked meat over the bread. Sprinkle cheese over the meat.
  3. In a bowl, combine the remaining ingredients and mix well.
  4. Pour the mixture over the meat and cheese.
  5. Cover and allow to sit in the refrigerator overnight.
  6. Next morning, uncover and bake at 325 for 60-92 minutes or until eggs are set.

  • 1 C. white sugar
  • 1 C. brown sugar
  • 2 eggs

  • 2 C. quick oats
  • 1 C. coconut flakes
  • 1 C. gum drops cut into small pieces

  1. Thoroughly cream the margarine and sugars together.
  2. Add eggs and vanilla and mix well.
  3. Sift in remaining ingredients.
  4. Roll mixture into small balls.
  5. Spoon onto a greased cookie sheet and press flat with a fork.
  6. Bake at 375 for 10-13 minutes.
  7. Makes 4 doz.

  • 3 C. flour
  • 2 tsp. baking powder
  • 3 C. oatmeal
  • 2 C. brown sugar
  • ½ tsp. salt
  • 1½ C. butter, softened
  • 2 C. raspberry jam
Instructions
  1. Stir together dry ingredients.
  2. Add butter and mix until crumbly.
  3. Pat ⅔ of the mixture into a 9x13 baking dish.
  4. Spread jam on top of mixture.
  5. Sprinkle the remaining crumb mixture on top.
  6. Bake at 375 for 30-35 minutes.
  7. Cut while still warm.

  • 1 C. eagle brand milk
  • 1 C. semi sweet chocolate chips

  • 1 lg. can pineapple juice
  • 1 sm. Can frozen lemonade (6 oz.)
  • 1 lg. can frozen orange juice (12 oz.)
  • Juice from 2 lemons
  • 1 tsp. almond extract
  • 1 tsp. vanilla flavoring
Instructions
  1. Bring sugar and water to a boil and then cool.
  2. Then add remaining ingredients.
  3. Freeze and serve with 2 quarts of 7- up or ginger ale.

Lumpia = Filipino Egg Rolls
Ingredients
  • 2 lbs. ground beef
  • 1 lb. ground pork
  • 4 carrots
  • 1 sm. Cabbage
  • 1 lb. bean sprouts
  • 2 med. Onions
  • 3 eggs
  • 3 tsp. salt
  • 2 tsp. Pepper
  • 1 pkg. lumpia wrappers (50 wrappers)
Instructions
  1. Brown ground beef and pork together.
  2. Drain off the fat.
  3. Chop carrots and cabbage and onions and mix it into the meat.
  4. Add remaining ingredients and mix well.
  5. Put 2 to 3 T. of mixture into wrapper, and roll the wrapper.
  6. Wet the ends of the rolled wrapper with your finger to seal the ends. You can also use a little egg on the edges to make them stick better.
  7. Deep fry the egg rolls in oil until light brown.
  8. Drain on paper towel and serve.

  • 2 chocolate bars
  • 2 cans evaporated milk
  • ½ gal. milk
  • 2 tsp. vanilla
  • Whole cinnamon stick
  • Whole cloves
  • Sugar
Instructions
  1. Boil 4 cups of water with the cinnamon and cloves for 10-15 minutes to flavor the water, and then add the chocolate bars.
  2. Let the chocolate melt and then add the sugar to the taste, and then add the milk.
  3. Let them boil and add the evaporated milk and vanilla.
