Ingredients
  • 8 slices of bacon
  • 1 c chopped onion
  • 4 cans pork and beans in tomato sauce
  • ¼ c brown sugar or more
  • 2 T Worcestershire sauce
Instructions
  1. In a large fry pan, brown bacon until crisp.
  2. Remove bacon and crumble.
  3. Saute onion in the bacon grease.
  4. Transfer the onion, bacon grease and crumbled bacon to a crock pot.
  5. Add all remaining ingredients.

 

Deep Fried Zucchini Strips

Ingredients
  • 1 medium zucchini
  • 2 large eggs, beaten
  • 2 T milk
  • ¾ c flour
  • ½ t seasoning salt
  • ¾ c cracker crumb(saltines) or your favorite bread crumbs
  • 2 cups extra virgin olive oil or vegetable oil(for deep frying)
  • 1 pkg Bearnaise sauce mix(Prepare contents of Bearnaise sauce according to package directions or make your own).
Instructions
  1. Wash and trim zucchini(DO NOT PEEL).
  2. Cut zucchini into about 2½” long by ½” thick strips, or ½” thick round slices.
  3. In a medium size mixing bowl, beat eggs and milk until fluffy.
  4. On a plate add flour, seasoning salt and mix well.
  5. On a separate plate, add finely crushed saltine crackers.
  6. With a fork, dip zucchini strips in egg mixture.
  7. Drop into flour mixture and coat all sides well.
  8. Dip again into egg mixture.
  9. Drop into crushed crackers and coat well.
  10. Heat olive oil to 325 F to 350 F in a medium size frying pan or use a deep fryer.
  11. Drop coated zucchini(a few at a time) in the hot oil and cook until lightly browned, about 2 minutes, turning once,(DO NOT OVERCOOK).
  12. Zucchini should be crunchy.
  13. Serve immediately with Bearnaise Sauce as a dip.

  • 2 eggs
  • 1½ c milk
  • 1 flour
  • ¼ t salt
  • ¼ t sugar
  • 1 t butter (browned butter is best)
  • 1 t vanilla (optional)
Instructions
  1. Mix all ingredients well. Cook in a lightly greased omelet pan.
  2. Serve with your favorite toppings.

  • 2 8 oz pkgs cream cheese
  • 1 lg can Rotel tomatoes(hot)
  • 2 sm cans diced green chilies
  • 1 sm can chili
Instructions
  1. Place all ingredients in a microwaveable bowl and cook slowly until heated.
  2. Serve with your favorite corn chips.

Ingredients
  • 12-15 medium potatoes, peeled and boiled until cooked through
  • 8 oz cream cheese
  • 1 c sour cream
  • 1 T butter
  • salt and pepper to taste
Instructions
  1. In a large mixing bowl, place cooked potatoes in the bowl and begin to mix/mashing them.
  2. Whip in all remaining ingredients.
  3. Then transfer to a large casserole dish.
  4. Cover and bake at 350 for 30 minutes or until heated.

  • 1 8 oz pkg cream cheese(cubed)
  • ½ c milk
  • 1 T chopped chives
  • 1 t lemon juice
  • ¼ t garlic salt
Instructions
  1. Heat all ingredients in a small sauce pan until smooth.
  2. Serve over baked potatoes, heated green beans, or cooked asparagus.

Ingredients
  • 10-12 chicken breasts
  • 1 can whole berry cranberry sauce
  • 1 pkg chopped pecans
  • 1 bottle Catalina dressing
  • 1 pkg dry onion soup mix
Instructions
  1. Place chicken in baking pan.
  2. Generously spread cranberry sauce over the chicken.
  3. Sprinkle pecans and onion soup mix over chicken.
  4. Pour Catalina dressing over top.
  5. Bake lightly covered with foil at 350 for 45 minutes.
  6. Uncover and bake for 15 more minutes.

Ingredients
  • 1 c flour
  • 1 c cornmeal
  • ¼ c sugar
  • 1 T baking powder
  • ¾ tsp salt
  • 1 cup milk
  • 2 eggs
  • ⅓ c oil
Instructions
  1. Preheat oven to 400.
  2. Combine dry ingredients in a large mixing bowl. In a small bowl, combine egg, milk and oil and whip with a fork.
  3. Take milk mixture and start pouring over the dry mixture, use a fork to barely moisten the dry mixture.
  4. Pour into a well greased 8×8 pan.
  5. Bake for 25 minutes.
  6. Serve with honey butter.

 

Classic Cocktail Sauce

Clam Chowder

Ingredients
  • 4 cups cubed potatoes
  • 1 c chopped onions
  • 1 c chopped celery
  • clam juice(drain off clams)
  • 4 cans clams
  • 2 pints half and half
  • 1 c milk
  • 1 cube butter
  • ¾ c flour
  • 1 t salt
  • 1 t pepper
  • 1 t sugar
Instructions
  1. In a large pot, fill pot with just enough water to cover potatoes, onions, celery and clam juice. Bring to a slow boil and cook until tender. Drain most of the water off in a bowl reserving the liquid. You can use this to adjust the thickness of your chowder.
  2. In a separate pan, add the drained clams, 2 pints half and half, and 1 cup milk. Bring to a boil and set aside.
  3. In a microwave safe bowl, melt 1 cube butter. Then add ¾ c flour, ½ t salt, ½ t pepper, and ½ t sugar.
  4. Add the butter mixture in with the half and half mixture making sure all the lumps are out. Then pour this mixture in with the potatoes. Simmer on low heat for 2 hours. If the chowder is too thick, you can add more milk.

 

Citrus Sweet Potatoes

Ingredients
  • 4-5 large yam sweet potatoes(boil and remove skins)
  • ½ c fresh squeezed orange juice
  • ½ c heavy cream
  • ⅓ c brown sugar
  • ¼ c butter
  • ½ t nutmeg and cinnamon
  • 1½ t salt
  • Topping: Combine in a small bowl.
  • ⅓ c chopped pecans
  • 3 T butter melted
Instructions
  1. Preheat oven to 350.
  2. In a large mixing bowl mash your cooked yams.
  3. Add all remaining ingredients except topping ingredients.
  4. Mix until blended then pour into a 9×13 casserole dish.
  5. Pour topping over the top and bake, uncovered, for 30 minutes or until hot.

 

Cilantro Ranch Dressing

Ingredients
  • 1 packet TRADITIONAL Hidden Valley Ranch mix (not BUTTERMILK)
  • 1 c mayonnaise
  • 1 c buttermilk
  • 4 tomatillos, remove husk, diced
  • ½ bunch of fresh cilantro
  • 1 clove garlic
  • juice of 1 lime
  • 1 jalapeno (I like it SPICY so I kept the seeds in it, if you like it mild, just remove the seeds)
Instructions
  1. Mix all ingredients together in the blender. Chill.
