Boston Baked Beans

Ingredients
  • 1 large onion, thinly sliced
  • ½ tsp. olive oil
  • 3 slices bacon, finely chopped
  • 24 oz jar beans, rinsed and drained
  • ½ tsp. onion powder
  • 28 oz can Pork and Beans
  • 1 tbsp. maple syrup
  • 1 c. ketchup
  • ⅓ c. BBQ sauce
Instructions
  1. Saute onion in with bacon and ½ tsp olive oil.
  2. In a 4-5 quart baking dish, combine Pork and Beans, ketchup, BBQ sauce, onion powder, maple syrup, onion and bacon.
  3. Bake, uncovered at 350F about 30-35 minutes.
  4. Stir 2-3 times during baking.

 

Caramelized Onions

Ingredients
  • 2 lg. onions (1 lb.)
  • 2 tbsp. salad oil
  • 2 tbsp. red wine vinegar
  • 1 tbsp. brown sugar
Instructions
  1. Cut onion into thick slices.
  2. In 10-inch skillet over medium heat, in hot oil, cook onion until tender.
  3. Stir in vinegar and brown sugar and cook until golden.

Ingredients
  • 1 lb. crab meat
  • 3 tbsp. all purpose flour
  • ¼ tsp. baking powder
  • 4 shakes Worcestershire sauce
  • 1 egg
  • 1 tbsp. parsley
  • 1 tbsp. prepared mustard
  • 2 tbsp. mayonnaise
  • ¾ c. vegetable oil
Instructions
  1. Place crab meat in a bowl and add the flour, baking powder, Worcestershire, egg, parsley, mustard and mayonnaise; blending gently.
  2. Pour about 1 inch of oil into a skillet. Heat over medium-high heat. When a drop of water splatters when in contact with the oil, it is hot enough to fry crab cakes.
  3. Form crab cakes into balls and flatten into a patty. Fry until golden brown, about 3 minutes. Turn and fry on other side until brown. Remove crab cakes and drain on paper towels. Repeat until all the crab meat is used.

 

Baked Sweet Potatoes

Ingredients
  • 6 large sweet potatoes
  • ½ c. Sugar
  • 1 qt. orange juice
  • 2 tbsp. cinnamon
  • 2 tbsp. nutmeg
  • ¼ tbsp. vanilla
  • 1 stick butter
Instructions
  1. Boil sweet potatoes, drain and cool. Peel off skins and slice lengthwise.
  2. Place in 2 layers in a casserole dish and sprinkle ¼ c. sugar on each layer.
  3. Place orange juice, butter, Cinnamon, Nutmeg and vanilla in a 2 qt. sauce pan and heat on medium. Stir until it reaches a soft boil and reduce heat to let simmer for about 5 minutes.
  4. Pour over sweet potatoes.
  5. Cover pan and bake for 50-60 minutes at 350 degrees. Uncover and bake for extra five minutes to brown top.

  • 1 pt. mayonnaise
  • 1 lb. Velveeta cheese
Instructions
  1. Mix together and bake at 350 degrees for ½ hour, then stir and bake another ½ hour.

  • ½ c. cashew nuts
  • 2 tart Granny Smith apples, diced and skinned

  3. Mix all ingredients and serve.

Ingredients
  • ½ c. honey
  • ¼ c. lemon juice
  • ¼ c. water
  • 3 tbsp. ketchup
  • 1½ tsp. garlic powder
  • ½ tsp. garlic salt
  • 1 tsp. ground ginger
Instructions
  1. Combine all ingredients in sauce pan. Heat to boiling and simmer for 5 minutes.
  2. Place 3 lbs chicken wings separated into a 9x13 baking dish. Pour sauce over wings. Marinate for

  4. Bake at 400 F for 1 hour, turning once.

Ingredients
  • 1 c. coarsely chopped onion
  • ¼ c. olive oil
  • 2 tsp. dried basil, crushed
  • 2 lb. peeled, deveined, lg. shrimp
  • 2 cloves garlic, minced
  • 2 (28 oz.) cans Italian tomatoes
  • 2 tsp. dried oregano
Instructions
  1. In a large saucepan, cook onion and garlic in hot oil, stirring occasionally, until onion is tender.
  2. Cut up tomatoes. Add tomatoes and juice, basil and oregano to onion mixture. Bring to a boil.
  3. Reduce heat and simmer, uncovered, 30-40 minutes, stirring occasionally, until most of liquid is evaporated. Stir in shrimp. Cook, stirring occasionally, 5 minutes or until shrimp are done.

  • ¼ c. butter
  • ¼ c. flour
  • 1 dash pepper
  • 2 c. milk
  • 2½ oz. dried beef, sliced
Instructions
  1. In medium saucepan, melt butter.
  2. Blend in flour and pepper. Stir in milk.
  3. Cook over medium heat until mixture boils and thickens, stirring constantly.
  4. Reduce heat. Tear beef into shreds; add to cream sauce and heat through.
  5. Great served over mashed potatoes.

 

Twice Baked Potatoes

Ingredients
  • 1 small yellow onion diced
  • olive oil
  • 5 baking potatoes
  • ¾ c. milk
  • 2 tbsp. butter
  • 1 tsp. pepper
  • 4 oz. shredded cheddar cheese
Instructions
  1. Pre-heat oven to 350 place baking potatoes directly on oven rack and bake for 1hour 20minutes.
  2. Meanwhile, cover the bottom of a skillet or frying pan with olive oil add onions to oil and saute until tender (About 5 minutes) Remove onions from heat; drain excess oil. Add onions to medium mixing bowl.
  3. When potatoes are done, take out of the oven and cut the top ¼ off of each potato (the long way) Scoop potato out of the shell and into mixing bowl with the onions. Add milk, butter, and pepper to mixture. With mixer, combine ingredients until well blended. Add cheese and mix with spoon.
  4. Place potato mixture into a medium sized plastic bag. Twist bag, with scissors, clip the corner off the end of the bag. Squeeze the potato into each shell. Place filled shells on cookie sheet and bake another 20 minutes, or until cheese is melted and light brown crust forms on top of potatoes.

Ingredients
  • 2-3 c. of bread
  • milk
  • 2 eggs
  • ¾ c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
Instructions
  1. Break up bread into crumbs and put in a large bowl.
  2. Add eggs, sugar, cinnamon and vanilla.
  3. Begin to mix in milk until you have a very thick cake-like batter.
  4. Spoon mixture into a well buttered 8 by 8 square pan and bake for about 30 minutes at 350°F degrees.
  5. When cool, cut into squares and serve.

  • 1 c. raw rice
  • 2 tbsp. butter
  • 1 tsp. salt
  • 2¼ c. water
  • Pepper to taste
  • 1 chicken bouillon cube

  1. Combine all ingredients in a small greased casserole dish.
  2. Cover and bake in a preheated 350 degree oven for 1 hour, or until tender and all liquid is absorbed.

  • ½ lb. flat noodles
  • 2 tbsp. butter
  • 1 c. scallion, chopped
  • 1 tbsp. sesame oil
  • Soy sauce
  • Pepper
  • Garlic powder
Instructions
  1. Cook and drain noodles.
  2. Saute scallion for a few minutes.
  3. Add noodles and seasonings to skillet.
  4. Toss.
  5. Add soy sauce.
  6. Sprinkle with sesame seeds.

 

Taffy Apple Salad

Ingredients
  • 1 tbsp. flour
  • ½ c. sugar
  • 2 tbsp. vinegar
  • 1 beaten egg
  • 8 oz. crushed pineapple with juice
Instructions
  1. Cook all ingredients in a small sauce pan until thick and cool overnight.
  2. Next day, add: 8 oz. Cool Whip 1 c. chopped peanuts.
  3. Mix and chill.

 

Baked Corn

  • 1 lb. cream style corn
  • 1 c. Bisquick
  • 1 egg
  • ½ c. milk
  • 1 can green chilies
  • ½ lb. Monterey Jack cheese
Instructions
  1. Mix together and pour ½ in bottom of 8 x 8 pan (greased).
  2. Sprinkle drained chilies and cut up cheese over corn and pour remaining.
  3. Butter the top. Bake for 20 minutes at 400 degrees.
