Sweet Cherry Cake

Ingredients
  • 2 C. flour
  • 2 C. sugar
  • 2 tsp. baking soda
  • ½ tsp. salt
  • ½ C. nuts
  • 2 C. pitted sweet cherries
  • 2 tsp. cherry juice
  • 2 eggs
Instructions
  1. Combine all of the dry ingredients first and add the wet ingredients.
  2. Bake in a square pan at 350 for 45 minutes
  3. Topping:
  4. tsp. cornstarch
  5. C. brown sugar
  6. C. water
  7. tbsp. butter
  8. tsp. vanilla
  9. Combine all topping ingredients in a sauce pan and bring to a boil.
  10. Boil for two minutes.
  11. Pour cake while the cake is still warm.

Ingredients
  • 2 C. all purpose flour, sifted
  • 1 C. packed brown sugar
  • 1 tbsp. ground ginger
  • 1 tsp. Baking soda
  • ¼ tsp. salt
  • 1 C. butter
Instructions
  1. Mix dry ingredients well and using fingers combine with butter until crumbly.
  2. Press dough into a 9 inch cake pan.
  3. Bake at 325 for 45-60 minutes.
  4. Cut into wedges while still warm.

 

German Chocolate Cake Icing

Ingredients
  • 1 sm. can of condensed milk
  • 1 c. sugar
  • 3 egg yolks
  • ¼ lb. butter
  • 1 tsp. vanilla
  • 1 c. coconut flakes
  • 1 c. chopped pecans
Instructions
  1. Combine above ingredients except nuts and coconut.
  2. Cook and stir over medium heat until mixture thickens.
  3. Add coconut and pecans.
  4. Let cool and spread.

Ingredients
  • 2 c. sugar
  • 1½ c. flour
  • ⅓ c. cocoa
  • 2 tsp. vanilla
  • 1 c. chopped nuts
  • 1 lg. pkg. marshmallows
  • 1 c. shortening
  • 4 eggs
  • ¼ tsp. salt
Instructions
  1. Cream sugar and shortening.
  2. Beat in eggs by hand. Sift flour, cocoa and salt together.
  3. Add to creamed mixture.
  4. Add vanilla and nuts.
  5. Pour into a greased and floured oblong cake pan.
  6. Bake for 25 minutes in 300 degree oven.
  7. Sprinkle cake with rows of marshmallows.
  8. Increase oven to 350 degrees and bake for 10 minutes longer.
  9. Cool cake completely before icing.
  10. Frosting:
  11. box powdered sugar
  12. stick butter, melted
  13. /4 c. milk
  14. /3 c. cocoa
  15. tsp. vanilla
  16. Sift powdered sugar and cocoa.
  17. Add melted butter, milk and vanilla.
  18. Stir in nuts and spread on cake.

Ingredients
  • 1 egg
  • 2 c. yellow cornmeal
  • 1 tsp. salt
  • 1¼ c. milk
Instructions
  1. Beat 1 egg. Stir in 2 cups corn meal, 1 teaspoon salt, 1¼ cups milk.
  2. Drop spoonfuls of batter onto a well-greased hot griddle and fry to a golden brown on each side.
  3. Stir batter occasionally to keep well mixed. Serve hot with butter.

Ingredients
  • 1 c. butter, softened
  • 2 c. packed brown sugar
  • 2 tbsp. instant coffee powder
  • 1 tsp. ground cinnamon
  • ¼ tsp. salt
  • 6 eggs
  • 1 c. whole wheat flour
  • 1 c. all-purpose flour
  • ¼ c. milk
  • 2 c. chopped walnuts
  • Powdered sugar for garnish
  • Walnut halves for garnish
Instructions
  1. In a large bowl, cream butter, brown sugar, coffee powder, cinnamon and salt, beating until light and fluffy.
  2. Beat in eggs, one at a time, mixing well after each addition. In small bowl, combine flours.
  3. On low speed, mix ½ of the flour mixture into the creamed mixture, then the milk, then the remaining flour.
  4. Add chopped walnuts, mixing just until distributed. Pour into well-greased and floured tube pan.
  5. Bake in preheated 350 degree oven 50 to 60 minutes or until pick inserted in center comes out clean.
  6. Cool and remove from pan.
  7. Place on a wire rack to cool completely.
  8. Garnish with powdered sugar and walnuts.

 

Lemon Pineapple Fluff Cake

Ingredients
  • 1pk. Lemon cake mix
  • 8oz. crushed pineapple with juice
  • 1⅓ C. water
  • 1 Egg
  • C. oil
  • C. Sugar
  • 2 tsp. Vanilla Extract
Instructions
  1. Preheat oven to 350.
  2. Pour pineapple with liquid into ungreased 13x9x2 pan and spread evenly.
  3. Pour dry cake mix on top of pineapple.
  4. Combine water and other ingredients in a separate bowl for 1 minute at medium speed.
  5. Pour liquid over dry mix – do not stir.
  6. Bake at 350 for 30-35 minutes or until golden brown.

  • 1 C. brown sugar
  • 2 tbsp. margarine
  • 3 tbsp. shortening
  • tbsp. salt
  • C. canned milk
  • 2 C. powdered sugar
Instructions
  1. Stir together everything but the milk and bring to a boil.
  2. Add canned milk and bring to a boil.
  3. Let boil for three minutes and remove from heat.
  4. Let cool and add powdered sugar.

Ingredients
  • Dutch Apple Cake
  • 2 C. sifted flour
  • 3 tsp. Baking powder
  • 2 tbsp. sugar
  • tsp. salt
  • 1 egg well beaten
  • C. milk
  • 3 tbsp. Shortening
  • 1 tsp. cinnamon
  • 1 tbsp. milk
  • 2 C. apples, sliced
Instructions
  1. Sift flour with baking powder, sugar, and salt. Cut in ¼ C. shortening until mix is as fine as corn meal.
  2. Combine beaten egg and milk and add to flour mixture, mixing until soft dough is formed.
  3. Melt 3 tbsp. shortening and butter together add brown sugar, cinnamon, and milk, and mix well.
  4. Pour into 8x8 pan greased with shortening.
  5. Press apple slices into mix in circles. Spread dough over apples.
  6. Bake in 350 degrees oven for 50 to 60 min. serve upside down with whipped cream. Yield is 8 to 10 servings.

 

Jell-o Cake

  • 1 pkg. Cake Mix
  • 2 pkg. Jell-o any flavor
  • 1¼ C. Sprite
Instructions
  1. Make 1 package of cake mix and cool completely.
  2. When cooled, poke holes in cake with a straw.
  3. Make a jell-o mixture with 2 packages of jell-o and ¾ C. hot water and let cool. Mix in 1 ¼ C. sprite or 7up and let set until syrupy.
  4. Pour over cake and top with whipped cream.

  • 1 C. Shortening
  • 2 C. Sugar
  • 2 C. Warm applesauce
  • 2 eggs
  • 1 C. Raisins
  • 1 C. Nuts
  • tsp. Vanilla
  • 2 tsp. baking soda, dissolved in ½ C. warm water
  • 4 C. flour
  • 1 ½ tsp Cinnamon
  • tsp. cloves
  • 1 tsp. ginger
  • 1 tsp. nutmeg
Instructions
  1. Sift dry ingredients together and add remaining ingredients to make a cake batter.
  2. Place in greased cake pans and bake at 350 for 1 hour.

Ingredients
  • 2 C. white sugar
  • 1 ½ C. Oil
  • C. Brown Sugar
  • 1 can crushed pineapple with juice
  • 3 C. sifted flower
  • 3 Eggs
  • 2 tsp. baking powder
  • tsp. salt
  • 2 C. Grated raw carrots
  • 1 C. Raisins
  • 1 C. nuts
  • 1 tsp. cinnamon
  • 2 tsp. vanilla
Instructions
  1. Cream together sugar and oil.
  2. Add eggs one at a time and beat well after each.
  3. Add pineapple with juice.
  4. Sift flour and dry ingredients and add to creamed mixture. Add all other ingredients.
  5. Pour into a well greased pan and bake at 325 for 70 minutes.

 

Carmel Bundt Cake

Ingredients
  • 20 frozen dinner rolls
  • 1 small pkg. butterscotch pudding
  • ½ c. chopped pecans
  • ½ c. raisins
  • 6 tbsp. butter
  • ½ c. brown sugar
  • ¾ tsp. cinnamon
Instructions
  1. Lightly grease Bundt pan. Sprinkle nuts and raisins on bottom. Put in rolls and sprinkle with dry pudding mix. In a sauce pan, melt butter, brown sugar and cinnamon and pour over rolls and let rise for several hours. Bake at 350 degrees for 25 minutes.
  2. Immediately turn out the cake onto a clean serving dish.

 

Funnel Cake

Ingredients
  • 3-4 cups all purpose flour
  • 3 eggs
  • 2 cups milk
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • powdered sugar
  • vegetable oil (for deep frying - heat to 375°F)
Instructions
  1. Beat the eggs first and then add the sugar and milk. Sift 2 cups of flour, the salt, and the baking powder and add to the milk, sugar, and egg mixture. Add more flour until batter is smooth and not too thick.
  2. Pour the batter into a funnel or piping bag and use to pour the batter into the oil making a circle about 6 inches round. Be careful not to splash, the oil will be hot.
  3. Turn the cake when the bottom becomes golden brown.
  4. When both sides are done, remove and top with powdered sugar or cinnamon sugar.
