Pistachio Cheesecake

Ingredients
  • 18 Oreo cookies crushed
  • ¼ cup cold butter
  • 6 8 oz pkg cream cheese softened
  • 1 can sweetened condensed milk
  • 2 sm pkg instant pistachio pudding mix
  • 5 eggs
Instructions
  1. In a small bowl cut Oreos into butter until crumbly.
  2. Press onto the the bottom and 1-1/4 up the sides of the greased 10 inch springform pan.
  3. Bake at 400 for 10 minutes.
  4. In a large mixing bowl, beat cream cheese, milk and pudding mixes until smooth.
  5. Add eggs and beat on low speed just until combined.
  6. Pour over crust.
  7. Place pan on a baking sheet.
  8. Reduce heat to 350. Bake 55-60 minutes or until center is almost set.
  9. Cool on a wire rack for 10 minutes.
  10. Carefully run a knife around edge of pan to loosen.
  11. Cool 1 hour longer.
  12. Refrigerate overnight.
  13. Garnish with whipped cream and pistachios.

 

Lemon Pineapple Cake

Ingredients
  • 18¼ oz lemon cake mix
  • 6 egg whites
  • ⅓ c applesauce
  • 3½ oz instant vanilla pudding mix
  • 15 oz crushed pineapple with juice
  • 16 oz frozen whipped topping thawed
Instructions
  1. Prepare cake mix as directed, except substitute egg whites for eggs and applesauce for oil.
  2. Bake in a 9×13 inch pan as directed.
  3. Remove from oven and poke holes in the cake with a fork.
  4. Pour pineapple over cake as soon as your done.
  5. Cool.
  6. Frosting: Prepare instant pudding as directed. Fold in whipped topping. Let sit 10 minutes. Spread over cake.

 

Cherry Chocolate Cake

Ingredients
  • 1 18 oz package chocolate cake mix(DO NOT follow package instructions)
  • 3 eggs
  • 1 t almond extract
  • 1 21 oz can cherry pie filling
  • 1 c granulated sugar
  • 5 T butter
  • ½ c milk
  • 1 6 oz package chocolate chips
Instructions
  1. Heat oven to 350. Combine cake mix, eggs and cherry fruit filling, blend well.
  2. Pour into greased and floured 9 × 13 pan or Bundt pan.
  3. Bake 25 to 40 minutes or until cake springs back when lightly touched.
  4. Frosting: After cake cools, combine sugar, butter and milk in small pan, bring to boil, stirring constantly.
  5. Cook 1 minute, remove from heat.
  6. Stir in chocolate pieces until melted and smooth.
  7. Spread or drizzle on cake.

Ingredients
  • 1 c sugar
  • 1 c brown sugar
  • 4 eggs
  • 1 c oil
  • 1 t salt, soda, and cinnamon
  • 1 t baking powder
  • 3 c grated carrots
  • 2 c flour
  • 1 c chopped walnuts (optional)
Instructions
  1. Beat the first six ingredients together. Then add carrots, continue mixing and add flour and walnuts. Pour into a 13 × 9 pan and bake at 350 for 35-40 Min.

  6. powdered sugar-add enough to desired spreading consistency
  7. Sprinkle with chopped nuts and coconut.

 

Carmel Chocolate Cake

Ingredients
  • 1 chocolate cake mix (baked)
  • 1 can sweetened condensed milk
  • (you can substitute ½ bottle of butterscotch in place of the sweetened condensed milk)
  • ½ bottle caramel syrup
  • 1 8 oz container Cool Whip
Instructions
  1. Prepare your favorite chocolate cake mix and bake as directed.
  2. Remove from the oven and cool.
  3. Poke holes in the cake with a wooden spoon handle.
  4. Pour the sweetened condensed milk and syrup over the cake soaking it.
  5. Spread the Cool Whip on top. Chill for about 1 hour. If you want, you can add sprinkles or shave chocolate off from your favorite candy bar for decoration.

 

Better Than Sex Cake

Ingredients
  • 1 pkg devil's food, chocolate, or German chocolate cake mix
  • 1 can sweetened condensed milk
  • 1 bottle caramel ice cream topping
  • 1 (8 oz.) container frozen whipped topping, thawed
  • 4-5 Health or Skor bars, chopped up
Instructions
  1. Bake cake according to package directions for a 9×13 inch pan; cool for about 5 minutes.
  2. Using the handle of a wooden spoon, poke holes into the cake.
  3. Let the cake cool for a little while.
  4. Slowly pour sweetened condensed milk over the cake, letting it sink into the holes; then drizzle some of the caramel over the top of the cake.
  5. Let cake cool completely (I usually cover it and put it in the fridge for a while).
  6. Top cake with whipped topping. Decorate the top of the cake with candy bar chunks and swirls of caramel topping.
  7. Refrigerate a little longer, then serve!

 

Angel Fruit Cake

Ingredients
  • ½ c sweetened condensed milk
  • ½ c cold water
  • 1 pkg instant vanilla pudding
  • (do not follow pkg instructions)
  • 1 12 oz Cool Whip
  • 1 angel food cake cubed (set aside)
  • 1 pkg Danish Dessert (follow pkg instructions)
  • 2 Ib. sliced strawberries, leave one whole for final garnish
Instructions
  1. Mix the first 3 ingredients together until stiff.
  2. Fold in Cool Whip and place in the fridge for 30 minutes until chilled.
  3. After the mixture is chilled, reserve ¼ cup of the mixture for the final garnish.
  4. Prepare Danish Dessert and fold in strawberries.
  5. Place in fridge and chill until mixture starts to thicken, about 1 hour.
  6. In a nice glass bowl, layer pudding mixture, cake cubes, and strawberry mixture. Continue repeating these steps until all ingredients are gone.

 

Lemon and Orange Shortbread

Ingredients
  • 1 C. flour
  • ½ C. cornstarch
  • ½ C. butter, softened
  • ¼ C. powdered sugar
  • ½ lemon rind, grated
  • ½ orange rind, grated
Instructions
  1. Cream the butter and sugar together.
  2. Combine remaining ingredients and mix into the butter mixture.
  3. Roll out into an 8 inch circle and place on a greased baking sheet.
  4. Prick the top all over with a fork and flute the edges.
  5. Cut into 12 wedges and sprinkle with additional powdered sugar.
  6. Allow to set in the refrigerator for at least 15 minutes.
  7. Bake at 325 for 35 minutes or until golden brown.
  8. Allow to cook for at least 5 minutes before turning out on a wire rack.

 

Eggnog Cake

Ingredients
  • ½ cup butter, softened
  • 1-1/4 cups sugar
  • 3 eggs
  • ½ teaspoon vanilla extract
  • ½ teaspoon rum extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup eggnog
  • FROSTING:
  • ¼ cup all-purpose flour
  • ¼ teaspoon salt
  • 1-1/2 cups eggnog
  • 1 cup butter, softened
  • 1-1/2 cups confectioners' sugar
  • 1-1/2 teaspoons vanilla extract
  • Red and green gel food coloring, optional
Instructions
  1. In a large bowl, cream butter and sugar until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Add Rum and Vanilla extract.
  4. In a seperate bowl, combine the remaining dry ingredients and gradually add to creamed mixture.
  5. Add eggnog and mix well.
  6. Pour into two 9-in. round baking pans coated with cooking spray.
  7. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to wire racks to cool completely.
  8. For frosting, put eggnog in a small saucepan over low heat.
  9. Gradually whisk in flour and salt and increase heat.
  10. Bring mixture to a boil while whisking continuously for 2 minutes and remove from heat.
  11. Allow mixture to cool to room temperature.
  12. In a large bowl, cream butter and sugar until light and fluffy and gradually beat in the eggnog mixture and vanilla until smooth.

 

Royal Icing

  • 4 c. powdered sugar
  • ½ tsp. cream of tartar

  1. Beat all ingredients at high speed for 7 to 10 minutes or until stiff.

Ingredients
  • ⅓ C. butter
  • 2 C. sugar
  • 4 eggs
  • 1 C. milk
  • 2-1/3 C. flour
  • 4 tsp. baking powder
  • ¼ tsp. salt
  • 2 squares chocolate melted
  • ¾ C. walnuts, chopped
  • ½ tsp. vanilla
Instructions
  1. Cream butter and sugar together.
  2. Beat egg yolks (retain the whites) until thick and fluffy and add to butter and sugar mixture.
  3. Add melted chocolate.
  4. Mix and sift flour, baking powder and salt and add to first mixture alternately with milk.
  5. Add nuts and vanilla and fold in the whites of eggs that have been beaten stiff.
  6. Turn into a well-greased tube pan and bake forty-five minutes in
  7. a moderate oven.
  8. Cool before frosting.

 

Chocolate Souffle

Ingredients
  • 2 tbsp. butter
  • 3 tbsp. flour
  • ¾ c. milk
  • ½ c. semi-sweet chocolate chips
  • 4 egg yolks, beaten
  • 4 egg whites
  • ½ tsp. vanilla
  • ¼ c. sugar
Instructions
  1. Butter the sides of a 2-quart souffle dish. Sprinkle sides with a little sugar and set aside.
  2. In a small saucepan, melt butter.
  3. Stir in flour and milk.
  4. Cook and stir until thickened and bubbly.
  5. Add chocolate, stir until the chocolate is melted and remove from heat. Gradually stir chocolate mixture into beaten egg yolks, set aside. Do this slowly to prevent the eggs from beginning to cook.
  6. Beat egg whites and vanilla until stiff and gradually add in the remaining sugar.
  7. Gently fold the egg mixture into the chocolate mixture.
  8. Transfer to prepared dish.
  9. Bake in a 350 degree oven 35-40 minutes or until a knife inserted near center comes out clean.
  10. Serve at once with whipped cream.
