Ingredients
  • 2 tbsp. butter flavored Crisco
  • 2 eggs
  • 2 c. cornmeal
  • 1 c. all purpose flour
  • 1 tsp. sugar
  • whole milk
  • ½ tsp. salt
  • ½ tsp. pepper
  • 1 10" cast iron skillet
Instructions
  1. Mix together cornmeal, flour, sugar, salt and pepper. Add milk until you have the consistency of a cake batter. Add eggs and mix well.
  2. In the skillet, melt shortening. Move the skillet around until well coated.
  3. Pour the remainder into the batter and mix. Pour the batter into the skillet.
  4. Bake at 375 for 40 minutes or until light brown.

 

Pull Apart Onion Buns

Ingredients
  • 1½ loaves frozen bread dough, thawed
  • 1 package dry onion soup
  • 1 stick butter
  • ½ pound American cheese.
Instructions
  1. Slice loaf of dough into ½ inch slices, slice those in half again. Cut the American cheese into ½ inch cubes.
  2. Melt stick of butter in a shallow soup bowl. Stir in the dry onion soup and mix thoroughly.
  3. Take piece of dough and fold over cheese to form into balls. Place these in the butter/soup mixture and coat thoroughly.
  4. Put dough balls into a Bundt pan, covering the bottom of the pan in rows until all are in the pan. Let stand to rise.
  5. When bread balls are even with the top of the pan, bake in oven 350°F for 25 minutes. Cool before eating.

 

Banana Bread

Ingredients
  • 1 stick butter
  • 1 c. sugar
  • 2 eggs
  • ¾ c. mashed ripe bananas
  • 1¼ c. sifted self-rising flour
  • 1 c. nuts (optional)
Instructions
  1. Cream butter and sugar.
  2. Add eggs, one at a time, and beat.
  3. Add bananas and then the flour. Mix.
  4. Pour into greased loaf pan and bake at 325 degrees for 1 hour.
  5. When done, turn onto aluminum foil.
  6. Dot with butter and close foil allowing butter to melt.

Ingredients
  • 1 C. shortening
  • 2 C. sugar
  • 4 eggs
  • 2 C. flour
  • 2 tsp. baking soda
  • 1 C. nuts, chopped
  • 6 Ripe Bananas
Instructions
  1. Mix everything together and pour into two greased loaf pans.
  2. Bake at 300 for 1 hour.

Ingredients
  • 2 tbsp. yeast
  • 3 C. warm water
  • 2 tbsp. powdered milk
  • 2 tbsp. honey
  • 2 tsp. salt
  • 8-9 C. flour
Instructions
  1. Dissolve the yeast in the warm water, add salt milk and honey.
  2. Mix in the flour and divide into balls.
  3. Roll each ball into a log and put on a greased cookie sheet.
  4. Brush logs with butter, salt and Parmesan cheese.
  5. Cover and allow to rise in a warm oven for 15 minutes.
  6. Bake at 400 for 10 minutes.

  • 2 heaping tbsp. cornmeal
  • 1 cube butter, melted
  • ½ tsp. baking soda
  • 1 C. sugar
Instructions
  1. Mix all ingredients together.
  2. Pour into a greased 9x13 pan.
  3. Bake at 350 for 25-30 minutes.

Ingredients
  • 3 cans buttermilk biscuits
  • 1 C. sugar
  • ½ tbsp cinnamon
  • 1 cube butter, Melted
  • ¼ C. brown sugar
  • ¼ C. milk
Instructions
  1. Preheat oven to 350
  2. Mix cinnamon and sugar in a bowl.
  3. Dip biscuits in butter and roll in sugar and cinnamon.
  4. Lay biscuits sideways in a Bundt pan.
  5. Continue until all 30 biscuits are in the pan.
  6. Put butter, milk, cinnamon sugar mixture and brown sugar in a microwave safe bowl.
  7. Microwave until butter is melted.
  8. Pour melted mixture over the top of the biscuits.
  9. Bake at 350 for 40-45 minutes or until done.
  10. You can also add nuts or raisins to the mixture.

 

Humming Bird Bread

Ingredients
  • 3 C. flour
  • 2 C. sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 eggs, beaten
  • 1 C. oil
  • 1½ tsp. vanilla
  • 1 8 oz. can crushed pineapple, do NOT drain
  • 1 C. chopped pecans
  • 2 C. mashed bananas
Instructions
  1. Combine all of the dry ingredients and slowly add the remaining wet ingredients. Do not beat!
  2. Pour into 9/13 and 8x8 pans and bake at 350 for 25-30 minutes.
  3. Allow to cool completely.
  4. Frost with cream cheese frosting and sprinkle with chopped pecans.

  • 2⅔ C. sugar
  • 4 eggs
  • 2 C. pumpkin
  • 3½ C. flour
  • ⅔ C. water
  • ½ tsp. baking powder
  • 2 tsp. baking soda

  • 1 tsp. cinnamon
  • 1 tsp. cloves

  1. Mix all ingredients together and pour into 2 greased and floured loaf pans.

Ingredients
  • 2 tbsp. yeast
  • 4 C. warm water
  • 4 eggs
  • 2 tbsp coffee creamer
  • 6 tsp. salt
  • 8 tsp. sugar
  • 1 cube butter, melted
Instructions
  1. Disolve yeast in the warm water.
  2. Mix all ingredients together.
  3. Dough must be sticky for this to work.
  4. Add up to ½ C. more flour if needed.
  5. Roll out thick.
  6. Rise in a warm oven.
  7. Bake at 350 for 10 minutes.

 

Strawberry Bread

Ingredients
  • 3 eggs
  • 1½ C. oil
  • 3 C. flour
  • 2 C. sugar
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 C. frozen strawberries, thawed, with juice
Instructions
  1. Beat eggs until thick.
  2. Add sugar, oil and strawberries. Mix well.
  3. Add remaining ingredients and mix well.
  4. Grease and flour 3 medium loaf pans and fill each ¾ full.
  5. Bake at 350 for 1 hour or until toothpick comes out clean.
  6. Serve with Strawberry Cream Cheese.

 

Pineapple Zucchini Bread

Ingredients
  • 3 eggs
  • 1 C. oil
  • 2 C. sugar
  • 2 tsp. vanilla
  • 2 C. zucchini, grated
  • 1 8 oz. can crushed pineapple, drained
  • 3 C. four
  • 2 tsp. baking soda
  • 1 tsp. salt
  • ½ tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 C. nuts
  • 1 C. raisins
Instructions
  1. Mix all of the dry ingredients in one bowl.
  2. Mix all of the wet ingredients in another bowl.
  3. Combine both mixtures and mix well.
  4. Grease and flour to loaf pans and divide mixture between the two.
  5. Bake at 350 for 1 hour
  6. Leave in pan for an additional 10 minutes before turning out.
  7. To store and freeze, wrap in plastic wrap and then foil.

  • 2 C. flour
  • 1 C. sugar
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • ½ tsp. salt
  • 2 C. carrots, shredded
  • 1 large apple, shredded
  • ½ C. nuts (optional)
  • ½ C. raisins
  • 1 C. oil
  • 3 eggs, beaten
  • 2 tsp. vanilla
Instructions
  1. Whisk all of the dry ingredients together.
  2. Add remaining ingredients and mix together.
  3. Bake in a muffin or cupcake tin at 350 degrees for 20-25 minutes.
  4. Makes 18 muffins

 

Easy Croissant Rolls

Ingredients
  • 1½ C. water
  • 2 tbsp. yeast
  • 3 tbsp. sugar
  • 2 tsp. salt
  • 2 eggs
  • ¼ C. shortening, melted and cooled
  • 4 C. flour
Instructions
  1. Grease pan and melt shortening.
  2. Combine water and yeast with 1 tsp. sugar.
  3. Add remaining sugar, eggs and salt to the yeast and beat.
  4. Add remaining ingredients and mix well.
  5. Cover and allow to raise in refrigerator overnight.
  6. An hour before cooking, roll out and cut into circles or triangles.
  7. Brush with butter, roll up and allow to rise.
  8. Bake at 400 for 5-10 minutes.
  9. Brush with butter after baking.

 

Fat-Free Vanilla Muffins

Ingredients
  • 3 bananas (Overripe works best)
  • ½ C. skim milk
  • ½ C. applesauce
  • 2 C. unbleached flour
  • 2 tsp. baking powder
  • ½ C. brown sugar
  • ½ C. nonfat plain yogurt
  • 1 tsp. Vanilla
  • 2 tsp. baking soda
  • ⅛ tsp. salt
Instructions
  1. Preheat the oven to 400
  2. Mix the wet ingredients together in one bowl and the dry in another.
  3. Combine all ingredients and mix well.
  4. Coat a 12 cup baking pan with cooking spray and divide the batter evenly into all 12 cups.
  5. Bake for 15 minutes and allow to rest for an additional 5 before removing from the tins.
