Ingredients
- 3 eggs
- 1 C. oil
- 2 C. sugar
- 2 tsp. vanilla
- 2 C. zucchini, grated
- 1 8 oz. can crushed pineapple, drained
- 3 C. four
- 2 tsp. baking soda
- 1 tsp. salt
- ½ tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 C. nuts
- 1 C. raisins
Instructions
- Mix all of the dry ingredients in one bowl.
- Mix all of the wet ingredients in another bowl.
- Combine both mixtures and mix well.
- Grease and flour to loaf pans and divide mixture between the two.
- Bake at 350 for 1 hour
- Leave in pan for an additional 10 minutes before turning out.
- To store and freeze, wrap in plastic wrap and then foil.
