Ingredients
  • 3 eggs
  • 1 C. oil
  • 2 C. sugar
  • 2 tsp. vanilla
  • 2 C. zucchini, grated
  • 1 8 oz. can crushed pineapple, drained
  • 3 C. four
  • 2 tsp. baking soda
  • 1 tsp. salt
  • ½ tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 C. nuts
  • 1 C. raisins
Instructions
  1. Mix all of the dry ingredients in one bowl.
  2. Mix all of the wet ingredients in another bowl.
  3. Combine both mixtures and mix well.
  4. Grease and flour to loaf pans and divide mixture between the two.
  5. Bake at 350 for 1 hour
  6. Leave in pan for an additional 10 minutes before turning out.
  7. To store and freeze, wrap in plastic wrap and then foil.
