Cabbage Rolls

Ingredients
  • 12 large cabbage leaves
  • 1 lb. ground beef
  • ¾ C. cooked rice
  • 1 egg
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 1 tsp. Worcestershire sauce
  • ¼ C. minced onion
  • ⅔ C. milk
  • 16 oz. can tomato sauce
  • 1 tbsp. brown sugar
  • 1 tbsp. lemon juice
Instructions
  1. Boil the cabbage leaves for about 3 minutes in water to soften them.
  2. Combine the meat, rice, egg, salt, pepper, Worcestershire, onion and milk.
  3. Place approximately ½ C. of the meat mixture on each cabbage leaf and fold into a package.
  4. Place each package into the bottom of a casserole dish.
  5. Combine the tomatoes, brown sugar and lemon juice and pour over the top of the cabbage leaves.
  6. Cover and bake at 350 for 45-60 minutes.

 

Deviled Eggs

Ingredients
  • 12 large eggs
  • 2 tbsp. apple cider vinegar
  • ¼ C. mayonnaise
  • ¼ C. sour cream
  • 2 tsp. Dijon mustard
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 3 tbsp. parsley, chopped fine
Instructions
  1. In a large bowl or Dutch oven, bring the eggs, 1 tbsp. vinegar and enough cold water to cover the eggs to a boil.
  2. Allow the eggs to boil for 10 minutes and remove from the heat.
  3. Run cold water over the eggs until they have cooled.
  4. Peel each of the eggs and slice in half lengthwise.
  5. Carefully transfer the yolk from each egg half into a bowl or food processor.
  6. Add the remaining ingredients to the egg yolks and mix well.
  7. Fill each egg half with a heaping teaspoon of the filling.
  8. Chill the deviled eggs before serving.
  9. Garnish with parsley sprigs if desired.

 

Cucumbers in Sour Cream Sauce

Ingredients
  • 3 medium cucumbers, peeled and sliced thin
  • ½ C. sour ream
  • 2 tbsp. vinegar
  • 1 tsp. sugar
  • ½ tsp. salt
  • ½ tsp. pepper
Instructions
  1. Layer the cucumber slices n the bottom of a casserole dish and cover with 3 C. cold water and 1½ tsp. salt.
  2. Chill until cold, drain and rinse in cold water.
  3. Blend sour cream, vinegar, sugar and salt and pepper.
  4. Fold the sauce into the cucumber slices.

Ingredients
  • 2 lbs hamburger
  • 1 C. bread crumbs
  • 3 eggs
  • 1 pkg. onion soup mix
  • 8 oz. sauerkraut, drained and rinsed
  • 1 can whole cranberries
  • 1 C. brown sugar
  • 12 oz. bottle chili sauce
  • 12 oz. water
Instructions
  1. To make the meatballs, Mix hamburger, eggs, breadcrumbs and soup mix together and shape into balls.
  2. Bake in oven at 350 for 20 minutes.
  3. To make the sauce, combine remaining ingredients in a saucepan and heat on low heat for 20 minutes.
  4. Stir to prevent scorching.

Ingredients
  • 1 C. milk
  • ¾ C. crushed crackers
  • ¼ C. onion, minced
  • 2 eggs
  • ¼ C. green pepper, minced
  • 1 tsp. seasoning salt
  • 1 lb. hamburger
  • 3 slices cheese
Instructions
  1. Pour milk into bowl and add crackers. Allow to soak.
  2. Add remaining ingredients except for the cheese and mix well.
  3. Shape into 12 balls
  4. Place in greased 2 inch muffin cups.
  5. Bake at 325 for 25 minutes.
  6. Top each with cheese and bake for an additional 5 minutes.

 

Swedish Meatballs

Ingredients
  • 1 C. bread crumbs
  • 1 C. milk
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 3 eggs
  • ½ C. minced onion
  • 2 tsp. salt
  • 1 tsp. pepper
  • ½ tsp. allspice
  • 1 C. milk
  • 2 tbsp. oil
  • Flour
  • 2 cans consommé
Instructions
  1. Soak bread crumbs in 1 cup of milk.
  2. Mix pork, beef, eggs, bread crumbs and spices.
  3. Beat at a low speed and gradually add second cup of milk.
  4. Beat until smooth.
  5. Chill Thoroughly.
  6. Make into balls and drop onto waxed papper.
  7. Brown in oil.
  8. Cover all with consommé, cover and simmer 20 minutes.

 

Creamy Spinach Dip

Ingredients
  • 1 pkg. frozen spinach, thawed & drained
  • 1 pkg. frozen artichokes, chopped
  • 1 Sm. can green chilies
  • 1 c. mayonnaise
  • ⅓ cup grated Parmesan cheese
  • 1 cup grated Monterrey Jack cheese
  • 2 cloves garlic, minced
Instructions
  1. Thaw and squeeze excess moisture from spinach using a clean kitchen cloth or cheesecloth.
  2. Combine all ingredients, reserving ¼ c. of Monterrey Jack Cheese.
  3. Spoon all of the spinach mixture into a baking dish and sprinkle the remaining Monterrey Jack over top.
  4. Bake in preheated 350 degree oven until top is bubbly.

Ingredients
  • 12 eggs
  • 4 tbsp. Mayonnaise
  • 2 tsp. mustard
  • ½ tsp. season all
  • 2 tbs. parsley
  • 1½ tsp. sugar
  • ½ tsp. paprika
Instructions
  1. Boil eggs on high simmer for 10 minutes. Allow to cool in cold water. Slice eggs in half and place boiled yolk into a bowl.
  2. Mash yolks very finely using a fork. Add all ingredients and fill hollow eggs with mixture. Sprinkle with parsley and paprika for decoration.

Ingredients
  • 2 lbs ground chuck
  • 1½ tsp. garlic powder
  • 1 tsp. seasoning salt
  • ½ tsp. pepper
  • ¼ c. plain bread crumbs
Instructions
  1. Preheat oven to 350°F.
  2. Combine all ingredients and make into meatballs and place on an un-greased cookie sheet.
  3. Cook 30-35 minutes or until done.

Ingredients
  • 3 eggs
  • 1 cup water
  • 1 cup flour
  • pinch salt
  • olive oil
Instructions
  1. In a blender add eggs, water, flour, and salt and process until smooth.
  2. Lightly oil a skillet using a paper towel. Pour ¼ cup of the batter into the pan and quickly swirl the pan around, coating the bottom with the batter.
  3. Do not turn crepe over until it is dry on the top, about one minute. Flip crepe over briefly and cook 20-30 seconds longer.
  4. Lightly oil pan before cooking each crepe.

Ingredients
  • 1 lb. mushrooms any style you like
  • ¾ c. flour
  • ¾ c. club soda
  • ½ tsp. garlic salt
  • Vegetable oil for deep frying
Instructions
  1. Wash mushrooms and dry thoroughly on towel. Stir flour, club soda and garlic salt together until smooth and lump free.
  2. Dip mushrooms in batter and fry in 400 degree oil for about 5 minutes or until golden brown. Oil should be deep enough for mushrooms to float freely.

Ingredients
  • 2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • ½ tsp. baking soda
  • 1 c. Cheddar cheese grated
  • 1 c. sour cream
Instructions
  1. Preheat oven to 500°F
  2. In a large bowl, whisk together flour, baking powder, salt, and baking soda.
  3. Add grated cheese and sour cream to flour mixture and mix well.
  4. Turn dough out onto a lightly floured board and knead gently for 1-2 minutes. Roll out to a ¾ inch thickness. Cut out with a biscuit cutter dipped in flour.
  5. Bake for 10 minutes on a greased cookie sheet until golden brown.

 

Popcorn Chicken

Ingredients
  • 1 egg
  • 1 c. white flour
  • 1 tsp. Cajun seasoning
  • 2 sm. boneless chicken breasts cut in 1-1 ½ inch pieces
  • ¾ c. vegetable oil
Instructions
  1. Mix flour and Cajun seasoning in small mixing bowl.
  2. In separate bowl, beat egg.
  3. Pour oil into a small skillet and place on a medium heat.
  4. Dip pieces of chicken into egg, being sure they are fully covered.
  5. Drop the chicken, piece by piece into the flour mixture, fully coating the chicken.
  6. Carefully place battered chicken in the oil and fry for about 3-4 minutes, flip the pieces over until pieces are colored a light golden brown.

 

Bruschetta

Ingredients
  • 1 tbsp. salt
  • 1 tbsp. pepper
  • 1 tbsp. sugar
  • 2 tbsp. basil
  • ⅛ tbsp. minced garlic
  • 2 large chopped tomatoes
  • ½ c. extra virgin olive oil
Instructions
  1. Remove the juice and seeds from the tomatoes.
  2. Chop the tomatoes, set aside.
  3. Mix salt, pepper, sugar, basil, garlic, and extra virgin olive oil.
  4. Pour the mixture over the tomatoes.
  5. Toss tomatoes to make sure they are all coated, and let stand in the refrigerator for at least 1 hour before eating.
