Blue Cheese Herb Dip

Ingredients
  • 1 c. soft cream cheese
  • 1 c. sour cream
  • ¾ c. blue cheese
  • 2-3 green onions (white portion)
  • ½ tsp. garlic powder
  • 1 tbsp. parsley
  • 1 tbsp. thyme
  • salt and pepper, to taste
  • dash of paprika
  • parsley (for garnish)
Instructions
  1. In a large bowl, beat together cream cheese and sour cream.
  2. Add crumbled blue cheese, garlic powder, chopped green onions, parsley and thyme.
  3. Season to taste with salt and pepper, sprinkle with a dash of paprika and garnish with parsley.

 

Beer Batter Onion Rings

Ingredients
  • 2 Large onions
  • ½ c. dark beer
  • ½ c. club soda
  • 1 tbsp. vegetable oil
  • 1 egg white
  • ½ tsp. cayenne pepper
  • 1 tsp. kosher or sea salt
  • 1 c. flour
  • ¼ tsp. mustard powder
  • ½ tsp. onion powder
Instructions
  1. Pour beer and soda into food processor. Sprinkle in pepper, mustard, salt and onion powder and oil. Pulse until combined. Add flour last.
  2. Whisk egg white until frothy in a shallow bowl. Gently stir in contents of food processor, mixing until combined.
  3. Slice large onions into rings. Separate rings. Soak in a small amount of milk for 10 minutes. Drain and dip in batter.
  4. Fry small batches in hot oil (365F), turning once, gently to brown evenly. Remove using a slotted spoon. Season with salt and pepper while still hot from fryer.

Ingredients
  • 8 oz. liver sausage (liverwurst)
  • 8 oz. cream cheese
  • 2 oz. butter, softened
  • 2 pinches curry powder
  • 2 tsp. Worcestershire sauce
  • 2 tbsp. sherry
  • 2 tbsp. heavy cream
  • Toast & butter to serve with the pate
Instructions
  1. Remove the skin from the liver sausage, then put into food processor or mixer with cream cheese and butter and beat together until thoroughly mixed.
  2. Stir in curry, Worcestershire sauce, sherry and cream.
  3. Pack the pate into small dishes.

 

Stuffed Mushrooms

Ingredients
  • 1 lb. Spicy Sausage, brown and drain
  • 8 oz. cream cheese
  • Chopped onion, to taste
  • Large mushrooms.
Instructions
  1. Wash and stem the mushrooms.
  2. Chop the stems and add to the meat, cheese and onions.
  3. Put mixture into mushrooms and bake at 350 for 20-25 minutes.

  • 2 packages cream cheese
  • ½ lb. American cheese, shredded
  • ¼ lb. blue cheese
  • 1 purple onion, grated fine
  • ½ tsp. garlic powder
Instructions
  1. Combine all ingredients.
  2. Roll in paprika and chopped nuts.

Ingredients
  • 1 can artichoke hearts (14 oz.), chopped and drained
  • 1 pkg. frozen spinach, chopped
  • ½ C. heavy cream
  • 1 8oz. package of cream cheese
  • ¼ tsp. pepper
  • 2 tsp. lemon juice
  • 1 C. Monterrey Jack cheese, shredded
  • 1 C. Parmesan cheese, shredded (save ½ for top)
Instructions
  1. Mix the spinach and cheese first and add remaining ingredients, reserving ½ C. parmesan for top.
  2. Pour into a baking dish and top with the reserved Parmesan.
  3. Bake at 350 for 45-60 minutes.

Ingredients
  • 3 eggs
  • 1½ C. sugar
  • ⅔ C. pumpkin
  • 2 tsp. lemon juice
  • ⅔ C. flour
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • ½ tsp. nutmeg
  • ½ tsp. salt
Instructions
  1. Mix all ingredients together.
  2. Line a cookie sheet with waxed paper and dump out mixture on top of paper.
  3. Bake at 375 for 10-15 minutes.
  4. Top with 1½ C. powdered sugar, 3 oz. cream cheese, ¼ lb. margarine, ½ tsp. vanilla.
  5. Spread topping evenly over the top and roll up.

  • 4 eggs
  • 1 can cheddar cheese soup
  • ½ c. light cream
  • 1 c. shredded cheddar cheese
  • ½ c. diced cooked ham
  • ½ c. cooked broccoli
  • 1 9" unbaked pie crust
Instructions
  1. In a medium bowl, beat eggs until fluffy.
  2. Add soup and cream; mix well.
  3. Sprinkle cheese, meat, and broccoli over unbaked pie crust.
  4. Follow with soup mixture.
  5. Bake for 50 minutes at 350°F

Ingredients
  • 1 lb. crab meat
  • 3 tbsp. all purpose flour
  • ¼ tsp. baking powder
  • 4 shakes Worcestershire sauce
  • 1 egg
  • 1 tbsp. parsley
  • 1 tbsp. prepared mustard
  • 2 tbsp. mayonnaise
  • ¾ c. vegetable oil
Instructions
  1. Place crab meat in a bowl and add the flour, baking powder, Worcestershire, egg, parsley, mustard and mayonnaise; blending gently.
  2. Pour about 1 inch of oil into a skillet. Heat over medium-high heat. When a drop of water splatters when in contact with the oil, it is hot enough to fry crab cakes.
  3. Form crab cakes into balls and flatten into a patty. Fry until golden brown, about 3 minutes. Turn and fry on other side until brown. Remove crab cakes and drain on paper towels. Repeat until all the crab meat is used.

  • 2 avocados, peeled
  • ⅓ cup onion, chopped
  • ½ jalapeno chili pepper, chopped fine
  • 1 medium tomato, peeled and quartered
  • 1 tbsp. lime juice
  • 1¼ tsp. sugar
  • ¼ c. sour cream
Instructions
  1. Prepare all ingredients.
  2. Place the avocados, onions, jalapeno, tomato, and lime juice in a food processor and process on pulse till blended.
  3. Add sugar and sour cream and mix well.

  • ½ c. honey
  • ¼ c. lemon juice
  • ¼ c. water
  • 3 tbsp. ketchup
  • 1½ tsp. garlic powder
  • ½ tsp. garlic salt
  • 1 tsp. ground ginger
Instructions
  1. Combine all ingredients in sauce pan. Heat to boiling and simmer for 5 minutes.

Shrimp Marinara

Ingredients
  • 1 c. coarsely chopped onion
  • ¼ c. olive oil
  • 2 tsp. dried basil, crushed
  • 2 lb. peeled, deveined, lg. shrimp
  • 2 cloves garlic, minced
  • 2 (28 oz.) cans Italian tomatoes
  • 2 tsp. dried oregano
Instructions
  1. In a large saucepan, cook onion and garlic in hot oil, stirring occasionally, until onion is tender.
  2. Cut up tomatoes. Add tomatoes and juice, basil and oregano to onion mixture. Bring to a boil.
  3. Reduce heat and simmer, uncovered, 30-40 minutes, stirring occasionally, until most of liquid is evaporated. Stir in shrimp. Cook, stirring occasionally, 5 minutes or until shrimp are done.

 

Twice Baked Potatoes

  • 1 small yellow onion diced
  • olive oil
  • 5 baking potatoes
  • ¾ c. milk
  • 2 tbsp. butter
  • 1 tsp. pepper
  • 4 oz. shredded cheddar cheese
Instructions
  1. Pre-heat oven to 350 place baking potatoes directly on oven rack and bake for 1hour 20minutes.
  2. Meanwhile, cover the bottom of a skillet or frying pan with olive oil add onions to oil and saute until tender (About 5 minutes) Remove onions from heat; drain excess oil. Add onions to medium mixing bowl.
  3. When potatoes are done, take out of the oven and cut the top ¼ off of each potato (the long way) Scoop potato out of the shell and into mixing bowl with the onions. Add milk, butter, and pepper to mixture. With mixer, combine ingredients until well blended. Add cheese and mix with spoon.
  4. Place potato mixture into a medium sized plastic bag. Twist bag, with scissors, clip the corner off the end of the bag. Squeeze the potato into each shell. Place filled shells on cookie sheet and bake another 20 minutes, or until cheese is melted and light brown crust forms on top of potatoes.

 

Buffalo Chicken Fingers

Ingredients
  • 5 chicken tenders
  • 4 oz. Hot Sauce
  • 6 eggs
  • 1 qt. milk
  • 1 lb. bread crumbs
  • 1 tsp. paprika
  • ½ tsp. garlic powder
  • 2 tbsp. fresh parsley, minced
Instructions
  1. Wash 5 chicken tenders under cold water. Beat eggs and add milk. Continue beating until egg is thoroughly mixed with milk to make egg wash.
  2. Combine paprika with bread crumbs, parsley and garlic powder.
  3. Coat the chicken tenders in the egg wash and cover with bread crumbs until well coated.
  4. Pour the hot sauce into mixing bowl. Heat a deep fryer to approximately 360F and set the oven to 350F.
  5. After the tenders are fully cooked, dip into the hot sauce until fully coated. Place on baking pan and bake for 3 minutes.
