Oatmeal Pancakes

Ingredients
  • 1⅛ c. milk
  • 1 c. rolled oats
  • 2 tbsp. oil
  • 2 eggs, beaten
  • 1 c. whole wheat flour
  • 1 tbsp. brown sugar
  • 1 tsp. baking powder
  • ¼ tsp. salt
Instructions
  1. Combine the milk and rolled oats in bowl and let them stand at least 5 minutes to soak in the milk.
  2. Stir in the remaining ingredients and mix well.
  3. Lightly oil the griddle before cooking pancakes to prevent sticking.

 

Chicken Noodle Soup

Ingredients
  • 4 cooked chicken breasts, diced
  • 1 pkg. egg noodles
  • 2 carrots, chopped
  • 2-3 stalks celery, sliced
  • 2 cans cream of chicken soup
  • ¼ cup onion, chopped
  • salt and pepper, to taste
Instructions
  1. Cook noodles according to package directions.
  2. Boil the vegetables in water until they are tender.
  3. Add the vegetables, chicken and cream soup to the cooked noodles.
  4. Salt and pepper to taste.
  5. Simmer for about 20 minutes.

 

Fettuccine Alfredo

Ingredients
  • 1 lb. fettuccine noodles
  • ½ c. butter
  • ⅔ c. heavy cream
  • 1 c. Parmesan cheese, grated
  • ¼ tsp. salt
  • pepper to taste
  • chopped parsley for garnish
Instructions
  1. Prepare noodles according to package directions.
  2. In a saucepan, heat butter and cream until butter is melted.
  3. Remove from heat and add Parmesan cheese, salt and pepper.
  4. Stir until sauce is smooth.
  5. Combine sauce and noodles and top with additional Parmesan cheese and parsley.

 

Cream Cheese Pinwheels

Ingredients
  • 1 pkg. flour tortillas
  • 2 pkg. cream cheese
  • 1 c. pitted black olives, finely chopped
  • 2 tbsp. pimentos, finely chopped
  • 1 pkg. powdered ranch dressing
  • 2 tbsp. jalapenos, finely chopped
Instructions
  1. Soften cream cheese (microwave for approx. 20 seconds) and mix in the remaining ingredients.
  2. Spread evenly over the flour tortillas and roll them tight. Chill for at least one hour. Slice into pinwheels.

Ingredients
  • 7-8 lg. potatoes, baked and cooled
  • ½ lb. bacon, fried and crumbled
  • 1 small onion, minced
  • 2 tbsp. butter
  • ½ c. Cheddar cheese, grated
Instructions
  1. Cut potatoes in half lengthwise and scoop out potatoes.
  2. Brush inside of skin with butter and add bacon and onions.
  3. Top with plenty of cheese.
  4. Bake at 450 until crispy (about 15 minutes).

  • 1 head lettuce, chopped
  • 1 layer red onions, diced
  • 1 layer carrots, grated
  • 1 layer cheese, grated
  • 1 layer bacon, cooked and crumbled
  • 1 c. salad dressing (any type you like)
Instructions
  1. Layer each ingredient in dish and spread salad dressing over top.

Ingredients
  • 10 med. potatoes, diced
  • 1 stick butter, melted
  • 1 small onion, diced
  • 3 tbsp. milk
  • 2 slices bread, cut into small cubes
  • 1 lb. Velveeta cheese, cut in small cubes
  • Salt and pepper
  • 1 c. corn flakes or bread crumbs
Instructions
  1. Preheat the oven for 350.
  2. Cook and drain the potatoes and place on the bottom of a casserole dish.
  3. Combine remaining ingredients except for the corn flakes and spread over potatoes.
  4. Put corn flakes or bread crumbs on top and bake at 350 degrees for 1 hour.

 

Macaroni Salad

  • 1 package elbow noodles
  • 3 small tomatoes, diced
  • 1 small onion, diced
  • ¼ c. sweet relish
  • 6 hard boiled eggs
  • ¾ cup mayonnaise
  • ¼ cup mustard
  • salt and pepper to taste
Instructions
  1. Boil noodles according to package directions, drain and cool.
  2. Mix remaining ingredients into the noodles and cool before serving.

Ingredients
  • 1 brownie mix
  • 3 eggs
  • ¼ c. oil
  • 4 oz. cream cheese
  • ¼ c. sour cream
  • 1 tbsp. water
Instructions
  1. Soften cream cheese in the microwave for a few seconds.
  2. Add remaining ingredients and stir until smooth and lump free.
  3. Pour into greased 9 x 13 inch pan.
  4. Bake at 350 degrees for 45-55 minutes. Top with powdered sugar.

 

Tuna Salad

  • 1 can tuna fish, drained
  • 1 c. carrots, grated
  • 1 c. celery, diced
  • ¼ c. onion, diced
  • 1 c. mayonnaise
Instructions
  1. Combine all ingredients and mix together.
  2. Add hard boiled eggs if desired.
  3. Cover and chill before serving.

  • ½ c. mashed potatoes
  • powered sugar
  • peanut butter
Instructions
  1. Place mashed potatoes in a bowl and add powdered sugar until mixture is thick enough to roll out on a flat surface.
  2. Roll out dough and cover with a thin layer of peanut butter.
  3. Roll like a jelly roll and cut into small pieces.

Ingredients
  • 8-9 potatoes
  • 2 onions, minced finely
  • 2 egg yolks
  • 1 c. heavy cream
  • salt and pepper, to taste
Instructions
  1. Boil potatoes and onions in a pot of water.
  2. When they are soft, drain all of the water and mash the potatoes.
  3. Beat in heavy cream and egg yolks and season with salt and pepper.

 

Summer Cole Slaw

Ingredients
  • 1 lg. cabbage, chopped
  • 1 green pepper, chopped
  • 1 lg. onion, chopped
  • 1 c. vinegar, heated
  • 1 c. sugar
  • 1 tsp. celery seed
  • 1 tsp. dry mustard
  • ¾ c. salad oil
  • Salt to taste
Instructions
  1. In a small saucepan, heat vinegar on low.
  2. Once the vinegar is warm, add in the dry ingredients.
  3. Combine cabbage, green pepper and onion in a bowl and pour the hot vinegar mixture over the top.
  4. Cover and refrigerate before serving.

 

Scotch Egg

Ingredients
  • 1 lb. lean sausage
  • ½ c. bread crumbs
  • 1 egg, raw
  • 1 tbsp. barbecue sauce
  • 1 tbsp. flour
  • Salt & pepper to taste
  • 6 hard-boiled eggs
  • 1 egg, beaten (for coating)
  • Dry bread crumbs
  • Vegetable oil for frying
Instructions
  1. Mix sausage with the ½ cup bread crumbs, raw egg BBQ sauce and salt and pepper.
  2. Divide into 6 equal portions.
  3. Coat each of the hard boiled eggs with a little milk and form the sausage mixture around each egg.
  4. Brush a little bit of egg yolk on the sausage ball and roll in bread crumbs.
  5. Deep fry the eggs for 6 to 7 minutes in hot oil until they are brown. Make sure that the meat is cooked through.
