Chicken Chili

Ingredients
  • 1 can chunk-style chicken
  • 1 can tomatoes, in juice
  • 1 can kidney beans, drained
  • ¼ c. frozen chopped green pepper
  • ¼ c. frozen chopped onion
  • 2 tsp. chili powder
  • ⅛ tsp. garlic powder
  • ¼ tsp. ground cumin
  • Fresh jalapeno peppers if desired
Instructions
  1. Cut tomatoes into small pieces and put into a sauce pan with the liquid from the can.
  2. Combine tomatoes with remaining ingredients and heat on low, covered, for several hours.

 

Red Pepper Jelly

Ingredients
  • 3¾ c. granulated sugar
  • 1 c. red pepper, minced
  • ¾ c. white vinegar
  • 1½ tsp. hot sauce
  • 3 oz. pkg. liquid pectin
Instructions
  1. Combine first 4 ingredients in a deep 2½-quart casserole.
  2. Microwave for 4 minutes and stir.
  3. Return to microwave for an additional 4 minutes.
  4. Stir in pectin and microwave for 2 to 2½ minutes.
  5. Remove foam from top with a spoon and pour mixture into mason jars and cap off.
  6. Place in refrigerator to set.
  7. After 1 hour, turn upside down to keep the peppers from settling on the bottom.
  8. Freeze leftovers.

 

Eggnog Bread

Ingredients
  • 3 c. flour
  • ½ c. sugar
  • 4 tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. ground nutmeg
  • 1 egg, beaten
  • 1¾ c. dairy eggnog
  • ½ c. vegetable oil
  • ½ c. chopped pecans
  • ½ c. raisins
  • ½ c. powdered sugar
  • 2 to 3 tsp. eggnog
Instructions
  1. In a large mixing bowl, stir together all of the dry ingredients.
  2. In a second bowl, mix the egg, eggnog and oil and slowly mix in the dry ingredients.
  3. Mix in the nuts and raisins last.
  4. Pour mixture into a large greased loaf pan.
  5. Bake in a 350°F oven for 60 to 65 minutes.
  6. Allow bread to cool in pan for 10 minutes after removing from the oven.
  7. Remove bread from pan and allow to cool on a wire rack.
  8. To glaze, stir together powdered sugar and enough eggnog to make glaze and pour over the bread.

  • 1 c. butter, softened
  • 6 oz. cream cheese
  • 2 c. sifted flour
Instructions
  1. Blend ingredients well.
  2. Chill. Roll small balls and place in small muffin tins.
  3. Bake at 350 degrees until golden brown.

Ingredients
  • 8 oz. cream cheese, room temperature
  • 1 can sweetened condensed milk
  • 5 tbsp. lemon juice
  • 1 tsp. vanilla
  • 12 individual tart shells
  • 1 can cherry pie filling
Instructions
  1. Beat cream cheese to soften.
  2. Blend in milk, lemon juice and vanilla.
  3. Spoon mixture into tarts.
  4. Chill 2 hours.
  5. Top with pie filling.

 

Cinnamon chip/oatmeal cookies

Ingredients
  • 1 ½ c flour
  • ⅓ c sugar
  • 1 ½-2 c oatmeal
  • ½ c packed brown sugar
  • 1 ½ tsp baking soda
  • 2 eggs
  • 1 bag Hershey cinnamon chips
  • 1 ½ tsp vanilla
  • 1 c butter softened (or margarine)
Instructions
  1. Preheat oven 350 degrees
  2. In a bowl cream the butter, brown sugar, and sugar til smooth. Add eggs and vanilla, mix well.
  3. In another bowl mix flour and baking soda, cinnamon chips and oatmeal. Add the butter mixture and mix well. Batter will be stiff.
  4. If making bars, lightly spray a 13 x 9 baking pan and spread mixture evenly and bake for about 25-30 minutes or until golden brown.
  5. If making cookies, drop a spoonful on cookie sheets and bake 10-12 minutes. Cool on pan for 1-2 minutes then remove to a cooling rack.

 

Bruschetta

Ingredients
  • 5 medium tomatoes, diced
  • 3-4 cloves minced garlic
  • juice from ½ lime
  • ¼ c. extra virgin olive oil
  • 1 c. Parmesan cheese, grated
  • 1 tbs. fresh basil
  • salt and pepper to taste
Instructions
  1. In a large bowl, toss all ingredients together and allow to stand for several hours in the refrigerator.
  2. Spoon mixture onto toasted bread, and top with Parmesan cheese.
  3. Broil until cheese has melted.

 

Molasses Cookies

Ingredients
  • 1 c. sugar
  • 1 c. shortening
  • 1 c. molasses
  • 1 c. hot water
  • 1 egg
  • 4½ c. flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • pinch of cloves
Instructions
  1. Stir baking soda into hot water until dissolved and add molasses.
  2. Cream shortening with sugar and beat in egg. Combine both wet mixtures together.
  3. In a separate bowl, stir together flour, salt and spices.
  4. Slowly add the flour mixture to the molasses mixture and mix until combined. Chill for 1 hour before rolling.
  5. Roll out and cut into desired shape with a cookie cutter.
  6. Transfer to greased cookie sheets and bake at 350°F oven for 10-15 minutes.
  7. Cool on wire racks.

Ingredients
  • 1 c. sugar
  • ½ tsp. salt
  • 1 c. butter
  • 3 oz. cream cheese
  • ½ tsp. almond extract
  • ½ tsp. vanilla extract
  • 1 egg yolk
  • 2¼ c. flour
Instructions
  1. Combine and blend all ingredients except flour and then slowly mix in the flour.
  2. Chill for a couple of hours. Roll out dough to desired thickness and cut into shapes.
  3. Place on un-greased cookie sheet.
  4. Bake at 375 degrees for 7 to 10 minutes or until the edges begin to brown.

Ingredients
  • 4 tbsp. butter
  • ¾ c. flour
  • ½ tsp. baking powder
  • 4 eggs
  • 1 c. milk
Instructions
  1. Melt the butter in a 2 quart oven proof bowl at 425 degrees.
  2. In a small bowl, combine the milk, flour, baking powder, and eggs.
  3. Beat continuously until batter is smooth and lump free.
  4. Pour batter into hot butter.
  5. Bake at 425 degrees for 18 minutes.
  6. DO NOT open oven door while baking. Top with butter and powder sugar.

 

Cheeseburger Soup

Ingredients
  • 3 lb. lean ground beef
  • 2½ qt. chicken stock
  • 2 qt. milk
  • 2 sticks butter
  • ½ c. flour
  • 1 c. American Cheese, shredded
Instructions
  1. Fry hamburger and drain off excess grease.
  2. Add to chicken stock and bring to a boil.
  3. In a separate bowl, combine melted butter and flour and stir until thick.
  4. Add flour and butter mixture to boiling stock and reduce heat to stop from boiling.
  5. Stir in milk and garnish in bowls with shredded cheese on top.

 

Dutch Almond Cookies

Ingredients
  • 1 c. butter
  • 1 egg, separated
  • 2 c. flour
  • ½ tsp. cinnamon
  • 1 c. brown sugar
  • ½ tsp. vanilla
  • 1 tsp. almond extract
  • ¼ c. white sugar
  • ½ c. almonds, slivered
Instructions
  1. Mix together the butter, brown sugar, egg whites, vanilla and flour.
  2. Spread into 10x15 inch pan.
  3. Spread egg yolk on top and sprinkle with cinnamon and sugar.
  4. Sprinkle almonds on top.
  5. Bake at 350 degrees for 15 minutes.
  6. Cut into squares.
