Cherry Pudding

Ingredients
  • ⅓ C. margarine
  • 1 C. flour
  • 1½ tsp. baking powder
  • ¼ tsp. salt
  • 1 C. sugar
  • ¾ C. milk
  • Unsweetened cherries
Instructions
  1. In an oblong cake pan, melt the margarine.
  2. In a bowl, combine remaining ingredients EXCEPT for the cherries.
  3. Pour mixture over the melted butter.
  4. Top with unsweetened cherries.
  5. DO NOT STIR!
  6. Bake at 350 for 30 minutes.
  7. Test the center cake style to check if done.

Ingredients
  • 4½ C. milk
  • ¾ C. sugar
  • ¾ C. rice
  • Cinnamon to taste
  • Nutmeg to taste
  • Raisins, optional
Instructions
  1. Mix all in an oven safe dish and bake at 375 for 1½ hours.

Ingredients
  • 1 lb. butter
  • 2½ C. sugar
  • 2 C. brown sugar
  • 2 tsp. vanilla
  • 3 eggs
  • 6 C. flour
  • 1½ tsp. salt
  • 1½ tsp. baking soda
  • 2 C. chopped nuts
  • 6 C. chocolate chips
  • 1½ C. oatmeal
  • 2 C. raisins
Instructions
  1. Beat the butter and sugar together until fluffy.
  2. Add eggs and vanilla and whip for an additional 3-4 minutes
  3. Add dry ingredients and beat. Dough will be dry.
  4. Add nuts and chips and mix with a spoon.
  5. Cover a cookie sheet with waxed paper and drop by spoonfuls onto sheet.
  6. Bake at 350 for 8-10 minutes. DO NOT OVERCOOK.
  7. Allow cookies to cook for 5 minutes before removing.
  8. Use new waxed paper with each batch.

 

Tuna Noodle Casserole

  • 1 can tuna
  • ¼ C. celery, chopped
  • ¼ C. onion, chopped
  • 1 can cream of mushroom soup
  • ½ C milk
  • 6 oz. Chow mien noodles
Instructions
  1. Put ⅔ of the noodles in the bottom of a casserole dish.
  2. Mix remaining ingredients together and pour over the noodles.
  3. Top with remaining noodles.
  4. Bake in oven at 350 for 40 minutes.

 

Tuna Melt Sandwich

Ingredients
  • 2 cans tuna fish, drained
  • ⅓ C. celery, chopped
  • 1 egg, hard boiled and chopped
  • 2 tbsp. mayonnaise
  • ½ tsp. mustard
  • ⅛ tsp. oregano flakes
  • 1 C. cheddar cheese, shredded
  • 1 can biscuits
Instructions
  1. Preheat the oven to 400 degrees
  2. In a bowl, combine the tuna, celery, egg, mayonnaise and mustard.
  3. Roll out each of the biscuits to a 4 inch diameter and place on a greased cookie sheet.
  4. Top each biscuit with the tuna mixture.
  5. Top off each biscuit with cheese.
  6. Bake for 10-13 minutes.
  7. Can also add chopped dill pickles if desired.

 

Stuffed Trout

Ingredients
  • ⅓ C. celery, chopped
  • 2 green onions, chopped
  • ¼ C. green bell pepper, chopped
  • 2 tbsp. butter
  • ½ Cup seasoned bread crumbs
  • 2 whole trout
Instructions
  1. In a glass baking dish, combine the vegetables and butter and microwave on high until tender. About 3 minutes.
  2. Stir the bread crumbs into the vegetable mixture and use to stuff the trout.
  3. In a small bowl, melt 1 tbsp. butter and 2 tsp. lemon juice.
  4. Brush the top of the fish with the lemon and butter mixture.
  5. Microwave on high for 6-8 minutes or until fish flakes easily.

Ingredients
  • 2 C. sugar
  • 1 C. oil
  • 2 Eggs
  • 2½ C. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 3 C. zucchini, grated
  • ½ C. nuts
  • 1 C. chocolate chips
Instructions
  1. Beat the sugar, oil and eggs together by hand.
  2. Add remaining ingredients and pour into a greased pan.
  3. Sprinkle the top with additional chocolate chips.
  4. Bake at 350 for 30-40 minutes or until done.
  5. Allow to cook before frosting.
  6. Combine 4 tbsp. margarine, 3 oz. cream cheese, 1 tsp. vanilla and 1½ C. powdered sugar to create the frosting.

 

Caramel Corn

Ingredients
  • 1 cube margarine
  • 2½ C. brown sugar
  • 1 C. white corn syrup
  • 1 can evaporated milk
  • 1 tsp. vanilla
Instructions
  1. Cook the margarine, sugar and corn syrup together until all of the sugar has dissolved.
  2. Add the milk and vanilla and mix well.
  3. Pour over popped pop corn.

  • 4 C. powdered sugar
  • 1 C. margarine
  • 2 C. creamy peanut butter
  • 1 pkg. graham crackers, finely crushed
  • 12 oz. chocolate chips
Instructions
  1. Melt the butter in a sauce pan.
  2. Beat the powdered sugar into the butter.
  3. Mix in the peanut butter and graham cracker crumbs.
  4. Press the mixture into the bottom of a greased cake pan.
  5. Melt the chocolate chips and spread over the top.
  6. Chill for 10-15 minutes before cutting.

Ingredients
  • 3 sq. margarine
  • 1 C. brown sugar
  • 1 C. sugar
  • 3 eggs
  • 1½ tsp. cinnamon
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 6 C. flour
Instructions
  1. Combine all ingredients and roll out between two pieces of waxed paper.
  2. Cut out shapes with a glass or cookie cutter.
  3. Place on a greased cookie sheet.
  4. Bake at 350 for 10 minutes.
  5. Frost with Cream cheese frosting.
  6. Makes about 5 dozen.

 

BBQ Sauce

Ingredients
  • ½ C. onions, chopped
  • ½ C. catsup
  • 8 tbsp. brown sugar
  • 2 tsp. Worcestershire sauce
  • 6 tbsp. vinegar
  • Pepper to taste
Instructions
  1. In a large pot, combine all ingredients.
  2. Simmer for 10 to 20 minutes or until slightly thick.

 

Hamburger Chowder

Ingredients
  • 1 lb. hamburger
  • 2 tbsp butter
  • 2 tsp. salt
  • ⅛ tsp. pepper
  • 1 C. celery, diced
  • 1 C. onion, diced
  • 2 C. tomatoes
  • 4 C. hot water
  • 1 tbsp. Worcestershire sauce
  • 2 bullion cubes
  • 1 bay leaf
  • ⅛ tsp. oregano
  • 1 C. uncooked noodles
  • 10 oz. pkg. frozen mixed vegetables
Instructions
  1. Sauté the hamburger, butter, celery, onion and salt and pepper until brown.
  2. Add remaining ingredients except the noodles to the browned meat.
  3. Bring to a boil.
  4. Cook and simmer for 1 hour.
  5. Add noodles and cook for an additional 30 minutes.
  6. Leftovers can be frozen.

Ingredients
  • 10 C. soft bread crumbs
  • ½ C. onion, chopped
  • 1 C. diced celery
  • 1 cube margarine
  • 4 C. chicken, cooked and cubed
  • 2 cans cream of chicken soup
  • 1 can (8 oz.) SEGO
Instructions
  1. Add vegetables to bread crumbs and mix.
  2. Sprinkle 2 tbsp. poultry seasoning, salt and pepper to taste on the bread crumbs.
  3. In a separate bowl, combine chicken, soup, sego and butter.
  4. Layer in a casserole dish alternating between vegtable and chicken mixtures.
  5. Cover and bake at 350 for 40 minutes.

Ingredients
  • 1 lb. broccoli, cooked
  • Chicken, cooked
  • ½ C. sour cream
  • ½ can cream of mushroom soup
  • 1 tbsp. lemon juice
  • ½ C. grated cheese
Instructions
  1. Cook broccoli and layer in an 8x8 dish.
  2. Top with chicken.
  3. Combine soup, sour cream and lemon juice and spread over the chicken.
  4. Sprinkle cheese over the top and cover.
  5. Bake at 350 for 40 minutes.

  • 16 chicken breasts cook and cubed
  • 1½ C. mayonnaise
  • 1½ C. sour cream
  • 5 green onions
  • 1 green pepper
  • ½ lb. cheddar cheese, cubed
  • 1½ lb grapes
  • 2 cans pineapple tidbits
  • 4 stalks celery
Instructions
  1. Mix all together and serve on a bed of lettuce leaves.
