Popovers

Popovers

Ingredients
  • 1 C. flour
  • ½ tsp. salt
  • 1 C. milk
  • 1 tbsp. melted butter
  • 3 eggs
Instructions
  1. Preheat the over to 450 degrees.
  2. Combine all ingredients in a bowl and mix well.
  3. Pour into buttered popover cups or standard size muffin tins until ½ full.
  4. Once the oven reaches temperature, put the popovers in the middle of the oven.
  5. Bake for 15 minutes and reduce the temperature to 350 degrees. DO NOT OPEN THE OVEN.
  6. Continue to bake for 20-30 minutes or until golden brown and dry to the touch. If you want the popovers to retain their shape, cook for an additional 5 minutes.
Notes
For cheese popovers, add ¼ cup shredded cheese to the mix. For herb popovers, add 1½ tsp. of your favorite herbs. Serve hot with honey butter.

 

Kentucky Biscuits

Ingredients
  • 2 C. flour
  • 1½ tsp. baking powder
  • ½ tsp. baking soda
  • 2 Tbsp. sugar
  • dash of salt
  • ½ C. butter
  • ¾ C. buttermilk
Instructions
  1. Preheat oven to 400 degrees.
  2. Mix dry ingredients.
  3. Cut in butter, add milk and knead into soft dough. Do not over knead!
  4. Pat into a ungreased pie pan.
  5. Cut into wedges (like a pizza) before you cook.
  6. Bake at 400' for 15 to 20 minutes or until done and golden brown.

 

Potato Latkes

Ingredients
  • 2 eggs, beaten
  • 3 C. potatoes, grated
  • 4 Tbsp. onion, grated
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 2 tbsp. cracker crumbs or matzo meal
  • ½ c. oil
Instructions
  1. Saute onion with about 2 tsp. oil until browned.
  2. Add potatoes, onion, salt, pepper, and meal or cracker crumbs.
  3. Heat the oil in frying pan and drop potato mixture by the tablespoon.
  4. Flatten with a spoon.
  5. Fry until browned on both sides.
  6. Serve with applesauce or sour cream.

 

Blueberry Muffins

Ingredients
  • 2½ C. flour
  • 1½ tsp. baking powder
  • ½ tsp. baking soda
  • ¾ C. sugar
  • ¼ tsp. salt
  • 2 eggs, beaten
  • 1 C. buttermilk
  • 4 oz. butter
  • 1½ C. bluberries
Instructions
  1. Preheat oven to 400.
  2. Sift dry ingredients together in a large bowl.
  3. Whisk eggs, buttermilk and better that has been melted and browned slightly.
  4. Make a well in the dry ingredients and pour in liquid ingredients.
  5. Mix quickly.
  6. Fold in blueberries.
  7. Spoon mixture into greased muffin cups and bake until golden brown - about 20-30 minutes.

 

German Pancakes

Ingredients
  • 6 eggs
  • 1 C. flour
  • 1 C. milk
  • ½ tsp. salt
  • 6 Tbsp. Butter
Instructions
  1. Put butter in the bottom of a casserole dish and place in the oven to melt while the oven preheats.
  2. Preheat the oven to 400
  3. Combine remaining ingredients and whisk until mixed.
  4. Once the oven is ready, pour the batter on top of the melted butter and return dish to the oven.
  5. Bake at 400 for 20 minutes or until done.

 

Corned Beef Hash

Ingredients
  • 2½ C. corned beef, cooked and chopped
  • 2½ C. potatoes, cooked, cooled and diced.
  • 1 med. onion, chopped
  • 1 tbsp. bacon drippings or butter
  • ½ C. evaporated milk
  • ½ tsp. salt
  • ⅛ tsp. pepper
Instructions
  1. Mix the beef, onions and potatoes.
  2. Heat the drippings in a large frying pan and then turn the meat mixture into the pan.
  3. Add the milk a little at a time and spread the mixture flat in the pan.
  4. Keep over very low heat and brown in on the bottom, approximately 40-45 minutes.
  5. Sprinkle with salt and pepper and fold in half like an omelet.
  6. Pour out onto a hot platter.

  • 2 lbs sausage, ground
  • 1 lb. ground beef
  • 3 eggs
  • 2 tbsp. dried onion flakes
  • ½ tsp. black pepper
  • ½ lb cheddar cheese, shredded
Instructions
  1. Mix all ingredients together and form into 1 inch balls.
  2. Place balls onto a cookie sheet or broiler pan.
  3. Bake at 375 for 25 minutes

Ingredients
  • 1 C. milk
  • 6 eggs
  • 1 C. flour
  • ½ tsp. salt
  • 1 tsp. vanilla
  • ¼ C. butter, melted
Instructions
  1. Preheat the oven to 400
  2. Blend together all ingredients except the butter until smooth and lumb free.
  3. Blend in butter slowly.
  4. Grease muffin tins and fill each tin to just under ½ full.
  5. Bake for 15 minutes or until golden brown.
  6. A crater will form in the middle of each pancake. Fill the crater with the topping of your choice.

 

7-Up Biscuits

  • 4 C. Bisquick
  • 1 C. sour cream
  • 1 C. 7-Up
  • ½ C. butter, melted
Instructions
  1. Mix all ingredients together except for the melted butter.
  2. Melt the butter in the bottom of a baking dish.
  3. Place biscuits on the buttered dish and bake at 425 until golden brown.

  • 2 lbs. ground pork
  • 2 lbs. ground beef
  • 3 C. bread crumbs
  • 2 tsp. pepper
  • 2 tsp. coriander
  • 2 tsp. nutmeg
  • 2 tsp. salt
  • 1 C. water
Instructions
  1. Mix all ingredients together and mix by hand until well blended.
  2. Freezes well for future use.

 

Spinach Quiche

Ingredients
  • 10 oz spinach (frozen chopped, thawed)
  • 1 bunch green onions, finely chopped
  • 4 beaten eggs
  • 16 oz cottage cheese
  • 2 cups shredded cheddar cheese
  • 14 cup croutons crushed
Instructions
  1. Preheat oven to 325.
  2. Lightly grease a 9 inch pie or quiche pan.
  3. Place spinach in a small saucepan.
  4. Cook over medium heat, stirring occasionally until soft.
  5. Drain off any remaining liquid.
  6. Stir in green onions, eggs, cottage cheese and cheddar cheese. Pour mixture into prepared pan.
  7. Bake uncovered for 45 minutes.
  8. Remove from oven and sprinkle with crushed croutons.
  9. Return to oven and bake for an additional 15 minutes, until eggs are set.

Ingredients
  • 2 eggs
  • 1 C. milk
  • ⅛ tsp. salt
  • ¾ C. flour
  • 1 lb. dry cottage cheese
  • 1 tsp. sugar
  • 1 egg yolk
  • ½ tsp. vanilla
  • ⅛ tsp. salt
  • 8 oz. pkg. cream cheese
Instructions
  1. For the batter, beat 2 eggs well and add ⅛ tsp. salt. Add ¾ C. flour and mix together. Add milk gradually and beat to a smooth batter. This will make a very thin batter.
  2. For the filling, combine remaining ingredients and chill.
  3. Melt a little butter in the bottom of a skillet and pour 2 tbsp. of the batter into the pan. Immediately swirl the pan around so that the batter covers the bottom.
  4. Allow to cook until golden brown and turn out on a piece of waxed paper.
  5. Place a small amount of the filling in the center of the blintz and fold like an envelope.
  6. Butter the pan and repeat process until all of the batter and filling has been used.
  7. serve hot with the topping of your choice. Cinnamon Sugar is an excellent topping.

Ingredients
  • ½ lb. sausage, browned and drained
  • 1¼ C. Bisquick
  • ¼ C. margarine, softened
  • 2 tbsp. water, boiling
  • ½ C. half and half
  • 1 egg
  • 2 tsp. green onions (optional)
  • ¼ tsp. salt
  • ½ C. shredded cheese
Instructions
  1. Preheat the oven to 375
  2. Generously grease the inside of a muffin tin.
  3. Mix the Bisquick, margarine and water and mix until a dough forms.
  4. Place 1 tbsp. of dough into each of the muffin cups pressing it in the bottom and up the sides.
  5. Divide the sausage evenly into each of the cups.
  6. Mix the remaining ingredients except for the cheese and spoon about 1 tbsp. into each cup.
  7. Sprinkle cheese onto the tops of each cup.
  8. Bake at 375 for approximately 25-30 minutes or until the edges are brown and the center is set.

Ingredients
  • 8 slices white bread
  • ½ lb. ham, cubed
  • 2 C. sharp cheddar cheese, shredded
  • 8 eggs
  • 2 C. milk
  • ½ tsp. dry mustard
  • Salt and pepper to taste
  • Dash of garlic salt and Tabasco sauce.
Instructions
  1. Break bread into small pieces and place them in the bottom of a greased 9x13 pan.
  2. Spread cooked meat over the bread. Sprinkle cheese over the meat.
  3. In a bowl, combine the remaining ingredients and mix well.
  4. Pour the mixture over the meat and cheese.
  5. Cover and allow to sit in the refrigerator overnight.
  6. Next morning, uncover and bake at 325 for 60-92 minutes or until eggs are set.

  • 1 lb. sausage, cooked
  • 18 eggs
  • ¼ C. green onions
  • 1 C. milk
  • 2 C. mild cheese, shredded
  • Salt and pepper to taste
  • ½ tsp. dry mustard
Instructions
  1. Preheat the oven to 325
  2. Spread hash browns in the bottom of a greased 9x13 baking dish.
  3. Sprinkle sausage and then the cheese over the hash browns.
  4. In a bowl, combine the remaining ingredients and pour into dish.
  5. Cook until eggs are set. Approximately 1 to 1½ hours.
