Anise Seed Wafers

Ingredients
  • ⅓ cup Cottolene (lard).
  • 1 cup granulated sugar.
  • 3 eggs.
  • 2 cups flour.
  • 3 teaspoons anise seed.
  • ¼ teaspoon nutmeg.
  • ½ teaspoon salt.
  • Flour.
Instructions
  1. Cream Cottolene, add sugar gradually, add egg yolks, one at a time, beating constantly.
  2. Beat whites of eggs stiff, add to first mixture alternately with flour mixed and sifted with anise seed, nutmeg and salt.
  3. Add just enough extra flour to dough to roll very thin.
  4. Shape with small, fluted cutter, and bake in a quick oven (400-425 F)..

 

Kale Chips

Ingredients
  • 1 Bundle of Kale
  • 1 tbsp. olive oil
  • Seasonings
Instructions
  1. Preheat the oven to 350
  2. Wash and completely dry the kale.
  3. Remove the stems from the leaves and tear leaves into small pieces.
  4. Drizzle with olive oil and mix to coat the leaves.
  5. Spread the leaves across a cookie sheet. Make sure that none are touching.
  6. Add whatever seasonings that you like, I use sea salt and garlic powder.
  7. Bake for 10-15 minutes or until leaves begin to turn brown at the edges.
  8. Allow to cool and eat.

 

Crock Pot Cinnamon Almonds

Ingredients
  • 1½ C. sugar
  • 1½ C. packed brown sugar
  • 2 tbsp. cinnamon
  • ⅛ tsp. salt
  • 2 tsp. vanilla
  • 1 egg white
  • ¼ C. water
  • 3 C. almonds, whole
Instructions
  1. In a bowl, combine the egg white and vanilla and whisk together.
  2. Add the almonds and coat each almond.
  3. Stir in the sugar, brown sugar, salt and cinnamon.
  4. Spray the inside of your crock pot with non stick spray and put almonds inside.
  5. Cook on low, covered, for 3 hours, stirring every 20 minutes.
  6. Add the ¼ C. water and stir.
  7. Cook an additional 1 hour, covered, and stir every 20 minutes.
  8. Spread out and cool on a parchment lined cookie sheet.

 

Fruit Pizza

Ingredients
  • 1 pkg refrigerated sugar cookie mix, sliced.
  • 1 8 oz pkg cream cheese, softened
  • ½ cup powdered sugar
  • If the mixture is too thick, take the juice from a can of pineapple to thin.
  • 4 cups assorted cut-up fruit(kiwi, strawberries, raspberries, blueberries, blackberries, sliced peaches, drained can of mandarin oranges, or canned pineapple)or any of your favorites.
  • 1 pkg Danish Dessert; any flavor (prepared and cool, don't allow to set)
Instructions
  1. Preheat oven to 350.
  2. Line a 12-inch pizza pan with foil; spray with cooking spray.
  3. Arrange cookie dough slices in single layer on prepared pan; press together to form crust.
  4. Bake 11-15 minutes until done, then cool completely. Invert onto a 12” serving platter and carefully remove foil. Turn crust over.
  5. Beat cream cheese, sugar and fruit juice with mixer until well blended. Spread over crust.
  6. Top with your favorite fruits, and take your Danish Dessert and pour over the pizza like a glaze. Refrigerate 2 hours.

 

Fruit Dip

Ingredients
  • 1 jar creamed marshmallow
  • 1 small container of strawberry cream cheese
Instructions
  1. In a small bowl, empty the strawberry cream cheese and beat with a mixer.
  2. Then add the jar of marshmallow.
  3. Let chill 1 hour before serving.
  4. Serve with your favorite fruit.

 

Chocolate Pretzel Rings

Ingredients
  • 1 bag small pretzel rings
  • 1 bag Rolo or Reece's Peanut Butter Cups
  • M & M's to garnish, or a nut(just whatever)
  • paper cupcake liners
Instructions
  1. Preheat oven to 250.
  2. Line a cookie sheet with parchment paper.
  3. Place pretzels on a the cookie sheet 1½ inches apart.
  4. Place pan in oven and heat for 3-4 minutes.
  5. Remove from oven and place a piece of candy in the center of each pretzel.
  6. Return to oven and bake 3-4 minutes, or until candy is soft, not melted.
  7. Remove from oven and garnish with whatever the occasion maybe.
  8. Cool.
  9. These can also be placed in a cupcake liner.

Ingredients
  • 1 sm box each corn, rice, and wheat chex cereal
  • 3-4 c peanuts(or your favorite combination of nuts)
  • 1 bag of pretzel sticks
  • 1 lg box of cheese nibs
  • 1 Ib butter
  • ¾ c Worcestershire
  • ¼ c season salt
Instructions
  1. In a large roasting pan(I use my turkey roaster)mix all boxes of cereal, nuts, pretzels, and cheese nibs. I
  2. n a medium size sauce pan, melt butter, then add Worcestershire and season salt.
  3. Slowly drizzle sauce over the cereal mix 1 large spoonful at a time, constantly stirring making sure every piece gets coated.
  4. Preheat oven to 250. Place pan in oven, uncovered, for 2½ hours.
  5. You must stir every 15 minutes so mixture begins to dry out.
  6. When the mixture cools down it should be crispy, otherwise return to the oven and cook longer.
  7. I keep this in my basement cold storage room during the holidays. You can save your cereal packages and store the cool, dry mixture back in the box. This is a party favorite!

Ingredients
  • 1 pkg cream cheese
  • 1 bunch chopped green onions
  • garlic powder to taste
  • Worcestershire sauce to taste
  • 1 pkg thin deli sliced lunch meat chopped in very small pieces.
  • Accent salt to taste
Instructions
  1. Once the cheese mixture is mixed well, form into a ball.
  2. Roll the ball into the meat and salt mixture.
  3. Serve with your favorite crackers.

Ingredients
  • 1 sm box krispex cereal
  • 1 sm box golden grahams cereal
  • 1 c shredded coconut
  • 1-2 c peanuts or cashews
  • 1 c corn syrup
  • 1 c sugar
  • ¾ c butter
Instructions
  1. Bring the corn syrup, sugar and butter to a boil for 2-3 minutes.(boil to a softball)
  2. Place cereal mix and coconut in a large mixing bowl and pour corn mixture over.
  3. Stir until totally coated.
  4. Spread on a cookie sheet and let cool.

Ingredients
  • 1 8 oz bag puff corn
  • 1 c butter(do not substitute)
  • 1 c brown sugar
  • ½ c light corn syrup
  • 1 t baking soda
Instructions
  1. Place puff corn in a large roaster pan.
  2. In a medium sauce pan bring the butter, sugar & corn syrup a boil, then cook for 2 minutes.
  3. Add the baking soda; this will cause the caramel mixture to foam up.
  4. Stir well and remove from heat.
  5. Pour over puff corn in roasting pan and bake at 250 oven for 45 minutes, stirring every 10-15 minutes.
  6. Remove from oven, spread out onto wax paper to cool.

Ingredients
  • ½ c butter
  • 1 c Karo(light)
  • 2¼ c brown sugar
  • 1 can Eagle Sweetened condensed milk
  • 1 t vanilla
Instructions
  1. Bring butter, Karo and brown sugar to a boil.
  2. Remove from heat.
  3. Add sweetened condensed milk and vanilla.
  4. Cook to a softball stage, stirring constantly.
  5. Covers about 5 average size batches of popcorn.

Ingredients
  • 1½ c warm water
  • 2 T sugar
  • 1 T yeast
  • 3½ c flour
  • 1 t salt
  • Topping
  • 1 cube melted butter
  • 1 clove minced garlic
  • parsley flakes
  • grated Parmesan cheese
  • kosher
Instructions
  1. Dissolve yeast in water and sugar and let stand for 5 minutes.
  2. Mix until smooth then let raise for 10 minutes.
  3. Roll out dough into a large square on a floured surface.
  4. Brush with melted (real) butter mixed with minced garlic and then sprinkle with kosher salt.
  5. Fold in half and cut into 1 inch strips.
  6. Twist and place on a cooking sheet.
  7. Let sit for 15 to 20 minutes to raise.
  8. Bake at 400 degrees for 20 minutes or until golden brown.
  9. Immediately after baking, brush with more garlic butter and sprinkle with kosher salt, parsley flakes, and grated Parmesan cheese.
  10. Serve with marinara, Alfredo sauce, or ranch for dipping.
  11. Dough also makes a great pizza dough, just roll out into a large circle, add your favorite toppings, and bake at 400 degrees for 15 to 20 minutes.

 

Almond Coconut Popcorn

Ingredients
  • 1⅓ c sugar
  • 1 c butter
  • ½ c corn syrup
  • 1 t vanilla
  • ½ small bag sliced almonds
  • ½ small bag coconut
  • 4 quarts popcorn(popped)
Instructions
  1. Place popcorn in a large mixing bowl or buttered cookie sheet.
  2. In a medium size sauce pan combine sugar, butter, and corn syrup.
  3. Stir, and boil until a softball, 228-230 degrees.
  4. Add vanilla, almonds and coconut.
  5. Pour heated mixture over popcorn until evenly coated.

 

Roasted Garlic-Bacon Dip

Ingredients
  • 2 cloves of garlic
  • 6 slices of chopped crisp bacon
  • 1½ cup sour cream
  • ¾ cup mayonnaise
  • chives, chopped
  • scallions, chopped
  • worcestershire sauce
  • salt and pepper to taste
  • olive oil
Instructions
  1. Peel the garlic cloves, drizzle with olive oil, wrap in foil and bake at 400 degrees until tender, about 45 minutes. When Cooled, mash into a pulp.
  2. Saute 1 each chopped yellow and red onion in olive oil over low heat until caramelized.
  3. Allow onions to cool and mix with sour cream, mayonnaise, roasted garlic and chopped chives and scallions.
  4. Add Worcestershire sauce, salt and pepper to taste
  5. Add crumbled bacon and mix together.
  6. Chill and serve.
